Steps:
- Preheat oven to 375 degrees F.
- In a mixing bowl, combine tapioca, peaches, sugar (if used), cinnamon and nutmeg.
- Mix thoroughly.
- Pour the fruit mixture into a buttered 9" X 13" baking dish.
- In a bowl mix thoroughly the ingredients for the Cobbler Dough.
- Spread over the fruit mixture.
- In a medium mixing bowl, stir together DRY cobbler topping ingredients.
- Sprinkle evenly over the cobbler dough layer.
- Then pour the boiling water evenly over the cobbler.
- (Do Not Stir.) Bake for 1 hour and 20 minutes or until knife inserted comes out clean and top has a golden crust.

- Preheat oven to 375 degrees F.
- Butter a 13 by 9 by 2 3/4-inch baking dish then pour peaches into baking dish and toss with lemon juice.
- In a small mixing bowl whisk together 1/2 cup sugar, cornstarch, 1/2 tsp cinnamon, and the nutmeg.
- Sprinkle sugar mixture evenly over peaches then toss to evenly coat, set aside.
- If using cake flour sift into a large mixing bowl, if using all-purpose flour just add to bowl (no sifting is necessary). Add 3/4 cup sugar, baking powder, baking soda, and salt and whisk to combined.
- Cut butter into flour with a fork or pastry cutter until it resembles coarse meal then make a well in center of mixture.
- Mix vanilla with buttermilk then pour buttermilk mixture into well in flour and fold and stir with a spoon just until combined (don't over-mix, it should be lumpy).
- Dollop and just lightly spread spoonfuls of the mixture evenly over top of peaches (about 12 dollops across the top).
- Whisk together remaining 2 tsp sugar with 1/4 tsp cinnamon and sprinkle evenly over top.
- Bake in preheated oven until topping is golden brown and set and and filling is bubbling, about 40 - 45 minutes.
- Remove from oven and let cool several minutes before scooping into bowls. Serve with vanilla ice cream.

- Preheat oven to 350 degrees F (175 degrees C.) In a large bowl, combine sliced peaches with juice, 2 tablespoons melted butter, a pinch of cinnamon and a pinch of nutmeg. Dissolve cornstarch in water, then stir into peach mixture; set aside.
- In another bowl, combine milk, sugar, flour, baking powder and salt. Beat until smooth - mixture will be thin.
- Melt 1/2 cup butter in a 9x13 inch pan. Pour batter over melted butter. Spoon peaches over batter. Sprinkle top with additional cinnamon and nutmeg.

In our classic southern-style peach cobbler, we layer the fruit on top of the batter before baking. - For the filling: Put the peaches, sugar, cinnamon, salt and lemon juice in a medium saucepan. Place over medium heat and cook, stirring occasionally, until the sugar is dissolved and the peach juices begin to boil. Lower to a simmer and continue to cook for 5 minutes. Remove from the heat.
- For the batter: Put the butter in a 2-quart baking dish and place it in the oven while it preheats. Preheat the oven to 350 degrees F.
- Whisk together the flour, sugar, baking powder and salt in a medium bowl. Stir the vanilla into the milk in a liquid measuring cup. Slowly pour the wet ingredients into the dry ingredients while whisking until well combined.
- Remove the baking dish from the oven and pour the batter in an even layer over the melted butter. Spoon the peaches along with their juices evenly over the top of the batter. Bake until the cobbler is golden brown on top and the peach juices are bubbling, 35 to 45 minutes.
- Let cool to room temperature before serving.
GRANDMA'S BEST IN THE WORLD PEACH COBBLER
This cobbler is a very smooth and custard-like dessert that is DELICIOUS. Grandma always made this for us because it was very easy and economical. Serve piping hot from the oven with vanilla ice cream melting over the top. This is an unbelievably delicious dessert! You can also substitute almost any other fruit for the peaches.

- Cream together 1/2 cup sugar with shortening, cream, and vanilla.
- Add flour, milk, baking powder and salt; mix well until smooth.
- Pour batter into greased 9 x 13-inch pan.
- Place sliced or chopped peaches evenly over batter.
- Sprinkle top with 1 cup sugar (yes, a whole cup!).
- Mix peach juice with enough water to measure one cup and bring to a boil, then pour evenly over the top of the pan. (This will look wrong and very watery, but trust me!).

PERFECT PEACH COBBLER
I played with a base recipe and came up with this to take to a friend's pool party. It was such a hit. All the guys said, 'Gosh, I didn't know anyone knew how to use a Dutch oven anymore!' I told them they were my guinea pigs because this was my first attempt with fresh peaches instead of canned. I don't think I can go back now; it was perfect, especially served warm with a scoop of vanilla ice cream. A little extra work but I can't wait to make it again.

- Preheat oven to 375 degrees F (190 degrees C).
- Stir peaches, mango, rum, lemon zest, almond extract, 1/8 teaspoon cinnamon, and nutmeg together in a bowl.
