- In a Dutch oven, cook onion in olive oil over medium heat until tender, 4-5 minutes. Add garlic; cook 1 minute. Stir in tomato paste and cook, stirring constantly, until fragrant, 3-4 minutes. Add crushed tomatoes, water, fresh basil, 2 teaspoons sugar and salt. Bring to a boil; reduce heat. Simmer 1 hour, stirring occasionally., Meanwhile, cook bulk sausage in a skillet over medium heat until no longer pink, breaking into crumbles, 8-10 minutes; drain. Add to sauce; simmer until mixture is thickened, about 1 hour longer., While sauce simmers, preheat oven to 350°. Place sausage links on a rimmed baking sheet; roast until cooked through, 35-40 minutes. Remove and let cool slightly; slice into 1/4-in.-thick pieces., In a small bowl, mix ricotta cheese, 1 cup mozzarella cheese, egg, dried basil and remaining sugar., In a greased 13x9-in. baking dish, spread 2 cups sauce. Arrange 4 noodles over sauce; spread with a third of the ricotta mixture. Add 7 provolone slices, a third of the sliced sausage and 1-1/2 cups mozzarella cheese. Repeat layers 2 more times, using only 1 cup sauce per layer. Spread with 2 cups sauce (reserve remaining sauce for serving on the side), remaining 2-1/2 cups mozzarella cheese and the Parmesan cheese (dish will be full)., Place dish on a rimmed baking sheet and bake, uncovered, until bubbly and deep golden brown, 60-65 minutes. Let stand 15 minutes before serving. Serve with remaining meat sauce.

- Cook noodles according to package directions; drain. Meanwhile, in a Dutch oven, cook sausage, beef and onion over medium heat 8-10 minutes or until meat is no longer pink, breaking up meat into crumbles. Add garlic; cook 1 minute. - In a Dutch oven, cook sausage, ground beef, onion, and garlic over medium heat until well browned. Stir in crushed tomatoes, tomato paste, tomato sauce, and water. Season with sugar, basil, fennel seeds, Italian seasoning, 1 teaspoon salt, pepper, and 2 tablespoons parsley. Simmer, covered, for about 1 1/2 hours, stirring occasionally.
- Bring a large pot of lightly salted water to a boil. Cook lasagna noodles in boiling water for 8 to 10 minutes. Drain noodles, and rinse with cold water. In a mixing bowl, combine ricotta cheese with egg, remaining parsley, and 1/2 teaspoon salt.
- Preheat oven to 375 degrees F (190 degrees C).
- To assemble, spread 1 1/2 cups of meat sauce in the bottom of a 9x13-inch baking dish. Arrange 6 noodles lengthwise over meat sauce. Spread with one half of the ricotta cheese mixture. Top with a third of mozzarella cheese slices. Spoon 1 1/2 cups meat sauce over mozzarella, and sprinkle with 1/4 cup Parmesan cheese. Repeat layers, and top with remaining mozzarella and Parmesan cheese. Cover with foil: to prevent sticking, either spray foil with cooking spray, or make sure the foil does not touch the cheese.
- Bake in preheated oven for 25 minutes. Remove foil, and bake an additional 25 minutes. Cool for 15 minutes before serving.

GORDO'S BEST OF THE BEST LASAGNA
This recipe is adapted from several of the better lasagna dishes previously submitted. To test it, I invited a couple who previously owned an Italian restaurant. They were very impressed. This lasagna dish will become a regular in our household. In this dish I used a spicy moose sausage; you can use pork, deer, moose, lamb, or any other spicy sausage. To be enjoyed with a mixed salad, Italian bread, and a delightful red wine.

- Bring a large pot of lightly salted water to a boil. Cook lasagna in the boiling water, stirring occasionally until cooked through but firm to the bite, about 8 minutes. Drain and rinse in cold water.
- Cook and stir sausage, beef, onion, and garlic in a large, deep skillet over medium heat until browned. Stir tomato basil sauce, tomato sauce, diced tomatoes, 3/4 cup parsley, Italian seasoning, sugar, sea salt, and pepper into sausage mixture. - Brown ground meat, onion and garlic.
- Add salt, pepper, parsley, oregano, basil, chopped tomatoes with juice, tomato paste; stirring until well mixed.
- Cover and simmer 1 hour (or longer,but watch for getting too dry).
- Cook lasagna noodles according to package directions; drain and set aside.
- Spray a 13 x 9" baking pan with cooking spray.
- Combine riccota cheese, eggs, pepper, 2 tablespoons parsley, Parmesan cheese and 1/2 1lb of mozzarella cheese; In a lasagna pan, layer noodles, meat sauce, and cheese mixture; repeat.
- Top off with layer of noodles; sprinkle evenly with remaining mozzarella cheese; make sure to cover noodles completely.

- FOR THE LASAGNA: Prepare lasagna according to package directions.
- Drain and set aside. NOTE: You can use Barella No Boil Noodles, but be sure during the assembly of the layers that the noodles do not stick out.
- Cook Italian sausage either in a skillet or by boiling in a pot of water, thinly slice crosswise and set aside.
- Brown the ground beef and ground pork in a skillet, drain off and discard fat.
- Add onion and garlic to the ground meat, stir and cook another 5 minutes.
- Add the sugar, salt, basil, fennel seeds, pepper and the Marinara sauce and simmer for 20 minutes.
- While the above mixture is simmering, combine in a large bowl the eggs, Ricotta cheese, and parsley.
- Preheat oven to 375 degrees.
- Take a 13 by 9 inch baking dish and spray the bottom with a non-stick spray, such as Pam.
- In the baking dish, spoon in a layer of 1/3 of the meat sauce.
- Then layer 1/3 of the lasagna pasta (overlapping each strip of pasta with the other).
- Then layer 1/3 of the Ricotta mixture.
- Then layer 1/3 of the sliced olives and 1/3 of the sliced Italian sausage.
- Then layer 1/3 of the sliced mushrooms.
- Then layer 1/3 of the Mozzarella and 1/3 of the Parmesan.
- Then continue to repeat the layering until all of the ingredients are layered.
- When the layering is completed, cover with aluminum foil, making certain that the foil is not touching the top of the lasagna, and bake for 25 minutes.
- Remove foil and bake, uncovered, another 25 minutes.
- Remove from oven and allow to sit and rest 10 minutes before cutting.
- FOR THE MARINARA SAUCE (by Alan Leonetti): Empty Hunts chunky crushed tomatoes and Hunts tomato paste into the pot.
- Add the extra-virgin olive oil to the pot.
- Slice the cloves of garlic crosswise into either halves or thirds or pieces, and dump them into the pot.
- Dice the shallot, and dump that into the pot.
- Add the rest of the ingredients, and stir to mix well with a large long handled wooden spoon.
- Do not strain, as the pulp adds to make this a thick and wonderful sauce.
- Cover and cook on medium heat, stirring every 10 minutes for about an hour or until it bubbles and is completely heated throughout.
- Reduce heat to simmer, and continue to simmer, stirring every 10 or 15 minutes to keep from burning or sticking to the bottom of the pot for 1 or 2 hours.
- Remove from heat and give it one last stir.
- Serve over spaghetti, ravioli, pasta or use for chicken parmesan, veal parmesan, or anything that calls for a Marinara sauce.
- NOTE: Use only Hunts Chunky Crushed Tomatoes and Hunts Tomato Paste.

This is the best lasagna recipe I have ever made. I had one lasagna several years ago that was out of this world and while this is not the same one, it is the closest one I have ever found. I like to make two and freeze one for later use.

- Preheat oven to 375°F.
- Boil noodles and drain (you may also use uncooked noodles).
- Sauté garlic, sugar and salt.
- Add sausage and ground beef and brown, breaking into small crumbles.
- Add basil, pepper, tomatoes and paste; simmer 20-30 minutes until sauce thickens.
- Mix together in bowl, ricotta, egg and parsley (add milk if it's too thick).
- Layer sauce to cover bottom of pan, noodles 1/2 of ricotta mixture, 1/4 c of parmesan, noodles, ricotta, mozzarella, sauce and parmesan.
- Bake covered for 25 minutes.
- Uncover and bake another 25 minutes.
- Let cool about 10-15 minutes then cut and serve.
- Leftovers may be frozen and then heated in the oven until hot and melty.
- Goes great with crusty garlic toast and a salad.

- In a large saucepan, combine garlic, ground beef, and sausage.
- Cook over medium-high heat until browned. Drain half the fat, or none at all. It is your preference!

- Bring a large pot of salted water to a boil.
- Preheat oven to 350 degrees.

****VERY IMPORTANT**** this is a DELICIOUS recipe, please read the directions before making this. and I have really never measured out some things, like the cottage cheese and parm cheese, shredded cheese and marinara sauce. I would suggest building it as you see fit, because not all of it will fit in the pan. I will try to explain below in the actual recipe. I have been told its the best lasanga ever! and kids love it too! adults do not even notice the veggies, but they give it an excellent flavor.

- lets start with the white sauce because we can put this aside for later, heat 3 cups of milk, 4 teaspoons of crushed rosemary, 3tbsp of chopped garlic in a medium pot to boiling, reduce to low and simmer for another 5 minutes, STRAIN milk mixture (to remove rosemary and garlic) and set aside. In another saucepan melt 3tbsp of butter then blend in 3 tbsp of flour, then slowly pour milk mixture into the butter mixture, bring to a soft boil on med/ med-high until sauce is thick. set aside in a bowl. In a SKILLETT add 3 tbsp of oil on meduim/ med-high add i would say almost all of the spinach and almost all of the carrots UNTIL YOU HAVE AN EVEN AMOUNT OF BOTH carrot and spinach, add 1/2 tea salt to veggies, cook until veggies are soft, then add milk mixture to veggies if sauce is a little thin you can cook until it gets a liitle thicker. place mixture in bowl off to the side. now comes the fun part. preheat oven to 350. get a 13x9 pan and take a bit of nonstick spray to the pan. take the beaten egg and mix it into the container of cottage cheese. open one of the jars of sauce and place i would say maybe a 1/2 cup of prego sauce on bottom of the pan so noodles do not get dry as they bake. (now comes the layering) place 3 or 4 no boil noodles across pan over the prego sauce. then add a few spoonfuls of white sauce, a few spoonfuls of prego sauce again, a few spoonfuls of cottage cheese, a handful of both mozzerella and yellow cheese mix and a sprinkle of parm cheese, now doing the same again repeating the layers again,noodles,white sauce,redsauce,cottage cheese, both shredded cheeses and a sprinkle of parm cheese. you should get about 4 or 5 layers of noodles, of course ending with a nice cheese top and sprinkle with parm cheese.now place tented foil over pan making a tight seal around the edges careful not to touch cheese. place in oven. bake for about 1 hour, the noodles will be done because they are a no-boil. I also like to uncover after 1 hour and bake maybe 5-10 min more to brown the top keep a careful eye not to burn it .if you have any problems lets me know.
