CRISPY PORK BELLY STIR FRY
This Crispy Pork Belly Stir Fry uses leftover roast pork for an easy side dish. The vegetables can be easily swapped for your favorites!

Steps:
- Prepare the jook coy by separating each stem. Slide small a knife through the bottom of the stems and tear it off.
- Rip off the tips of the leaves as they are usually the hardest part of the leaf and remove any holes or discolorations.
- You'll also find that the outer skin is rather tough, so make an incision at the base of the stem roughly 2mm (0.08") from the outer skin and press that between the knife and your index finger. Then slowly peel the skin away, repeating until all the outside parts are removed.Note: Doing this will unearth a lighter green stem that is much more tender.
- When all the greens are prepared, soak them in cool water with 2 tsp salt for 10 minutes. Rinse thoroughly, then repeat in new water. Do this 2-3 times to clean the vegetables well.
- Drain and transfer the the greens into a colander to dry.
- Heat up the wok or pan on a high heat. Once the wok is hot, turn the heat to medium and add half of the cooking oil in. Turn the heat up to high and add the jook choy stems and cook for 2 minutes or until 70% cooked.
- Add the leaves in along with the salt. Fold the leaves through the wok to cook evenly and stir fry for another 1 minute or 90% cooked, then transfer into a bowl.
- Add the rest of the cooking oil in the wok and add the finely chopped garlic. Let the garlic cook for 20 seconds.
- Add the meat in and cook for 30 seconds.
- Pour the greens back in along with the chicken bouillon powder and oyster sauce.
- Stir fry the ingredients together quickly for 1 minute or until combined, then plate.Note: To change things up, sometimes we let the ingredients braise by letting it simmer on medium heat for another 10-20 minutes until soft. The flavors will mellow out and be just as tasty.
- Serve as is with rice!

- Slice the pork into extremely thin slices, then transfer to a large bowl. This works best when the pork is super cold or partially frozen.
- Add in all of the ingredients besides the canola oil, then mix until the pork and the vegetables are evenly coated with the marinade.
- Cover and marinate in the refrigerator for at least 30 minutes.
- Heat the oil in a pan over high heat, add pork, being sure not to crowd the pan, stir-fry the pork in batches until slightly crispy on the edges, about 3-4 minutes. If you're using pork belly, cook for a bit longer, around 6-7 minutes.
- Sprinkle a bit of sesame seeds on top, then serve with rice!

- Heat 2 tablespoons oil in a large skillet over medium-high heat. Add cauliflower and stir-fry for 3 minutes. Add carrots and stir-fry for 2 minutes. Add corn and peas; cook until veggies are crisp-tender, 2 to 3 minutes. Remove all veggies to a bowl and keep warm.
- Add remaining 1 tablespoon oil to the skillet. Add pork and stir-fry for 2 minutes. Add green onions, garlic, ginger, and chili powder; fry until pork is no longer pink, 2 to 3 minutes. Remove from the skillet and keep warm.
- Add 1 cup water, soy sauce, honey, and bouillon to the skillet. Stir 2 tablespoons cold water and cornstarch together in a small bowl, then gradually add to the skillet, stirring constantly; bring to a boil. Cook and stir until thickened, about 2 minutes.
- Return vegetables and pork to the pan. Cook until heated through, 2 to 3 more minutes. Stir in peanuts.
- Serve over rice.

- Whisk soy sauce, vinegar, and cornstarch together in a small bowl.
- Heat 1 tablespoon oil in a wok over medium-high heat. Cook and stir tenderloin strips in hot oil until just browned, 2 to 4 minutes. Transfer pork to a plate and return wok to heat.
- Heat remaining oil in the same skillet over medium-high heat. Cook and stir red chile pepper and garlic in hot oil until sizzling, 15 to 30 seconds. - Heat your wok with 1 tablespoon vegetable oil until just smoking, and add the pork belly. Stir fry the pork belly, turning down the heat to medium and cooking the pork until just crispy and browned (about 6 minutes). Remove the pork from the wok and set aside.
- Turn the wok back up to high heat, and add the long hot green peppers to the leftover oil from frying the pork belly. Stir-fry until just scorched, but not wilted, and set aside along with the pork belly.
- At this point, there should still be leftover oil in the wok. Turn the heat down to medium, and add the ginger. Gently stir until fragrant. Add the dried red peppers, garlic, and the Sichuan peppercorns if you are using the whole peppercorns. Some people enjoy the whole peppercorns, but others don’t--especially if you bite into one! For this dish, I don’t mind them whole, but if you would rather grind them, hold off on adding them to the dish at this point.
- Gently stir-fry for another 30 seconds. It’s important to toast the dried peppers and garlic but not burn them, or it will result in a bitter flavor!

- Cut pork into thin slices. If using pork shoulder, as I did, halve it lengthwise to form two long pieces, then slice the pieces. See photo below.
- To cook, heat oil in a large non stick skillet (Note 4) over high heat. Add garlic and onion, cook for 2 minutes until translucent. Add pork and cook for 5 minutes or until dark golden and caramelised, and just cooked through.
