FAMOUS NEW ORLEANS PEACEMAKER PO BOY

Famous New Orleans Peacemaker Po Boy image

If you don't already know, there's a rule that says not to combine cheese with seafood. I agree with that almost all of the time. On the peacemaker Po-Boy that rule flies out the window! The peacemaker on Magazine Street in New Orleans made this amazing Po-Boy famous. It doesn't have debris, it's not a half and half. It definitely isn't a multi-coldcut sandwich. Others make it with all kinds of things that make no sense. Whenever you try to duplicate a Po-Boy that you've had at a restaurant, always remember the first rule - Use the name brand ingredients that YOU like.

Number Of Ingredients 10

1 - 12 inch length of crunchy french bread
1/2 stick(s) butter, melted
- cajun cocktail sauce (https://www.justapinch.com/recipes/sauce-spread/sauce-spread-spread/cajun-cocktail-sauce.html?p=2)
4 tablespoon(s) creole tartar sauce (https://www.justapinch.com/recipes/appetizer/appetizer-seafood-appetizer/kicked-up-creole-tartar-sauce.html?p=1)
- fried oysters
4 slice(s) cheddar or american cheese
- shredded lettuce
- sliced tomatoes
6 slice(s) bacon, fried crisp
- hamburger dill slices

Steps:

  • Preheat oven to 400* F.
  • No matter where you live, most French bread is very thick, and for this sandwich you want to taste more ingredients than bread. Slice the bread in half longways to make a top and a bottom. Pull out some of the soft center of the bread on both halves, but don't remove too much. Brush the inside of each half with the melted butter. Lightly toast the bread in the oven, and while you're waiting spread any remaining butter on the bread that you pulled out of the loaf and stuff your face. Smile and enjoy!
  • On the bottom half of the toasted bread, spread it liberally with Creole Tartar Sauce. Generously layer the fried oysters, and squeeze a lemon wedge over the oysters and a few drops of hot sauce if desired.
  • Place the cheese slices across the oysters. Now add the bacon on top of the cheese. At this point if you want the cheese melted put just the bottom half into the oven for about a minute or two just to reheat the oysters and bacon. Set bottom half aside.
  • On the top half of the toasted bread, spread it liberally with Cajun Cocktail Sauce. Layer dill slices on top of the cocktail sauce, then add the shredded lettuce and finally top the lettuce with sliced tomatoes.
  • Place both halves side by side and quickly flip the top half onto the bottom halve. Cut sandwich on a diagonal. C'est ci bon!

SHRIMP AND OYSTER PO'BOYS

Shrimp and Oyster Po'Boys image

Many fans of the po'boy say these beloved sandwiches were created as a way to feed workers during a 1929 transit strike in New Orleans. Technically, anything can go inside, but a combo of oysters and shrimp is a local favorite.

Categories     main-dish

Time 1h10m

Yield 4 servings

Number Of Ingredients 17

1 cup buttermilk
2 tablespoons plus 2 teaspoons Louisiana-style hot sauce
20 medium shrimp (about 6 ounces), peeled and deveined
12 medium oysters (1 to 1 1/2 pounds), shucked and drained
1/2 cup mayonnaise
2 tablespoons dill pickle relish
2 tablespoons Creole mustard
1 tablespoon fresh lemon juice, plus wedges for serving
1/2 teaspoon paprika
1/2 teaspoon garlic powder
Vegetable oil, for frying
1 1/4 cups all-purpose flour
1/2 cup cornmeal
1 tablespoon Cajun seasoning
Kosher salt and freshly ground pepper
4 hoagie or French-style soft rolls, split
Sliced tomatoes and shredded iceberg lettuce, for topping

Steps:

  • Combine the buttermilk and 2 tablespoons hot sauce in a medium bowl. Add the shrimp and oysters and toss to coat. Cover and refrigerate 30 minutes. Meanwhile, make the rémoulade: Combine the mayonnaise, relish, mustard, lemon juice, remaining 2 teaspoons hot sauce, the paprika and garlic powder in a small bowl. Refrigerate until ready to use.
  • Fill a heavy-bottomed pot with 2 inches of vegetable oil and heat over medium-high heat until a deep-fry thermometer registers 350˚ F. Combine the flour, cornmeal, Cajun seasoning and 1/2 teaspoon each salt and pepper in a shallow baking dish. Remove the shrimp and oysters from the buttermilk one at a time and add to the flour mixture, rolling to fully coat; remove to a plate. Working in 3 batches, add the shrimp and oysters to the hot oil and fry until golden brown, about 3 minutes; return the oil to 350˚ F between batches. Remove to a rack set on a baking sheet. Season lightly with salt.
  • Assemble the sandwiches: Spread about 2 tablespoons rémoulade inside the rolls, then add some tomato slices and a handful of shredded lettuce to each. Add the fried shrimp and oysters, then drizzle with more rémoulade. Serve with the lemon wedges.
