TIROKROKETES | FRIED CHEESE BALLS

Steps:
- In a mixing bowl, combine the following: feta, gouda, cheddar, eggs, panko bread crumbs, milk and pepper, mix well.
- Once everything is thoroughly mixed, cover the bowl with plastic wrap (cling film) and place in the refrigerator for 30 minutes, or until mixture becomes a bit firm.
- When the cheese mixture is ready, add some flour to a bowl. This is what we'll use to coat each cheese ball.
- Next, heat the vegetable oil in a pan. Once that's nice and hot, we are good to go.
- Grab about a spoonful of the cheese mixture and roll it into a ball. Use more or less to achieve desired size.*
- Roll the cheese ball in the flour bowl to evenly coat and shake off excess and place in pan. Repeat until all cheese mixture has been used. Make sure not to overcrowd your pan, so fry in stages if needed.
- Cook evenly for 3-5 minutes, rotating each ball. They're done when they are a nice light brown/golden color.
- When they are done, remove with a slotted spoon and place on plate lined with a paper towel to absorb excess oil.
- Squeeze a little lemon juice over (option) and serve hot!

- Line a baking sheet with parchment paper or waxed paper.
- Pour bread crumbs, Parmesan cheese, and Cheddar cheese into 3 separate piles on the prepared baking sheet. Combine milk and egg in a bowl and stir until well combined.
- Roll cream cheese into 1-inch balls. Split each ball in half and place sharp Cheddar inside of cheese ball; put it back together and shape cream cheese around the Cheddar cheese. Roll it in Parmesan and Cheddar cheeses until the outside is completely covered. Dip in the milk mixture and roll in bread crumbs until completely covered. Repeat with remaining cream cheese balls.
- Heat oil in a large saucepan to 350 degrees F (175 degrees C). Drop cheese balls in the hot oil and allow to get brown on all sides, 3 to 5 minutes. Drain on paper towels.

- Cut the goat cheese log into 16 pieces and roll each piece into a ball. Refrigerate the balls on a wax paper–lined baking sheet until firm, about 10 minutes.
- In a bowl, whisk the egg and club soda. Gradually whisk in the flour and cornstarch and season with salt. Spread the panko in a shallow bowl. Dip the goat cheese balls in the egg batter, then dredge in the panko. Coat the balls again in egg batter and panko. Return them to the baking sheet and freeze just until firm, about 15 minutes.
- In a large saucepan, heat 2 inches of canola oil to 375°. Working in batches, fry the cheese balls over high heat, turning occasionally, until golden and crisp, about 2 minutes. Using a slotted spoon, transfer the balls to a paper towel–lined plate and season with salt. Transfer the cheese balls to a platter, drizzle with honey and sprinkle with pistachios and pepper. Serve hot.
