SPICY CHICKEN TIKKA



Spicy Chicken Tikka image

Chicken tikka marinaded in yoghurt spiced with Chilli Powder, Garlic and Cumin.

150 ml (1/4 pint) natural yoghurt
1 tbsp lemon juice
2 tsp Chilli Powder Mild
2 tsp Paprika
1/4 tsp Garlic
1/4 tsp Cumin Ground
1/4 tsp Sea Salt
4 boneless, skinless chicken breasts, cubed

Steps:

  • Combine all the ingredients, except the chicken, in a bowl and mix well.
  • Stir in the chicken, cover and refrigerate for 1-2 hours or overnight.
  • Thread the chicken onto skewers and grill for 15-20 minutes, turning frequently, until the chicken is cooked and slightly charred. Great as a starter for any Indian meal or as a snack.

This homemade chicken tikka tastes just as good as any chicken tikka you can buy! It's a great recipe for an Indian chicken marinade and you can then eat the chicken in all kinds of different ways or add it to other recipes.

600 g chicken ((4 chicken breasts))
1/2 lemon (juiced)
2 tbsp natural yogurt
1 tsp cayenne pepper
1 tsp paprika
1 tsp coriander
1/2 tsp cumin
1/2 tsp turmeric
1/4 tsp cinnamon
3 garlic cloves (crushed)
1 tbsp ginger (grated)
1 tsp natural red food colour (optional)
1 pinch salt

Steps:

  • Mix together all the marinade ingredients and put the chicken in.
  • Marinate overnight or for at least 4 hours.
  • Cook the chicken under the grill or in a frying pan until fully cooked.

6 teaspoons coriander
6 teaspoons cumin
6 teaspoons garlic powder
6 teaspoons paprika
4 teaspoons garam masala
3 teaspoons ginger, ground
3 teaspoons dried mint
2 teaspoons chili powder

Steps:

  • The idea is you mix all these together and then keep the powder mixture for when you need it. If you couldn't get garlic powder you could replace it with fresh garlic when you added the required amount of mix to a dish.
  • I've left the mint out too and it was perfectly ok :).
