Toasted Turkey, Salami & Cheese Sandwiches: Homemade Mini-Grinders image

Depending on how many people are eating, you'll want to multiply the supplies below. A hungry adult will eat two sandwiches. Our small kids couldn't quite finish one.

Number Of Ingredients 8

Small whole wheat baguette rolls
Sliced turkey lunchmeat
Sliced salami
Provolone cheese
Shredded iceberg lettuce
Mustard
Mayonnaise
Italian dressing (make your own with oil + vinegar) or just use your favorite from the store

Steps:

  • Preheat broiler.
  • Slice open your rolls and place them on a baking sheet, cut side up. Toast for about 1 minute but NO LONGER.
  • Pull the rolls out and layer on the fillings: salami, turkey then cheese on top. Toast again for about 2 minutes, until the cheese is hot and melty but NO LONGER.
  • Add shredded lettuce, mustard, mayo and/or Italian dressing and eat immediately.

2 pub-style sandwich buns
1 -2 tablespoon butter or 1 -2 tablespoon margarine
1 slice mozzarella cheese
1 slice cheddar cheese
4 slices salami or 4 slices pepperoni
5 slices deli turkey or 5 slices deli chicken
1 tablespoon mayonnaise (optional)
1 tablespoon mustard (optional)

Steps:

  • Butter both halves of the buns.
  • Broil in the oven until just turning brown.
  • Remove from oven.
  • Add cheese to the top half of the bun.
  • Add turkey and salami to bottom half of bun.
  • Return to oven and broil until cheese just melted.
  • Remove from oven and add mayonnaise and mustard if desired.

Hot Smoked Turkey Sausage Sandwiches with Grilled Onions, Fennel and Peppers image

8 Italian spicy peppers
1 Spanish onion
1 small fennel bulb
2 tablespoons olive oil
Salt
3 pounds link sweet Italian turkey sausage
4 hoagie rolls, centers removed
4 ounces aged provolone
Hot Green Apple Chutney, recipe follows
1/2 onion, sliced thin
1/4 teaspoon minced garlic
1/2 teaspoon minced ginger
2 Granny Smith apples, cored and diced into 1/4-inch by 1/4-inch
1/2 teaspoon pickling spice
2 tablespoons apple cider
Salt and pepper

Steps:

  • Cut the stalks off the fennel and slice the bulb lengthwise into 1/2-inch slices. Cut the onion crosswise into 1/2-inch thick slices. Lightly brush both sides of fennel, onion, and peppers with olive oil. Grill the fennel, onion, and peppers over medium heat for 10 to12 minutes, turning once. Remove from the grill and cut away the root from the fennel. Split peppers in half and remove seeds. Chop fennel, onion, and peppers into 1/2-inch pieces. Over low heat and applewood, hickory or oak, smoke the sausages for 30 minutes until they are no longer pink in the center. Toast the hoagie rolls. Fill rolls with apple chutney, sausage, peppers, onion and fennel. Top with more apple chutney and shaved aged provolone.
  • In a medium size saucepan lightly caramelize onions in oil over medium heat. Add garlic and ginger and saute for 5 minutes. Add apples and pickling spice. Gradually add apple cider. Cook until apples are just tender, about 5 minutes. Season with salt and pepper.

1 ½ teaspoons balsamic vinegar
1 teaspoon dried basil
1 teaspoon dried oregano
salt and freshly ground black pepper to taste
4 (6 inch) hoagie rolls, split lengthwise

Steps:

  • Preheat an outdoor grill for medium heat and lightly oil the grate.
  • Place sausages on the preheated grill. Grill until browned and cooked through, turning occasionally, 10 to 16 minutes. Your cooking time will depend on your grill and how close the sausages are to the heat. An instant-read thermometer inserted into the center should read 165 degrees F (73 degrees C) for well done.
  • Meanwhile, heat sun-dried tomato oil in a skillet over medium heat. Add red onion, bell pepper, and sun-dried tomatoes. Saute, stirring occasionally, until veggies are tender-crisp, 3 to 4 minutes. Drizzle balsamic vinegar over the veggies, then sprinkle with basil, oregano, salt, and pepper; stir until well combined.
  • Place turkey sausages in the rolls and evenly distribute the vegetable mixture over the top.

6 thin slices fully cooked ham
12 slices buttered French bread (1/2 inch thick)
2 large eggs, lightly beaten
1/2 cup 2% milk
2 tablespoons butter
1/2 cup mayonnaise
1/2 cup Miracle Whip
1/3 cup whole-berry cranberry sauce

Steps:

  • Place 1 slice each of turkey and ham on 6 bread slices. Top with remaining bread. In a shallow bowl, beat eggs and milk. 1 tablespoon dried thyme
½ cup mayonnaise
¼ cup coarse-grain brown mustard
8 slices country style French Bread
6 tablespoons butter, softened
1 pound thinly sliced roast turkey
8 slices tomato
8 slices Swiss cheese

Steps:

  • In a small bowl, stir together the red onion, thyme, mayonnaise and mustard. Spread some of this mixture onto one side of each slice of bread. Spread butter onto the other side of the slices of bread.
  • Heat a large skillet over medium heat. Place 4 slices of the bread into the skillet with the butter side down. 2 medium white onions, halved, sliced 1/4 inch thick lengthwise

4 spicy or sweet Italian turkey sausages (about 1 pound total)
4 hoagie rolls or 1 loaf French bread (cut into 4 pieces), split and toasted
Grainy mustard (optional)

Steps:

  • In a large skillet, heat 1 tablespoon oil over medium-high. Add onions and peppers; cook, stirring occasionally, until beginning to brown, about 7 minutes. Season with salt and pepper and add 3/4 cup water; cover and simmer 3 minutes. Uncover and cook, stirring occasionally, until vegetables are soft and liquid has evaporated, 2 minutes. Cover and refrigerate 1 cup onion-pepper mixture for later use.
