This is a hearty whole grain cookie that lets you feel good about indulging, made with Red River cereal!

Steps:
- Cream butter, sugars and egg in a large bowl until smooth.
- In a separate bowl, mix together the flour, oats, cereal, baking powder and baking soda. Add to creamed mixture, mixing until thoroughly blended. Stir in chocolate chips. Drop dough by spoonfuls onto a greased baking sheet. Bake for 7 to 10 minutes, or until light golden.
- Tip: For a softer cookie, allow the dough to chill in the refrigerator for 10 to 15 minutes before baking.

THUMBPRINT COOKIES
These easy cookies with a fruity jam filling are perfect teatime treats. Make a batch as a weekend project and fill your biscuit tin with sweet bites

Steps:
- For the shortcrust pastry, sift the flour and icing sugar into a mixing bowl. Add the vanilla sugar, lemon zest and a pinch of salt. Rub the butter into the flour mixture until it is incorporated and then mix in egg yolks. Knead everything into a compact smooth dough. Wrap the dough and chill it for 1 hour.
- Remove the dough from the refrigerator and bring it to room temperature for 10 minutes. Form the dough into a long roll and divide it into 60 equal portions. Form a small ball from each portion and place it on a baking sheet covered with baking parchment (you will need two or more sheets). Press a dip (for the jam) into each ball with the handle of a wooden spoon.
- Heat the oven to 200C/fan 180C/gas 6. Heat the jelly or jam in a saucepan until it melts. Use a teaspoon to fill the dips in the dough balls.
- Bake for 12-15 minutes, then allow to cool completely. Finally, dust the cookies with some icing sugar. The cookies can be stored in an airtight container for several weeks.
SO GOOD (FOR YOU) OATMEAL COOKIES!
Due to making a deal with my sister to not have any SUGAR, I was forced to recreate some of our favorite treats, using natural alternatives! I'm happy to say...I like these better than the REAL DEAL! They are packed full of "good stuff", so you can eat them, guilt free (for the most part). In fact, my kids say that it's just too hard to only eat one! :0) They come out moist and chewy. You could, also, easily turn these into a great oatmeal chocolate chip cookie! So, have fun experimenting, and let me know what you think!

Steps:
- Preheat oven to 350 degrees.
- Cream together butter and honey.
- Add applesauce, yogurt and vanilla. Mix until fully combined.
- Add eggs, one at a time, until they are fully incorporated.
- Add in flax meal.
- Add in whole wheat flour, oats, salt, baking soda and cinnamon. Mix until fully combined. ***Dough will seem a little runny.
- Add in raisins.
- Place spoonfuls onto a cookie sheet and bake for 10-12 minutes.
- Let cool, and enjoy!
MARZIPAN COOKIES
These quick marzipan cookies with a hint of cinnamon can be made in just 25 minutes. Leave them plain or add a few chopped almonds for a crunchy topping

Steps:
- Crumble the marzipan into a bowl with your fingers. Mix in the egg white, icing sugar, flour, ground almonds, cinnamon, amaretto and a pinch of salt until you have a soft dough.
- Heat the oven to 175C/fan 155C/gas 3½. Cover 2 baking sheets with baking parchment. Make 25 small balls from the dough with your hands and space them out on the baking sheets. Press down on each dough ball with the back of a fork to make a groove pattern.
- Brush the egg yolk glaze over the cookies. Now sprinkle with chopped almonds, if using. Bake for 12-15 minutes. Cool completely.
