Expect ultra juicy, incredibly tender and totally delicious keto meatballs! So whether you enjoy them fried, baked, solo or with marinara sauce, these guys are bound to please... guaranteed!

1 tablespoon grass-fed butter
1 medium white onion (finely copped)
500 g ground beef (chuck works great!*)
1/2 cup ground pork rinds (or 1/3 cup almond flour)
1/2 cup Parmesan cheese
1/3 cup heavy whipping cream
1/4 cup fresh parsley (finely chopped)
1-2 teaspoons kosher salt (to taste)
1/2 teaspoon black pepper (freshly ground)
1 clove garlic (finely minced or pressed)
1 egg (lightly beaten)
our keto marinara sauce (to taste (I do roughly 2 cups))
garlic bread (with our 90 second keto bread!)
mashed cauliflower
zoodles (i.e. zucchini noodles!)

Steps:

  • Melt a tablespoon of butter in a skillet or pan over medium heat. Add the onion, a pinch of salt, and sauté until it just begins to caramelize (6-8 minutes). Remove from heat and set aside to cool.
  • Add the ground meat, crushed pork rinds (or almond flour), Parmesan, heavy cream, parsley, cooked onion, egg, salt, and pepper to a large bowl. Mix everything thoroughly together using your hands and taste for seasoning by cooking a small amount (only way around it!). Form into rounds (either 20 small-is ones or 14 large).
  • Heat up a touch of olive oil in your skillet over medium heat and cook the meatballs until brown all over and cooked through. You'll want to turn them around a few times so they cook evenly. If you've got an instant thermometer, your meatballs are cooked through once they reach 165°F/75°C in the center.
  • Place the cooked meatballs on paper towels to drain. Heat up the marinara sauce, add back the meatballs and mix gently before serving.

1 lb ground beef ((80/20 mix is good))
1 lb ground bulk Italian pork sausage
2 cups shredded mozzarella cheese, divided
1/2 cup grated Parmesan cheese
2 large eggs
2 teaspoons fresh minced garlic cloves
2 teaspoons onion powder
2 teaspoons coarse Kosher salt
1/2 teaspoon Italian seasonings
1/2 teaspoon fresh ground pepper
1/2 teaspoon crushed red pepper flakes
1 cup marinara or pizza sauce ((I like Rao's brand))
(optional) fresh basil or parsley for topping

Steps:

  • Preheat your oven to 400 degrees F and spray a 9x13 casserole dish with cooking spray.
  • In a large bowl, combine the beef, pork, 1 cup of mozzarella cheese, Parmesan, eggs, spices, garlic, and salt and pepper.
  • Using a scoop, make 20 meatballs and place in the casserole dish.
  • Bake for 15 to 20 minutes or until meatballs are no longer pink in the middle. Remove pan from the oven and drain the grease.
  • Spoon the marinara sauce on top of each meatball and sprinkle the remaining 1 cup of mozzarella cheese on top. Bake for 5-10 minutes or untll the cheese is nice and melted. Garnish with basil and parsley if desired and serve.

1/4 cup Grated parmesan cheese
1/4 cup Wholesome Yum Blanched Almond Flour ((or sunflower seed meal for nut-free))
1 tbsp Italian seasoning
3/4 tsp Sea salt
1/2 tsp Black pepper
1/4 cup Unsweetened coconut milk beverage ((can also use almond milk or heavy cream))
3 tbsp Onion ((grated))
1 large Egg
3 cloves Garlic ((minced))
2 tbsp Fresh parsley ((chopped))
1 lb Ground beef
3/4 cup Marinara sauce

Steps:

  • Preheat the oven to 425 degrees F (218 degrees C). Line a baking sheet with parchment paper or foil (grease if using foil).
  • In a large bowl, stir together the grated Parmesan cheese, almond flour, Italian seasoning, sea salt, and black pepper.
  • Whisk in the milk, grated onion, egg, garlic, and fresh parsley. Let the mixture sit for a couple of minutes.
  • Mix in the ground beef using your hands, until just incorporated. (Don't over-mix to avoid tough meatballs.)
  • Form the mixture into 1 in (2.5 cm) balls and place on the lined baking sheet. (A small cookie scoop this size works well for this. If using your hands, use a gentle touch and don't pack the meatballs too tightly.)
  • Bake for 10-12 minutes, until the meatballs are barely done. (If you want them more golden, you can place them under the broiler for a couple of minutes.)
  • Top each meatball with marinara sauce. Return to the oven and bake for 3-5 minutes, until the sauce is hot and meatballs are cooked through. Garnish with additional fresh parsley.
