A classic Mojito with a hint of berry fruit flavour and colour

12 Mint leaves
60 ml Rum - White/gold 1-3 year old mellow light
15 ml Black raspberry liqueur (e.g. Chambord)
30 ml Lime juice (freshly squeezed)
7.5 ml Sugar syrup (rich) 2 sugar to 1 water

Steps:

  • Lightly MUDDLE mint in base of glass (just to bruise)
  • Add other ingredients
  • Half-fill glass with crushed ice and CHURN (stir) with bar spoon
  • Continue to add crushed ice and churn until drink is level with glass rim

This is an authentic recipe for mojito. I sized the recipe for one serving, but you can adjust it accordingly and make a pitcher full. It's a very refreshing drink for hot summer days. Be careful when drinking it, however. If you make a pitcher you might be tempted to drink the whole thing yourself, and you just might find yourself talking Spanish in no time! Tonic water can be substituted instead of the soda water but the taste is different and somewhat bitter.

10 fresh mint leaves
½ lime, cut into 4 wedges
2 tablespoons white sugar, or to taste
1 cup ice cubes
1 ½ fluid ounces white rum
½ cup club soda

Steps:

  • Place mint leaves and 1 lime wedge into a sturdy glass. Use a muddler to crush the mint and lime to release the mint oils and lime juice. Add 2 more lime wedges and the sugar, and muddle again to release the lime juice. Do not strain the mixture. Fill the glass almost to the top with ice. Pour the rum over the ice, and fill the glass with carbonated water. Stir, taste, and add more sugar if desired. Garnish with the remaining lime wedge.

45 ml Rémy Martin VSOP
30 ml lime juice
20 ml simple syrup
30 ml sparkling water
Mint leaves

Steps:

  • Fill a shaker with ice, then add 45 ml (1½ oz) Rémy Martin VSOP, 30 ml (1 oz) lime juice, 20 ml ( ⅔ oz) simple syrup, 30 ml (1 oz) sparkling water, and 10 mint leaves.
  • Shake for 10 seconds, then pour, unstrained, into a Collins glass.
  • Before adding the mint, crush the leaves by hand to release the aromas and essential oils.

2 ounces fresh lemon juice
2 ounces fresh lime juice
Pulp from 1/2 lime
1-ounce rum

Steps:

  • Add sugar, mint leaves and a touch of soda to a highball glass. Using a muddler, crush the mint leaves and blend the mixture. Add the juices, lime pulp and fill with ice. Add rum and top the glass with soda.
  • Serving suggestion: Garnish with a mint leaf and a straw. Encourage guests to stir their drinks with their straws to capture all the sweetness at the bottom of the glass.

1 (2 ounce) Bacardi light rum
5 leaves mint
2 tablespoons brown sugar
1 half lime
ice

Steps:

  • Mix in a pint glass the Rum, Mint Leaves, Brown Sugar and juice from the Lime (quartered).
  • Muddle the ingredients until the mint leaves are pretty well broken up (approx 1-2 minutes).
  • Fill the pint glass, containing the muddled ingredients, with Ice.
  • Top off the pint glass with Sparkling Wine.
  • Transfer back and forth between the pint glass and a larger glass 3-4 times to mix.
  • Garnish with pressed lime quarters and serve.
