AUTHENTIC MEXICAN SALSA ROJA

Authentic Mexican Salsa Roja image

This Mexican-style homemade salsa is fresh, unbelievably delicious, easy to make and seriously the best homemade salsa recipe you'll ever have.

Provided by Chef Kathy McDaniel

Categories     Appetizer     Condiment     Snack

Time 20m

Number Of Ingredients 6

6 ripe medium tomatoes (stem removed)
2 - 4 jalapeno or serrano chiles (or more for additional heat)
1/2 medium onion (diced)
1/3 cup fresh cilantro (chopped)
1 tablespoon of lime juice (or more to taste)
Salt to taste

Steps:

  • Heat a large cast iron skillet or a heavy-bottomed skillet over high heat. Add the tomatoes and the chiles to the pan and char on all sides, rotating the vegetables occasionally until blackened. This can take about 6 minutes for the chiles and 10 to 15 minutes for the tomatoes. The tomato skins should begin to pull away from the flesh and the chiles will look blistered.
  • Transfer the chiles to a cutting board and allow them to cool. Place the tomatoes, including any charred skin that has completely fallen off, in the bowl of a food processor or blender. Pulse a couple of times for about 10 seconds or until the tomatoes are blended but with a few small chunks for texture.
  • Transfer the blended tomatoes to a bowl. Cut the charred chiles in half lengthwise and remove the stems and seeds. You can remove the ribs if you don't like the salsa too spicy. Chop the chiles into small dice.
  • Mix the chiles, onions and cilantro with the tomatoes until combined. Stir in the lime juice and salt. Taste and season with additional lime juice and salt, if needed. Cover and refrigerate until cooled. Serve with chips.

AUTHENTIC FIRE-ROASTED TEX-MEX SALSA

Authentic Fire-Roasted Tex-Mex Salsa image

It has taken me years to perfect this recipe. Los Cucos is my favorite TexMex restaurant in Houston, and I used to eat there every 2 weeks, just so I would order a pint of red salsa to go to take home with me. I was addicted to the stuff, it's the best salsa in the world. I finally mastered my own version, which tastes nearly identical to Los Cucos's red salsa.

Steps:

  • Set an oven rack about 6 inches from the heat source and preheat the oven's broiler to high.
  • Spray a 9x13-inch glass casserole dish with cooking spray. Arrange tomatoes in the prepared dish with cut sides down. Add onion and jalapeno.

TEX-MEX SALSA

Tex-Mex Salsa image

I created this recipe to taste like my favorite Mexican restaurant that I went to when I was a child - Casa Hernandez. Jalapeno, cilantro, onion, salt, and garlic can be adjusted to taste. Chili powder may give this a nice touch, also. It just depends on your taste. This is a no-cook recipe. I am unsure of the amount of servings this makes.

Time 10m

Yield 4-6 cups, 20 serving(s)

Number Of Ingredients 8

2 fresh jalapenos, stems removed
1 medium onion, peeled and quartered
2 garlic cloves
1 (28 ounce) can whole tomatoes
1 (28 ounce) can diced tomatoes
2 teaspoons salt
2 tablespoons vinegar
1/4 cup fresh cilantro, no stems

Steps:

  • In a food processor or blender add onion, garlic, cilantro, vinegar, and jalapenos. (If you like it hot, add whole jalapeno or an extra jalapeno. If you like it mild, removed seeds.)
  • Pulse until thoroughly chopped.
  • Add canned tomatoes and salt.
  • Pulse until throughly combined.
  • Store in refrigerator until ready to use.

BASIC TEX-MEX SALSA

Basic Tex-Mex Salsa image

Another quick easy recipe and a family favorite! Just chop, drop, and mix! It's also easy to modify the intensity of the 'heat' by adding or subtracting a little of the jalapeno. An excellent beginning to a Tex-Mex meal, and I even use it on pain lettuce salads instead of dressing!

Provided by SciFiWriterDanceFit

Categories     Lunch/Snacks

Time 1h10m

Yield 4-8 serving(s)

Number Of Ingredients 6

2 (28 ounce) cans diced stewed tomatoes
1 large onion (white or yellow)
3 -4 jalapenos, chopped into tiny bits
1 bunch cilantro, chopped small
1 tablespoon oil
1 tablespoon vinegar (white or apple cider)

Steps:

  • Put the tomatoes into a large bowl.
  • Chop the onion and cilantro and add to tomatoes.
  • Start with 2 jalapenos, cut in half and take out and discard the seeds (this is where a lot of the heat is located). Slice into thin strips and then chop the jalapenos very tiny. Be care NOT to touch your face or eyes and to wash your hands immediately upon finishing.
  • Add the jalapenos to the mixture and combine.
  • Add oil and vinegar and stir. The colors should be beautifully blended and green should pop deliciously out of the red!
  • If desired add a little salt and pepper to taste.
  • Taste to see if you would like more jalapenos. Add these if desired.
  • Chill about 1 hour and serve cold with tortilla or corn chips.

BILL'S AUTHENTIC TEX-MEX SALSA

Bill's Authentic Tex-Mex Salsa image

I got this recipe from a friend who is a cop in Austin and he loves to cook. Not only that but he is really good at getting recipes from some of the great chefs around the Austin area. This recipe is from one of our local Tex-Mex hot spots and is a wonderful salsa recipe. Every time I make it I get requests for jars of it for people to take home. This year I have a garden growing with all of the important ingredients so I can store canned jars of the salsa.

Provided by Karen Stewart @newmom42

Categories     Other Appetizers

Number Of Ingredients 8

15 ounce(s) canned whole tomatoes
2 teaspoon(s) minced garlic or 1 large clove of garlic chopped
1/2 teaspoon(s) salt
1 - jalapeno, chopped (or more to taste)
12 ounce(s) can of campbell's tomato juice
2 - green onions, chopped
1/2 cup(s) fresh cilantro, lightly chopped
2 teaspoon(s) lime juice

Steps:

  • Put all ingredients in a food processor or blender (reserve 1/2 can of (6 oz) the tomato juice). Blend well for about 10 to 20 seconds on high. Do not puree. Pour into bowl and add remaining tomato juice. Stir well. Serve with tortilla chips
  • For a milder salsa, remove the seeds from the jalapeno before blending.
  • I always double this recipe and make one salsa mild and the other much spicier. *** Please use whole tomatoes and not diced as it will effect the thickness of the salsa.
