GRINGO CARNE ASADA RECIPE

Number Of Ingredients 14

2lbs beef skirt steak
1/4 cup fresh lime juice
1/4 cup fresh orange juice
1/4 cup canola oil
1/2 cup water
2 Tablespoons white vinegar
2 Tablespoons Malcom's Grande Gringo Seasoning
4 cloves garlic minced
1 jalapeño pepper chopped fine
1 Tablespoon kosher salt
1/2 white onion sliced thin
1/2 red bell pepper sliced thin
1/2 green bell pepper sliced thin
1 jalapeño sliced thin

Steps:

  • Combine the lime juice, orange juice, canola oil, water, vinegar, Grande Gringo, garlic and jalapeño in a small bowl.
  • Place skirt steak in a zip top plastic bag and add marinade. Close the bag squeezing as much air out as possible. Work the steak around in the marinade so it's covered well. Refrigerate for 2-4 hours.
  • Prepare charcoal grill for direct grilling over hot coals. Remove skirt steak from marinade allowing excess moisture to drain off. Season on both sides with kosher salt.
  • Oil the cooking grate using a paper towel soaked with canola oil, place the skirt steak directly over the hot coals on the grate and cook for a 5 minutes. Flip the steak over and repeat, total cook time about 10-11 minutes for medium rare. Rest the steak for 5-7 minutes before slicing.
  • To cook the vegetables: place a flat cast iron skillet on the cooking grate. Add a little canola oil to the skillet. Add the vegetables and season with Grande Gringo. Sauté the vegetables until tender about 7 minutes.
  • To serve the steak, cut it into portions and slice in thin strips across the grain. Serve with corn or flour tortillas, vegetables, and your favorite toppings like guacamole, pico de galo, cilantro, and plenty of hot sauce.

2 Pounds of flank steak
1/2 cup juice from an orange or limes
1/4 cup of Worcestershire sauce
2 T of white wine vinegar
1/4 cup cilantro
1/2 tsp cayenne pepper
6 large cloves of garlic
1/4 small onion
2 T of black pepper
1 tsp salt
1 tsp cumin
2 tbsp olive oil
6-8 sweet mini peppers
2-3 fresh jalapeno peppers
1-2 onions, sliced into 1/2" thick rounds

Steps:

  • Place flank steak on cutting board and remove any silver skin or excess fat.
  • In a blender, mix all marinade ingredients.
  • Add steak and marinade to ziploc bag or covered bowl and marinate at least 5 hours, preferably 12-24 hours.
  • Heat grill to medium high heat.
  • Add steaks and vegetables to grill and flip every 3 minutes until desired doneness - for medium rare, it will take about 10-12 minutes.
  • Remove from grill and place on cookie sheet or cooling rack, tented with foil. Let rest at least 10 minutes.
  • Slice steak against the grain into thin strips.
  • Serve and enjoy!

I've tried many carne asada recipes through the years, and this one outshines them all. The flavors are the most flavorful and authentic and the meat is pull-apart tender. 2 tablespoons olive oil
1/4 cup reduced sodium soy sauce
1/4 cup orange juice
2 tablespoons lime juice
1 tablespoon brown sugar
1 teaspoon liquid smoke
1 tablespoon ground cumin
1 tablespoon garlic powder
2 teaspoons smoked paprika
1 tsp EACH salt, chili pwdr, onion pwdr
1/2 tsp EACH pepper, cayenne pepper

Steps:

  • To a small plastic bag (or sealable container), add Spice Mix and whisk to combine. Set aside.
  • Add Marinade Ingredients to a large freezer bag and whisk to combine. Add 3 tablespoons Spice Mix to Marinade and whisk to combine. Add steak and seal bag, removing excess air. Marinate in the refrigerator 4-12 hours.
  • When ready to grill, mix remaining Spice Mix with 2 tablespoons olive oil to create a Spice Rub.
  • Discard marinade and pat steaks dry with paper towel (just so steak is not wet, not to remove marinade/spices). Rub steak evenly all over with Spice Rub and let rest at room temperature for 30-60 minutes.
  • Grease and preheat outdoor grill to medium-high heat. Grill steak for 5-6 minutes per side, or until an internal thermometer reads 130-135 degrees F for medium rare or around 140 degrees for medium. Grill time will vary depending on thickness of your steak and desired level of doneness.. *If you like your steaks rare then use HIGH heat so you can get the charred outside in less time.
  • Remove steak and let rest 10 minutes before thinly slicing against the grain on a diagonal.
