From the Moosewood Restaurant! I took home an entire tray of roasted red peppers from a reception we had at work. This was the perfect recipe to use up a good portion of them. Feel free to adjust the heat to suit your tastes. The original recipe is listed below, however, I actually used LESS crushed red pepper (which is totally NOT like me) and it was perfect! This was so quick, easy and delicious!

6 red bell peppers, roasted, seeded and peeled or 2 (13 ounce) jars roasted red peppers
2 tablespoons vegetable oil
2 cups onions, chopped
2 garlic cloves, peeled and left whole
1 teaspoon red pepper flakes or 1/4 teaspoon cayenne
1 teaspoon salt
1 (16 ounce) can canned tomatoes, undrained
1 (14 ounce) can reduced-fat coconut milk
2 cups water

Steps:

  • Warm oil over medium heat in large stock pot.
  • Add the onions, garlic, red pepper flakes, and salt and sauté for about 15 minutes, until the onions are very soft and translucent.
  • Remove the pot from the heat and add the tomatoes, coconut milk, water, and the roasted red peppers.
  • In batches in a blender, puree the soup until smooth.
  • Return it to the soup pot and cook on medium heat until hot.
  • Serve immediately.

This is the tastiest soup I have ever eaten in my life. iTs really sophisticated and unusual. I got the recipe from The BestSoups cookbook. Honestly its delicious, but dont be tempted to increase the curry paste as it spoils the delicate flavour.

3 red bell peppers
2 small onions, diced
1 tablespoon butter
1 teaspoon curry paste
1 cup coconut milk
3 cups chicken stock or 3 cups vegetable stock

Steps:

  • Roasting Peppers------------.
  • Preheat grill or top oven to a high heat.
  • Wash peppers and place in oven.
  • The peppers will go black, turn to blacken all sides.
  • (about 10- 15 mins) When pepper skins are blackened place in a plastic bowl and cover for 15 minutes.
  • Then peel and seed the peppers, cut into large segments.
  • -----------------.
  • Melt butter in pan, add onions and saute until translucent.
  • Add curry paste and fry a further 3 minutes.
  • Add stock and peppers and let simmer a further 20 minutes.
  • Puree in batches, then return soup to pan.
  • Stir in coconut milk and reheat.
  • Serve.
  • For Vegetarian use vegetable stock.

Steps:

  • Preheat oven to 200C. Spread the chopped red peppers on a baking tray and bake until soft. Then turn on the grill and roast for a few minutes.
  • In a large pot add coconut milk, can of tomatoes, and water with vegetable stock. Add some basil and 2 bay leaves.
  • Add the roasted peppers and cook for a few more minutes. Take out the bay leaves and blend everything together. Cook for a few more minutes, season with salt and pepper but keep the creamy coconut flavour.

Steps:

  • Heat 1 tablespoon olive oil in a large Dutch oven over medium heat. Season shrimp with salt and pepper. Add shrimp to pot and cook 2 to 3 minutes or until pink, turning halfway through. Set aside.
  • Add remaining olive oil, bell pepper, onion, and garlic to pot. Cook, stirring occasionally, about 3 minutes or until tender. Stir in curry paste and ginger. Cook 1 minute, or until fragrant.
  • Stir in stock, coconut milk, and rice, scraping any browned bits from the bottom of the pot.
  • Bring to a boil over high heat; reduce heat and cook, stirring occasionally, until reduced, about 10 minutes. Stir in fish sauce and brown sugar. Remove from heat.

This one is spicy, sweet, creamy and adaptable. When the red curry paste is cooked in oil, the blend of chiles and aromatics like galangal and lemongrass come alive and become the curry's backbone. Because store-bought pastes vary in intensity, this recipe also uses fresh garlic and ginger to ensure a zingy final result. Use any vegetables you like, but it's nice to have one hearty vegetable (like sweet potato) and one crisp one (like snow peas) for a mix of textures. If you find your curry too spicy, stir in a bit of brown sugar. If it's feeling a bit flat, squeeze in a little lime juice or add a dash of soy or fish sauce.

Steps:

  • Cook the noodles according to package directions. Drain, rinse and set aside.
  • While the noodles cook, in a medium pot, warm the oil over medium heat. Add the sweet potato, ginger, garlic and red curry paste. 2 large bone-in chicken breasts, skin removed
1 tablespoon coconut oil
3 carrots, peeled and diced
1 onion, diced
1 red bell pepper, diced
1 cup cooked rice
3 tablespoons brown sugar

1 (14 ounce) can coconut milk
2 cubes chicken bouillon

Steps:

  • Combine water and chicken in a large pot over medium-high heat. Bring to a boil and cook until chicken is no longer pink at the bone and the juices run clear, about 30 minutes. Remove chicken from the pot, cut off meat from bones, and dice. Strain cooking broth through a sieve and set aside.
  • Heat coconut oil in a separate pot over medium heat. Add carrots, onion, and bell pepper; cook until softened, 5 to 7 minutes. Stir in cooked rice, brown sugar, curry paste, and diced chicken. Cook and stir until curry paste is completely incorporated, about 3 minutes.
