A great holiday ham glaze needs to have three things: wonderful flavor, gorgeous, shiny appearance, and a crispy, crackling crust you can hear across the room. I'm happy to report this easy-to-make glaze has all those things in abundance.

¾ cup water, or as needed
2 whole star anise
12 whole cloves, or more to taste
1 (7 pound) country-style ham
1 cup firmly packed light brown sugar
¼ cup honey
2 tablespoons Dijon mustard
2 tablespoons rice vinegar
1 ½ teaspoons freshly ground black pepper
½ teaspoon Worcestershire sauce
1 pinch cayenne pepper

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Pour water, star anise, and cloves into the bottom of a roasting pan. Place a roasting rack into the pan over the water, anise, and cloves; place ham on rack. Cut 1/4-inch deep slashes 1/2-inch apart lengthwise and crosswise across the top of the entire ham.
  • Bake ham in the preheated oven for 20 minutes. Whisk brown sugar, honey, mustard, vinegar, black pepper, Worcestershire sauce, and cayenne pepper together in a bowl until glaze has a thick, smooth consistency.
  • Brush glaze all over ham. Continue baking ham, brushing glaze on every 20 minutes, until glaze is deep golden and ham is heated through, about 2 hours 10 minutes. An instant-read thermometer inserted into the center should read 130 degrees F (54 degrees C).
  • Use a kitchen torch to heat the glaze on the ham until it is crispy and caramelized, 2 to 5 minutes.

1 (6 lb) fully cooked smoked ham (about 6 lb.)
1/2 cup chicken stock
1/2 cup white wine
1/2 cup honey
1 bunch fresh thyme
salt & freshly ground black pepper
3 medium beets, cooked, peeled and diced
1 tablespoon white wine or 1 tablespoon cider vinegar
3 tablespoons grated raw horseradish
1/2 teaspoon salt

Steps:

  • Preheat oven to 325°F Score surface of ham to allow for expansion, and bake for 3-4 hours, or until a meat thermometer placed in the thickest part of the ham registers 140°F.
  • After 2 hours of baking, begin glazing ham and baste frequently until it is done, Let stand for 10-15 minutes before carving to allow juices to settle.
  • GLAZE;.
  • While ham is roasting place chicken stock, wine, honey and thyme in a saucepan and simmer for 20 minutes or until mixture begins to thicken. Strain out thyme and season with salt and pepper.
  • RELISH:.
  • Using a hand blender or food processor, blend together beets, vinegar, horseradish and salt. Serve at room temperature as a relish with the ham.

GLAZE:
1/2 cup honey
1/2 cup Dijon mustard
1-1/2 teaspoons dried rosemary, crushed
1 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon pepper
STUFFING:
1/2 cup butter, cubed
2 cups chopped onion
1-1/2 cups chopped celery
12 cups unseasoned stuffing cubes or dry bread cubes
1 tablespoon poultry seasoning
2 teaspoons chicken bouillon granules
1 teaspoon pepper
1 teaspoon dried rosemary, crushed
1 teaspoon lemon-pepper seasoning
3/4 teaspoon salt
3-1/4 to 3-3/4 cups boiling water

Steps:

  • Preheat oven to 325°. Place turkey on a rack in a shallow roasting pan, breast side up. Tuck wings under turkey; tie drumsticks together. Bake for 2 hours., In a small bowl, mix glaze ingredients; brush over turkey. Bake 1-3/4 to 2-1/4 hours longer or until a thermometer inserted in thickest part of thigh reads 170°-175°. Baste occasionally with pan drippings. (Cover loosely with foil if turkey browns too quickly.), For stuffing, in a Dutch oven, heat butter over medium-high heat. Add onion and celery; cook and stir until tender. Add stuffing cubes and seasonings; toss to combine. Stir in enough boiling water to reach desired moistness; transfer to a greased 13x9-in. baking dish. Bake, covered, for 1 hour. Uncover and bake until lightly browned, 10-15 minutes longer., Remove turkey from oven; cover loosely with foil and let stand 15 minutes before carving. If desired, skim fat and thicken pan drippings for gravy. Serve with turkey and stuffing.

2 1/2 kg ham, shin of raw gammon femur bone removed and hock bone left in
25 cloves
2 tablespoons olive oil
100 g honey
25 ml sherry wine vinegar
100 g coarse grain mustard
6 peppercorns
2 onions, peeled and halved
2 bay leaves, torn
1 carrot
1 celery rib
1 bulb of garlic, cut in half
600 ml milk
2 bay leaves, torn several times
1 small onion
4 cloves
1 garlic clove, bashed with the back of a knife to squash but keep intact
700 g celeriac, peeled and cut into 1cm cubes
25 g butter
salt
white pepper
1 1/4 kg of purple sprouting broccoli, woody bottoms trimmed
100 g hazelnuts
75 ml hazelnut oil
25 ml olive oil
sea salt
1 kg of maris piper potato
50 g duck fat
6 sage leaves
6 sprigs marjoram
salt
4 banana shallots
1 garlic clove
400 g flat leaf parsley
1 g xanthan gum
25 g butter
black pepper

Steps:

  • For the honey mustard glazed ham, soak the gammon in a large bucket or pan of cold water overnight. This will help to reduce the salt content. The next day remove the gammon and discard the soaking water.
  • Place the gammon in a large pan and cover with fresh water, then bring to the boil. Once the water is boiling drain and then refill the pan with cold water.
  • Add the halved and peeled onions, whole peeled carrot, celery, halved garlic bulb, peppercorns and the bay leaves to the water. Bring to a slow simmer and leave simmering for 2.5 hours.
  • Top up with boiling water if needed. Skim any scum off the top during the cooking process.
  • Probe at regular intervals, it should be a minimum of 63ºC. Do not cook above 70ºC as it will dry out. Leave to cool for an hour in the liquid.
  • Reserve 2 pints of the liquid for the parsley sauce and pour the remainder of it away (or use for pea soup). Place the ham in a roasting tray. Remove the skin, ensuring you leave a thin layer of fat, then score in the criss-cross pattern. Stud with cloves in each square. Set the oven to 180ºC/Gas mark 4.
  • To make the glaze - mix the oil, honey, mustard and sherry vinegar together in a mixing bowl. With a spoon smear some of the glaze over the ham and bake in the oven for 10 minutes.
  • After 10 minutes baste with more of the remaining glaze and juices that have dripped off the ham. Repeat the process again every 10 minutes for the next 30 minutes.
  • Wash, peel and remove any black spots from the potatoes. Cut the potatoes into even sizes, ensuring there are straight edges and right angles. This is easier to achieve with large potatoes.
  • Place the potatoes in a large pan and cover with cold water. Season the water well. It should taste like the sea. Bring the potatoes to a slow boil. Cook until they are nearly cooked and then drain the water.
  • Once drained, place the potatoes back in the pan, put the lid on and then shake firmly, so that they start to break up on the outside, not all the way through.
  • Place a heavy based roasting tray over two hob rings, add the duck fat and melt. Put the potatoes in the tray and turn over with a fish slice. You are looking to achieve a golden crisp colour on the potatoes. The colour does not need to be even all over.
  • Once the potatoes have a good amount of colour and before they start to burn place them in a hot oven on 220ºC/Gas mark 8 and roast until golden all over. When ready to serve, sprinkle with chopped sage and marjoram.
  • For the bread sauce, peel a small onion and stud with the cloves. Place the garlic, onion and bay leaves into a medium sized pan with the milk and bring slowly to the boil to infuse.
  • In a medium sized pan melt the butter. Then add the peeled and chopped celeriac and coat in the butter. Strain the infused milk over the celeriac and simmer for 15-20 minutes until tender. Do not worry if the milk splits.
  • Season with salt and white pepper. Once the celeriac is tender, blend in the liquidiser and keep warm until ready to serve.
  • Go back to the ham and check that it is golden all over. Once golden rest for 10 minutes and then it's ready to carve.
  • For the broccoli, bring a large pan of salted water to the boil (tasting like the sea). Cook the broccoli in the salted water for 3-4 minutes until the stem is just tender.
  • Then place into cold water to stop the cooking immediately. After 5 minutes drain well, it should still be reasonably firm.
  • Toast the hazelnuts in a pan, then remove from the pan and roughly chop. Add to the hazelnut oil.
  • Toss the broccoli in olive oil and season with Maldon salt, place under a hot grill and turn after 1-2 minutes.
  • Don't worry if some of the leaves start to burn just a little, the bitter notes are good. Once hot and slightly charred, dress with the hazelnuts and serve when ready.
  • For the parsley sauce, peel and slice the banana shallots and garlic, sweat down in the butter in a medium sized pan. Add the ham stock and bring to the boil.
  • Chop the flat parsley including the stalks. Place the ham stock and parsley in a liquidizer and blend for a 3-4 minutes. Add the xanthan gum, this will stop the sauce splitting when cooling.
  • Season with black pepper and serve warm with the rest of the components.

We were on a vacation with the administrative chef of Quebec's famous Chateau Frontenac and upon returning to the chalet, he made this recipe to which I assisted and helped cutting the vegetables. It tasted very good and to my surprise it had kept its original colour (rosy and tender). I have been making it ever since (that was 15 years ago).

1 (2 1/2 lb) ham, toupie style (half moon)
cold water, to cover the ham
2 carrots, peeled and cut in 2 inch length
2 stalks celery, peeled and cut in 2 inch length
1 medium onion, cut in half
4 -5 whole peppercorns
10 whole cloves
2 ounces liquid honey

Steps:

  • Put the ham in a casserole and cover it with cold water.
  • Add the ingredients of the first part and bring to simmer for 30 minutes.
  • With a fork get the ham out of the cooking liquid and put it on a Pyrex plate or other oven proof dish.
  • Insert evenly the cloves in the ham top surface and cover it with honey.
  • Place in a preheated oven (350°F) for 30 minutes.
  • Once the ham cooked, let it cool a while and with a spoon complete the glazing with the honey left at bottom of the plate.
  • Serve it warm or cold. (THE COOKING LIQUID THAT YOU KEPT, USE IT AS A SOUP BASE. ex: bean soup, minestrone, orsley. etc).

1/2 cup water
1 cup honey

1/4 cup honey
1/4 cup sugar
1/2 teaspoon granulated onion

  • Preheat oven 350°.

3 tablespoons unsalted butter
2 tablespoons chopped thyme
1 (12-to 14-pounds) boneless or semiboneless fully cooked ham at room temperature 1 hour
1/4 cup cider vinegar
1/2 cup mild honey
1 teaspoon Worcestershire sauce

Steps:

  • Melt butter with thyme and let stand until ready to use.
  • Preheat oven to 350°F with rack in lower third.
  • Peel off and discard any rind or skin from ham, leaving 1/4 inch of fat on ham. Score fat on top of ham in a crosshatch pattern without cutting into meat. Put ham on a rack in a large roasting pan. Cover ham with parchment paper, then cover roasting pan with foil. Bake 1 3/4 hours.
  • Meanwhile, boil vinegar in a small saucepan until reduced to about 1 tablespoon. Remove from heat and whisk in honey, Worcestershire sauce, and thyme butter. Let honey glaze stand until ham has baked 1 3/4 hours.
  • Discard foil and parchment from ham. If there is no liquid in roasting pan, add 1 cup water (liquid will prevent glaze from burning in pan). Brush ham with half of honey glaze, then bake, uncovered, 30 minutes.
  • Brush with remaining glaze and bake until glaze is deep golden-brown and ham is heated through, about 30 minutes more.
