WARM MEDITERRANEAN OLIVES
Olives are little fat bombs and when they're heated they become that much more delicious. The balance here of the sweet brown sugar and the sharp red wine vinegar makes these olives so addictive, you may never go back to eating them cold.

Steps:
- Heat the oil in a heavy saucepan over medium heat. Add the shallots and garlic and cook until softened, about 5 minutes. Remove from the heat and stir in the sugar, vinegar, cinnamon stick, orange peel, and olives. Season with salt and pepper.
MEDITERRANEAN SMASHED CHICKPEAS
You smash half the chickpeas in this recipe to make a spread, sort of a warm rustic hummus enhanced with garlic cumin and hot pepper, along with a liberal drizzle of olive oil. You can use either freshly cooked dried beans or canned chickpeas (also known as garbanzo beans), though freshly cooked is always preferable. Tuck some into a pita for a vegetarian sandwich or serve as a dip to eat with bread and olives; a dollop of minty yogurt and a drizzle of tahini sauce make nice additions.

- Put 3 tablespoons olive oil in a heavy-bottomed saucepan over medium heat. Add onion, season with salt and pepper, and cook gently until softened, about 10 minutes. Raise heat to medium-high. Add garlic, cumin, red pepper flakes and celery. Stir to combine let sizzle without browning for 1 minute.
- Add chickpeas and let them heat through. With a potato masher or wooden spoon, crush about half the beans. Stir well, taste and adjust seasoning. Add 1/2 cup water (or bean cooking liquid if you have it) and let mixture simmer briskly for a minute or two. Stir in lemon juice and 2 tablespoons olive oil. Serve warm in pita or as a dip or side dish. Garnish with quartered eggs, accompanied by minted yogurt and tahini sauce, if desired.
WARM MEDITERRANEAN BEAN SALAD
This is a sort of a copycat recipe from Villa Vesset restaurant in Pärnu, Estonia, EU. It was served there as an appetizer/salad but I regularily make it as a main dish.

Steps:
- Boil or steam the beans.
- Heat the butter on medium heat and saute the beans for 5 minutes until slightly browned.
- Turn off the heat, add the pesto and saute for 1 more minute.
- Divide between plates and garnish with the rest of the ingredients, sprinkle with black pepper.

MEDITERRANEAN WHITE BEAN SPREAD WITH FRESH HERBS
This spread or dip is a bit different than others I've tried. The flavor reminds me of herbed olive oil that you dip bread into. Fresh herbs are a must, but any white bean can be used in place of the cannellini beans. I used purple basil, which gave the spread a nice color. It is good any way you'd normally use hummus or most any dip, but I think it is especially good on crostini or crackers, or as a sandwich spread. This is adapted from a recipe from Kraft.

- Place beans, garlic, lime juice, and olive oil in food processor or mini-chopper; process until smooth.
- Add the rest of the ingredients and pulse until well mixed and the herbs are chopped as coarsely or finely as you like (I like them almost liquified).
- Refrigerate for at least a few hours so the flavors blend (overnight is even better).

This is the number one requested thing for me to make, which is great because it is sooo easy! This is the best if you spread it on thick bread such as French or farmers bread. Also good with crackers.

MEDITERRANEAN-INSPIRED 5-BEAN SALAD
Steps:
- Drain all beans and transfer to a large bowl. Add celery, onion, bell peppers, olives, parsley, and rosemary.
- Mix Greek salad dressing and 1 tablespoon honey together. Taste and continue to add more honey as desired. Pour on salad and mix until evenly distributed. Season with salt and pepper.
- Cover and refrigerate for 2 to 3 hours before serving.
