BRITTANY CHICKEN CASSEROLE
I have not tried this, but the ingredients bring to mind a cool fall day and this cooking in the oven. I can almost smell the aroma! Cooking time does NOT include the overnight soaking of the beans. Hope you enjoy!

Steps:
- Preheat oven to 325 degrees.
- Cook beans in salted boiling water for 25 minutes.
- Heat the butter and olive oil in a flameproof casserole (dutch oven or large stockpot).
- Add the bacon and chicken.
- Cook for 5 minutes.
- Sprinkle with the flour.
- Add the cider and chicken stock, stirring to prevent lumps.
- Season with salt and pepper.
- Bring to a boil.
- Add the beans and the cover the pot.
- Bake for 2 hours.
- About 15 minutes before it is done, remove the lid.
- In a frying pan, gently cook the shallots and honey together for about 5 minutes.
- Turn the shallots frequently.
- Add the shallots and cooked beetroot to the casserole.
- Bake uncovered for 15 more minutes.
THE BRITTANY
I like this recipe because it has marshmallows. The name came from a camping trip where the sandwich was invented. We were making fluffernutter sandwiches, but ran out of fluff. We came up with the idea to use whole marshmallows, but to "grill" the sandwich to melt them like fluff. Brittany was the first to eat it. Hence the name :)! If you want to spice it up, or just to add a little more health and flavor, you can add sliced bananas. Then it's called the Katlyn.

Steps:
- Spread the peanut butter on one slice of bread.
- If you are using fluff, spread a very thin layer on the other slice.
- Place the marshmallows on one slice and squish them together.
- Spread the butter on the outsides of both slices and "grill" in a pan over medium heat (flipping halfway through) until the bread is toasted golden brown on both sides and the marshmallows are melted. They may be slightly solid still, but it's good anyway.
