Categories     Dessert

Yield 6 serving(s)

Number Of Ingredients 6

1 (8 inch) sponge cakes
3 ounces strong black coffee or to taste instant espresso, Prepared
3 ounces rum or 3 ounces other liqueur
1 1/2 lbs cream cheese or 1 1/2 lbs mascarpone, at room temperature (Mascarpone is available at some Italian specialty food stores and some gourmet food stores.)
1 1/2 cups extra finely granulated sugar or 1 1/2 cups powdered sugar
to taste cocoa powder, Unsweetened

Steps:

  • Cut across the middle of the sponge cake to form two disks, about 1"-1-1/2" thick, each.
  • Blend the coffee or espresso and liqueur together.
  • Sprinkle the bottom half of the cake with the coffee liqueur blend, enough to flavor it strongly, but don't saturate the cake so much that it will collapse.
  • Mix the cream cheese or mascarpone with the sugar and beat the cheese until the sugar is completely dissolved and the cheese is light and spreadable.
  • Spread the bottom half off the cake with half of the creamy cheese, in a fairly thick layer.
  • Set the second half of the cake on the bottom half and repeat the process ~ sprinkle the coffee/liqueur blend and spread with the remaining cream cheese.
  • Put the cocoa powder into a wire strainer and coat the top layer of cream cheese completely with cocoa.
  • Refrigerate the cake for at least two hours before cutting and serving.

Yield 2 servings

Number Of Ingredients 9

2 1/2 tablespoons heavy cream
1/4 cup (2 ounces) mascarpone cheese, softened
1 tablespoon sugar
1/4 teaspoon vanilla extract
3 tablespoons amaretto or other almond liqueur
1/4 cup really strong coffee or espresso, cooled
4 savoiardi (Italian lady fingers), each cut in half
1 tablespoon unsweetened cocoa powder, plus more for garnish
Amaretti cookies, broken into pieces, for garnish

Steps:

  • When ready to serve, sprinkle the tiramisu with the broken amaretti cookies and a little extra cocoa powder.

AUTHENTIC TIRAMISU

Authentic Tiramisu image

On my first trip to Italy to meet my husband's family back in 1995, I didn't speak a word of Italian. But I did learn how to make great 'dolci' from his sister, Maria. This was her recipe and now when we go back they ask me to make it!

Provided by Kim's Cooking Now

Categories     World Cuisine Recipes     European     Italian

Time 2h30m

Yield 12

Number Of Ingredients 8

½ cup white sugar
3 eggs, separated
2 tablespoons brandy
2 cups brewed espresso, cooled, divided
2 (8 ounce) packages mascarpone cheese
1 pinch white sugar
30 ladyfingers (such as Savoiardi®)
3 tablespoons unsweetened cocoa powder

Steps:

  • Beat 1/2 cup sugar, egg yolks, brandy, and 1 tablespoon espresso together in a bowl using an electric mixer until smooth, 2 to 3 minutes. Add mascarpone cheese to sugar-egg mixture and beat until well blended, 3 to 5 minutes.
  • Beat egg whites and a pinch sugar in a bowl using an electric mixer until stiff peaks form. Gently fold egg whites into mascarpone mixture.
  • Pour remaining espresso into a shallow dish. Dip 1 side of each ladyfinger into the espresso and arrange on a serving platter in 2 horizontal rows of 6 with 2 1/2 ladyfingers in opposite direction on both ends to form a rectangular shape.
  • Spread 1/2 of the mascarpone mixture onto the ladyfinger layer and dust with 1/2 of the cocoa powder. Repeat with remaining ladyfingers dipped in espresso, mascarpone mixture, and cocoa powder. Refrigerate tiramisu until ladyfingers have softened from the espresso and mascarpone mixture, 2 to 3 hours.

Provided by Ina Garten

Time 15m

Yield 8 servings

Number Of Ingredients 8

6 extra-large egg yolks, at room temperature*
1/4 cup sugar
1/2 cup good dark rum, divided
1 1/2 cups brewed espresso, divided
16 to 17 ounces mascarpone cheese
30 Italian ladyfingers, or savoiardi
Bittersweet chocolate, shaved or grated
Confectioners' sugar (optional)

Steps:

  • Whisk the egg yolks and sugar in the bowl of an electric mixer fitted with the whisk attachment on high speed for about 5 minutes, or until very thick and light yellow. Lower the speed to medium and add 1/4 cup rum, 1/4 cup espresso, and the mascarpone. Whisk until smooth.
  • Combine the remaining 1/4 cup rum and 1 1/4 cups espresso in a shallow bowl. Dip 1 side of each ladyfinger in the espresso/rum mixture and line the bottom of a 9 by 12 by 2-inch dish. Pour half the espresso cream mixture evenly on top. Dip 1 side of the remaining ladyfingers in the espresso/rum mixture and place them in a second layer in the dish. Pour the rest of the espresso cream over the top. Smooth the top and cover with plastic wrap. Refrigerate overnight.
  • Before serving, sprinkle the top with shaved chocolate and dust lightly with confectioners' sugar, if desired.
  • *RAW EGG WARNING
  • Food Network Kitchens suggest caution in consuming raw and lightly-cooked eggs due to the slight risk of Salmonella or other food-borne illness. To reduce this risk, we recommend you use only fresh, properly-refrigerated, clean, grade A or AA eggs with intact shells, and avoid contact between the yolks or whites and the shell.
  • Notes: To make espresso for this recipe in your electric drip coffee maker, use enough water for 4 cups of coffee plus 1/3 cup of ground espresso.
  • You can find savoiardi and mascarpone in an Italian specialty store.
