JUICIEST HAMBURGERS EVER
No more dry, lackluster burgers. These are juicy, and spices can be easily added or changed to suit anyone's taste. Baste frequently with your favorite barbeque sauce. If you find the meat mixture too mushy, just add more bread crumbs until it forms patties that hold their shape.

Steps:
- Preheat grill for high heat.
- In a large bowl, mix the ground beef, egg, bread crumbs, evaporated milk, Worcestershire sauce, cayenne pepper, and garlic using your hands. Form the mixture into 8 hamburger patties.
- Lightly oil the grill grate. Grill patties 5 minutes per side, or until well done.

Steps:
- Cook the rice according to the instructions on the package.
- Mix salt, pepper, garlic powder and worcestershire sauce into the ground beef and make 4 large patties, or 6 regular sized patties. We recommend making flatter and larger sized patties, as they would shrink while cooking.
- Heat oil in a skillet (preferably cast iron) over medium high heat and cook the patties until browned to your liking on both sides and the internal temperature reaches 160°F. Plate them out.
- In the same pan, add in a little more oil, if required, and sauté chopped onions till golden brown. Stir in sliced mushrooms and sauté till soft.
- Add in beef stock along with worcestershire sauce and soy sauce and cook for 5 minutes.
- Thicken the sauce with cornstarch slurry. Mix 1 Tbsp cornstarch with 2 Tbsp water and slowly stir it into the gravy. Stir till the gravy thickens up. Remove from heat.
- Fry the sunny side eggs to doneness you like. We like the egg whites cooked with the yolk still little runny.
- Plate Loco Moco in a bowl or plate by placing some rice, followed by the burger patty on top. Pour gravy all over the burger patty. Place the egg on top (you can serve it with one or two eggs per portion) and garnish with chopped scallions and parsley.
THE HOT HAMBURGER
Supposed to be a reasonable duplication of the Hot Hamburger served at Murphy's Original Steak House, Bartlesville, OK. I've never eaten there, but this looks like my kind of food.

Steps:
- In a skillet, heat butter or oil; add in onions; fry over medium heat until they are soft and golden brown.
- Prepare gravy and keep warm.
- Grill or fry hamburgers to desired degree of doneness.
- Cook french fries in the oven according to package directions.
- Right before the burgers and fries are done, toast the bread; place 1 slice on each of 2 plates.
- Remove fries from oven and place half on each slice of toast.
- Cut each burger into bite-size pieces and place on top of fries.
- Ladle ½ cup gravy over each serving, top each with half the fried onions, and serve immediately.

THE WICKED HOT BURGER
Steps:
- For the spice rub: Place paprika, garlic powder, salt, onion powder, ground mustard, black pepper and cayenne in a small bowl and whisk until everything is mixed thoroughly.
- For the Thousand Island dressing: Combine the mayo and ketchup in a medium bowl and mix with a spoon thoroughly until blended. Add the relish, pepper, salt, sugar, vinegar and onion and mix until well blended. Refrigerate for 2 hours.
- For the hot mess mix: Combine the jalapenos, pickles, bacon and onion in a medium bowl. Fold in 1 1/2 cups Thousand Island dressing until it becomes a thick, spreadable mixture.
- For the pigferno BBQ sauce: Grind up the jalapeno and habanero in a food processor. Combine in a saucepot with the ketchup, brown sugar, Worcestershire, vinegar, molasses, BBQ seasoning, cayenne and black pepper and bring to a slow boil over medium-high heat, then reduce the heat to low and simmer until the sauce becomes dark in color and thickens, 15 to 20 minutes. Let cool.
- For the wicked hot burger: Add 1/2 tablespoon spice rub to the beef in a medium bowl and mix thoroughly. Prepare four 8-ounce patties. Toast the buns with a light spread of butter. Cook the patties in a hot skillet to preferred doneness (medium-rare is recommended).
- Warm up the sliced pickled jalapenos on the grill or in a fry pan for about 30 seconds, then place them atop the cooked patties. Melt Cheddar over top of the jalapenos. Spread horseradish sauce on the bottom buns and add some shredded lettuce. Add the patties on top of the lettuce. Spoon on about 2 tablespoons of hot mess per burger. Spoon on or use a squeeze bottle to dollop 1 to 1 1/2 tablespoons pigferno BBQ sauce on each burger. Sprinkle the crispy jalapenos over the top to add some crunch.
THE BEST HAMBURGER RECIPE (AND AMAZING SECRET SAUCE)

- In a large bowl, combine the ground beef, shredded cheese, bbq sauce, and seasonings. Don't add too much bbq sauce or the patties will have a hard time taking shape. Shape patties that are about 1 inch thick (about 5 patties). (You can also freeze the patties after shaping them for about 1 hour to help them hold their shape.)
- Turn grill up to high and let it get hot.
- Reduce heat to medium-high and place the burgers on the grill. Allow this side of the patty to cook for about 4-6 minutes, but make sure it does not burn. Then flip the burger over and cook until done.
- For the sauce, combine all sauce ingredients and whisk until well mixed. Taste and adjust ingredients to your liking.
- Assemble the burgers and serve with the special sauce and other hamburger toppings of choice.
