TIA MARIA BARBEQUE SAUCE
Since I love to cook in Chili and Barbeque contests I came up with this recipe sometime in 2006 for a Barbeque contest. I came up with it for pulled pork that year.

Steps:
- Mix all ingredients in a medium size saucepan and heat on medium.
- Slowly bring the liquid to a boil, stirring all the time.
- Reduce the liquid amount by 1/4 or until it reaches the thickness you like.

ORIGINAL SANTA MARIA STYLE BBQ

Steps:
- Prepare fire pit by making sure the proper barbecue method is used to prepare the meat; using red oak logs burnt down to the coals with very little flame is strongly suggested for cooking the rib roast. Alternatively, preheat a grill.
- Next, pour the seasoning into a shallow pan and dip or roll the meat in it, making sure to completely cover all sides. Quickly sear the meat to seal in the flavorful juices and then raise the pit screen to prevent burning while slowly cooking the meat to your desired doneness. When the meat is finished cooking, remove it from the pit and let it rest 10 to 20 minutes before slicing and serving.
- Combine all ingredients in proportions according to your taste. Use the seasoning to sprinkle on meat or roll large pieces of meat into seasoning in a shallow tray.
THAI BARBEQUE MARINADE
This is fantastic for marinating chicken, pork, or beef! My friend from Thailand gave me this recipe! I find most of my ingredients at an Oriental market. Then you will have this for so many different recipes. Barbeque, broil, or grill to taste! YUMMMMY!!!!!

- Whisk together the fish sauce, rice wine, sesame oil, sugar, garlic, ginger, and honey in a small bowl. Marinate meat at least 6 hours or over night before cooking.

THAI BARBECUE SAUCE
I know, that's a really long ingredient list. Pretty simple to make, though. The sauce is very flavorful without being very hot; I use it as a marinade or a stir-fry sauce most often.

Steps:
- Heat the sesame oil and cook onion (be careful, sesame oil has a low flashpoint and burns easily).
- Add ginger and cook 5 minutes.
- Add remaining ingredients and cook 20 minutes.
- Strain and cook another 20 minutes.
- This will keep well in the refrigerator.
TIA MARIA SKIRT STEAK

- TO MAKE THE MARINADE: In a small bowl whisk together the coffee liqueur and Worcestershire sauce.Trim the steaks of any excess fat and cut each steak in half. Place the steaks in a large, resealable plastic bag and pour in the marinade. Press the air out of the bag and seal tightly. Turn the bag to distribute the marinade, place on a plate, and refrigerate for 2 to 4 hours, turning occasionally.TO MAKE THE RUB: Using a spice grinder or mortar and pestle, crush the peppercorns with the coffee beans and fennel seeds. Place in a small bowl and mix with the remaining rub ingredients.Remove the steaks from the bag and discard the marinade. Pat the steaks dry with paper towels. Coat both sides of the steaks with the rub. Allow to stand at room temperature for 20 to 30 minutes before grilling.Brush or spray both sides of the steaks with olive oil. Grill over Direct High heat for 3 to 5 minutes, turning once halfway through grilling time. Remove from the grill and allow to rest for 2 to 3 minutes.
