GRILLED SKIRT STEAK WITH A SALSA-LIKE SAUCE MADE OF CHARRED LONG HOT PEPPERS, GARLIC, ANCHOVY, LEMON ZEST AND OLIVE OIL



Grilled Skirt Steak with a Salsa-like Sauce Made of Charred Long Hot Peppers, Garlic, Anchovy, Lemon Zest and Olive Oil image

4 cloves garlic
Olive oil, for cooking
One 2-ounce tin anchovies, roughly chopped
4 long hot peppers
2 lemons, zested and juiced
One 1 1/2-pound skirt steak
Salt and freshly ground black pepper
1/2 cup chopped fresh parsley

Steps:

  • For the salsa-like sauce: Add garlic to a small saucepan over low heat and just cover with olive oil. Cook, about 30 minutes. Add anchovies and continue to cook, using the back of a wooden spoon to break up the anchovies and garlic, until anchovies melt, about 15 minutes more. Remove from heat and set aside.
  • Preheat a grill for cooking over high heat.
  • Grill long hot peppers on each side until softened and lightly charred. Remove from grill, roughly chop and place in a large bowl. (Leave grill on.) Add the garlic-anchovy mixture and mix to combine. Add lemon zest and juice to taste. Mix to combine.
  • For the grilled skirt steak: Sprinkle skirt steak with salt and pepper. Grill steak about 2 minutes on each side for medium-rare. Remove from grill and allow to rest.
  • Slice steak on a bias and place on a serving platter. Top steak with salsa-like sauce. Sprinkle with parsley. Serve!

⅔ pound ground beef (85% lean)
2 cups mayonnaise
2 tablespoons prepared yellow mustard
2 tablespoons sweet pickle relish
1 ½ teaspoons white wine vinegar, or more to taste
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon ground paprika
4 hamburger bun bottoms
2 hamburger bun tops
2 tablespoons minced onion, or to taste
½ cup shredded lettuce, or to taste
2 tablespoons dill pickle slices, or to taste
2 slices American cheese
salt and ground black pepper to taste

Steps:

  • Shape ground beef into 4 flat patties that will fit the hamburger buns. Place them on a tray lined with waxed paper; transfer to the freezer.
  • Mix mayonnaise, mustard, pickle relish, white wine vinegar, onion powder, garlic powder, and paprika in a bowl to make sauce. Refrigerate for 10 minutes.
  • Preheat a large skillet over medium heat. Toast buns in batches until lightly golden, 1 to 2 minutes.
  • Layer some of the sauce, 1 tablespoon minced onion, 2 tablespoons lettuce, and pickles on 2 bottom buns. Layer some of the sauce and remaining 1 tablespoon minced onion, 2 tablespoons lettuce, and American cheese on the other bottom buns.
  • Season patties with salt and pepper. Cook in the hot skillet 2 at a time until browned, 3 to 4 minutes per side. Place 1 patty over each bottom bun; stack and cover with top buns.

  • No. 1 | Make the special sauce by mixing together the mayo, ketchup and 1 tablespoon each of the diced onion and diced pickles.
  • No. 2 | Preheat a large skillet to medium high heat. Divide the beef into 4 equal pieces and roll each piece into a tight ball. Place each piece of beef between two sheets of parchment and flatten into 4 inch rounds. They should be no more than ¼ inch thick.
  • No. 3 | Once the pan begins to smoke, generously season each patty with salt and pepper. Sear the patties for one minute, then flip, add the slice of cheese and cover for one minute. Remove the patties to rest on a plate.
  • No. 4 | To assemble, spread one tablespoon of special sauce on each slice of bun. Place a handful of lettuce on the bottom and middle slices, then top with the burger patties. Sprinkle a tsp of diced onion and 3 slices of pickle on top. Gently place the finished middle bun on the finished bottom, cover with the top bun and devour.
