0.5 (4 1/2 ounce) package boca chili seasoning mix
1/4 tomatoes, diced
1 ounce kraft shredded fat-free cheddar cheese
2 tablespoons knudsen's light sour cream
1/4 cup chunky salsa
2 black olives, chopped
6 guiltless gourmet tortilla chips, crushed (any flavor)

Steps:

  • Prepare Boca Chili as directed on package. Place lettuce in big bowl.
  • Top with tomatoes.
  • Add chili and cheese.
  • Top with olives, salsa and sour cream. Then finish off with crushed tortilla chips and enjoy! Serves 1.

1/2 large red onion, thinly sliced
10 ounces frozen peas, thawed, drained
6 ounces lean ham, cut into 1inch cubes
1 cup litehouse salsa ranch dressing
1 cup shredded low-fat cheddar cheese
1 cup halved cherry tomatoes

Steps:

  • Layer spinach, pasta, onion, peas and ham in a large serving bowl. Pour Litehouse Salsa Ranch Dressing over top in an even layer; top with cheese and tomatoes. Cover and refrigerate several hours until chilled. Toss gently before serving.

2 tablespoons sweet chili sauce
2 tablespoons fish sauce
2 tablespoons lime juice
2 teaspoons brown sugar
200 g rice sticks
100 g snow peas, thinly slices diagonally
100 g sugar snap peas, trimmed
1 cup fresh coriander leaves
425 g light chunk tuna in water, drained and flaked

Steps:

  • Combine sweet chili sauce, fish sauce, lime juice and brown sugar in a jug.
  • Set aside.
  • Place rice noodles into a large bowl.
  • Cover with boiling water and allow to stand for 3 minutes
  • Add snow peas and sugar snap peas and stand for a further 2 minutes
  • Drain and allow to cool.
  • Add coriander, tuna and dressing.
  • Toss until well combined.
  • Serve.

This recipe comes from my Weight Watchers Magazine, November/December 2008. This issue has several "make ahead recipes" for easy Holiday planning. "Make 2 hours ahead." 5 points for a 3/4 cup serving.

3 cups water
2 cups rice (mixture of white, brown and wild rice)
1/4 cup orange juice
2 tablespoons apple cider vinegar
2 tablespoons reduced sodium soy sauce
2 teaspoons honey
1 teaspoon sesame oil, dark
1 cup dried cranberries
1/2 cup scallion, chopped
3 ounces dried peaches, thinly sliced
1/4 cup pecans, chopped, toasted

Steps:

  • Bring the water to a boil in a large saucepan. Add the rice blend and return to a boil. Reduce the heat and simmer, covered, until the rice is tender and the liquid is absorbed, about 20 minutes. Spread the rice on a baking sheet and let cool to room temperature, about 20 minutes.
  • Meanwhile, combine the orange juice, vinegar, soy sauce, honey and sesame oil in a large bowl, beating with a whisk until blended.
  • Stir in the rice and the remaining ingredients; toss well to coat.
  • Serve at once or cover and let stand at room temperature up to 2 hours.
