- In a small mixing bowl, combine the vanilla wafers and coffee. Set aside and let sit for a few minutes until the coffee is absorbed.
- n a large mixing bowl, beat together the heavy cream, milk, and pudding mix.
- Fold in the thawed whipped topping.
- In a freezer safe 2 quart (64 oz) container, add ⅓ of the ice cream base. Then spoon in half of the vanilla wafer/coffee mixture. Repeat this once again, ending with a final layer of ice cream base on top.
- Place a lid on the container, and freeze for at least 3 hours and up to overnight. Allow the ice cream to sit out at room temperature for at least 15-20 minutes before serving. Scoop and enjoy!

Steps:
- Combine cream, milk and vanilla bean scrapings and pod in a saucepan and heat over medium heat until hot but not boiling.
- Remove from heat and let cool, about 30 minutes.
- Combine yolks, sugar, and salt in a large bowl and beat until the mixture has tripled in size and is thick and creamy. I used about speed 8 on my Kitchenaid.
- Reduce mixer speed to medium-low and pour milk mixture slowly into it.
- Transfer mixture back to the saucepan and cook over medium heat, stirring constantly, until it is thick enough to coat the back of a spoon.
- Strain the mixture through a mesh sieve into a bowl set in an ice water bath.

- Chill in the fridge for at least one hour.
- Freeze in an ice cream maker.
- While mixture is freezing, prepare ladyfingers. Combine equal parts amaretto and strong coffee and quickly dip (just a few seconds) ladyfingers in the mixture so the ladyfingers are soaked throughout but retain their crunchiness.
- Before transferring bowl to freezer or eating, fold in fudge sauce and soaked ladyfingers.
- Chill in the freezer until set.
- To serve, place several ladyfingers in a bowl, drizzle with coffee and amaretto mixture and top with tiramisu ice cream.

EASY PUDDING TIRAMISù
This is not authentic, but it is a fast, easy to make and very tasty version of Venice's favorite cheesecake. It comes from the Magic of Jell-O. The name means "pick me up". Also try substituting vanilla wafers for the lady fingers. If you do, reduce the coffee to 1/2 cup because the wafers won't absorb the liquid as well.

- Prepare pudding according to box direction.
- Add cheese and coffee liqueur and beat until smooth.
- Cover with plastic wrap and chill 1 hour.
- Fold in whipped topping.

- Whisk the egg yolks and sugar together in a large bowl until pale and thick. Put the mascarpone and milk in a saucepan, heat the milk mixture over a low medium heat until it comes to a boil. Remove from the heat, add the vanilla extract and let it sit for 1 minute.
- Very gradually add the milk to the egg mixture whilst continuously whisking. Once it all fully incorporated transfer the custard liquid back into the saucepan on a low heat. Add the espresso powder and whisk until dissolved.
- Stir the custard for 5-10 minutes until it has thickened enough to coat the back of a wooden spoon. Remove from the heat, add the marsala, stir then set aside to cool.
- Pour the ice cream into your ice cream machine.
- Dip each side if the savoiardi biscuits into the espresso for a second and place on a chopping board. Cut into small cubes, set aside.
- When the ice cream has thickened and almost ready (usually after around 10 minutes) add the savoiardi biscuits a little at a time. Once ready, transfer to a freezer proof tub and freeze until ready to serve.

FROZEN TIRAMISU CAKE

- Line a loaf pan that the pound cake fits in with overhanging plastic wrap.
- Cut the pound cake horizontally into 4 slices. Stir the ground espresso together with the grated chocolate in a small bowl.
- Place the first slice of cake in the prepared loaf pan. Drizzle the cake with 2 1/2 tablespoons liqueur. Spread half of the coffee ice cream over the cake and top with 2 tablespoons of the chocolate and espresso mixture.
- Repeat the process above, this time using the chocolate ice cream. Then again, using the remaining coffee ice cream. Repeat one final time, using the vanilla ice cream and garnishing the top with the remaining chocolate and espresso mixture.

- Remove from the freezer and unfold the plastic wrap from the top. Remove the cake form the pan and peel off the remaining plastic wrap. Slice and serve.

- Preheat the oven to 350 degrees F. Lightly butter six 8-ounce ramekins and set on a baking sheet; set aside. Put the butter and milk in a medium microwave-safe bowl and microwave in 30-second intervals until the butter is melted. Add 1/2 cup granulated sugar, the vanilla and salt and whisk until smooth. Add the flour and baking powder and whisk until smooth. Divide among the prepared ramekins.

- In small saucepan, stir together 2 cups milk and the chocolate pudding mix over medium heat.
- Bring to a boil, stirring constantly.
- Let cool for 5 minutes.
- Meanwhile, in another small saucepan, stir together the remaining 2 cups milk and the vanilla pudding mix over medium heat.
- Bring to a boil, stirring constanty.

- Combine cream, milk, 6 tablespoons sugar, and salt in a medium saucepan over medium heat. Scrape vanilla seeds into pan; add pod. Heat until hot (do not let boil), about 2 minutes. Remove from heat; cover and let stand 30 minutes.
- Prepare an ice-water bath. Whisk together egg yolks and remaining 6 tablespoons sugar in a medium bowl. While whisking constantly, add a ladle of hot cream mixture in a slow stream, then add another ladle. Pour yolk-mixture into remaining hot cream mixture in pan. Cook over medium heat, stirring constantly, until custard is thick enough to coat the back of a spoon and registers 170 degrees on an instant-read thermometer, 5 to 7 minutes. (The custard should retain a line drawn with your finger across the back of a spoon.)
- Strain through a fine sieve into a bowl set in the prepared ice-water bath. Let stand until cold, stirring occasionally.
- Pour mixture into ice cream maker. Process according to manufacturer's instructions. The ice cream is ready once it holds its shape when the machine stops but sags slightly. Transfer to an airtight container and freeze.
