Number Of Ingredients 15

1 medium Granny Smith apple, peeled and chopped
1 tablespoon thawed apple juice concentrate
2/3 cup plus 2 tablespoons sugar, divided
1-1/2 teaspoons ground cinnamon
3-1/4 cups all-purpose flour
1-1/4 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1-1/4 cups buttermilk
6 tablespoons butter, melted, divided
1/4 cup brickle toffee bits
GLAZE:
1-1/2 cups confectioners' sugar
3 tablespoons thawed apple juice concentrate
2 tablespoons brickle toffee bits

Steps:

  • Preheat oven to 400°. In a microwave-safe bowl, combine apple and apple juice concentrate; microwave, covered, on high for 1-2 minutes or until tender. Drain; cool slightly. In a small bowl, mix 2/3 cup sugar and cinnamon., In a large bowl, whisk flour, baking powder, baking soda, salt and remaining sugar. Stir in buttermilk and 2 tablespoons melted butter just until moistened. Turn onto a lightly floured surface; knead until smooth, 2-4 minutes., Roll dough into a 12x9-in. rectangle. Brush with 2 tablespoons melted butter to within 1/2 in. of edges; sprinkle with sugar mixture, apple and toffee bits. Roll up jelly-roll style, starting with a long side; pinch seam to seal. Cut into eight slices., Place in a greased 9-in. square or round baking pan, cut side down. Brush with remaining melted butter. Bake 22-28 minutes or until golden brown., Cool 5 minutes on a wire rack. In a small bowl, mix confectioners' sugar and apple juice concentrate until smooth. Spread over buns; sprinkle with toffee bits. Serve warm.

8 cups cubed French bread (1-inch cubes)
2 medium tart apples, peeled and chopped
1 package (8 ounces) cream cheese, softened
3/4 cup packed brown sugar
1/4 cup sugar
1-3/4 cups whole milk, divided
2 teaspoons vanilla extract, divided
1/2 cup English toffee bits or almond brickle chips
5 large eggs

Steps:

  • Place half of the bread cubes in a greased 13x9-in. baking dish; top with apples. In a large bowl, beat the cream cheese, sugars, 1/4 cup milk and 1 teaspoon vanilla until smooth; stir in toffee bits. Spread over apples. Top with remaining bread cubes. , In another bowl, beat the eggs and remaining milk and vanilla until blended; pour over bread. Cover and refrigerate overnight., Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 350° for 35-45 minutes or until a knife inserted in the center comes out clean.

Nothing beats the crunch of a toffee apple on a crisp autumnal evening, and these taste so much better than shop bought

8 Granny Smith apples
400g golden caster sugar
1 tsp vinegar
4 tbsp golden syrup

Steps:

  • Place the apples in a large bowl, then cover with boiling water (you may have to do this in 2 batches). This will remove the waxy coating and help the caramel to stick. Dry thoroughly and twist off any stalks. Push a wooden skewer or lolly stick into the stalk end of each apple.
  • Lay out a sheet of baking parchment and place the apples on this, close to your stovetop. Tip the sugar into a pan along with 100ml water and set over a medium heat. Cook for 5 mins until the sugar dissolves, then stir in the vinegar and syrup. Set a sugar thermometer in the pan and boil to 150C or 'hard crack' stage. If you don't have a thermometer you can test the toffee by pouring a little into a bowl of cold water. It should harden instantly and, when removed, be brittle and easy to break. If you can still squish the toffee, continue to boil it.
  • Working quickly and carefully, dip and twist each apple in the hot toffee until covered, let any excess drip away, then place on the baking parchment to harden. You may have to heat the toffee a little if the temperature drops and it starts to feel thick and viscous. Leave the toffee to cool before eating. Can be made up to 2 days in advance, stored in a dry place.

6 Granny Smith apples
12 tablespoons (1 1/2 sticks) unsalted butter
1 1/2 cups sugar
3 tablespoons brandy
1 tablespoon freshly squeezed lemon juice
Cinnamon Twists, recipe follows
Caramel Sauce, recipe follows
1/4 cup coarsely chopped peanuts
1/2 sheet frozen puff pastry, thawed
2 tablespoons unsalted butter, melted
1/4 cup sugar
1 teaspoon cinnamon
2 1/2 cups sugar
1/2 cup water
1 cup heavy cream

Steps:

  • Peel and core the apples, leaving them whole. Cut the tops and bottoms off the apples to give them flat surfaces to rest on. In a skillet, melt the butter over medium heat. Stir in the sugar and cook over medium-high heat, stirring, until the mixture begins to turn golden brown and caramelized. Add the brandy and lemon juice and stir to blend. Adjust the heat so the mixture remains at a simmer. Place the apples in the liquid and simmer until the submerged portion is tender, about 15 minutes. Turn the apples over and cook until tender all the way through, about 15 minutes more. Remove from the liquid and set aside to cool.
  • Preheat the oven to 400 degrees F. Line a sheet pan with parchment or buttered waxed paper. Unroll the puff pastry on a work surface and brush the pastry with melted butter. In a small bowl, toss together the sugar and cinnamon and sprinkle evenly over the pastry. Working lengthwise, cut the pastry into 6 even strips, each 3/4-inch wide. Twist the strips, keeping the cinnamon sugar on the inside, to make long twisted "straws." Transfer to the prepared pan, run your fingers along the twists to straighten, and bake about 20 minutes, until puffed and golden brown.
  • Pour the sugar into the center of a saucepan. Carefully pour the water around the sugar, trying not to splash any sugar onto the sides of the pan. Do not stir; gently draw your finger through the center of the sugar to moisten it. Over medium heat, bring to a boil without stirring. Cook until light caramel in color and immediately remove from the heat. Carefully (it will bubble up and may splatter) stir in the cream with a wooden spoon until smooth.
  • To serve, place an apple on each serving plate. Drizzle with caramel sauce, sprinkle with peanuts, and place a pastry straw in the hole of each apple so that it sticks up like a wooden stick.

6 Granny Smith apples , peeled, cored and cut into eighths
150g demerara sugar
100ml brandy
3 eggs
125g caster sugar
150ml double cream
10 digestive biscuits , crushed, to serve
200g dark brown soft sugar
25g butter , chopped
50ml double cream
50ml cloudy apple juice
½ tsp ground cinnamon

Steps:

  • Tip the apples, demerara sugar and brandy into a pan, bring to the boil and simmer for 12-15 mins until caramelised and sticky, then leave to cool. Scoop about a third of the wedges out of the sauce and set aside, then use a blender or food processor to purée the rest of the apples and sauce, then set aside.
  • Separate the eggs and tip the yolks into a large metal bowl. Set aside the whites for later. Dissolve 100g of the caster sugar in a medium saucepan with 120ml boiling water. When clear, bring to the boil and put a sugar thermometer in the pan. Meanwhile, whisk the yolks in a bowl with an electric mixer until creamy. When the sugar syrup reaches 120C, remove from the heat at once. With the mixer running, drizzle the syrup onto the yolks and beat, on full speed for 3-5 mins until you have a firm yellow foam. Leave to cool, whisking occasionally.
  • Whisk the egg whites in a clean bowl with a clean whisk until they form stiff peaks, then whisk in half of the remaining caster sugar and continue to whisk for 30 seconds, then add the rest of the sugar and continue whisking until stiff peaks have formed again. In a third bowl, whisk the cream until soft peaks form. Gently fold the apple purée through the egg yolk mixture, then fold that through the egg whites and lastly fold that mixture through the whipped cream. Keep on folding until everything is fully combined. Pour into a 900g loaf tin lined with cling film and freeze overnight. Can be made two weeks in advance and kept frozen.
  • To make the sauce, tip the sugar and butter into a saucepan and heat until it starts to melt. Once the sugar begins to bubble, add the cream, water, apple juice and cinnamon, cook out for a minute, then cool to room temperature. When ready to serve, turn out the parfait, top with the reserved apple wedges and the digestive crumbs, then drizzle over the toffee sauce.

1 teaspoon cinnamon
½ teaspoon nutmeg
4 apples
1 sheet puff pastry
2 tablespoons toffee sauce
1 egg, for egg wash
brown sugar
cinnamon
vanilla ice cream
toffee sauce

Steps:

  • Preheat oven to 375°F (190°C ).
  • In a small saucepan, cook the apple, brown sugar, cinnamon, and nutmeg over a medium-low heat until softened.
  • Cut three thin strips on a chilled sheet of puff pastry.
  • Cut two of the strips into four and make a small lattice pattern with them. Repeat to make three more lattices.
  • Cut the tops of the apples and scoop out the insides carefully with a melon baller.
  • Mix some of the toffee sauce in and fill with the toffee apple mixture.
  • Place the lattices on top of each apple and drape the remaining strips around the lattice, cutting off any overhang.
  • Place apples in an ovenproof dish, brush the pastry with egg wash and sprinkle over some more brown sugar and cinnamon.
  • Bake for 20 minutes.
  • Serve with ice cream and more toffee sauce.
  • Enjoy!

450 g demerara sugar
150 ml water
75 g butter
1/4 teaspoon cream of tartar
110 g treacle
110 g golden syrup

Steps:

  • Push a wooden cocktail stick into each apple core, making sure they are secure. Put the sugar and water in a large heavy-based saucepan, with a sugar thermometer attached, and heat gently until dissolved.
  • Add the remaining ingredients and bring to the boil.
  • Boil until the temperature reaches the soft crack stage 143 C (290 F), when a little of the syrup dropped into cold water separates into hard but not brittle threads.
  • Brush down the sides of the pan occasionally with a pastry brush dipped in cold water.
  • Do not stir.
  • Dip the apples into the toffee, twirl around for a few seconds to allow excess toffee to drip off, then leave to cool and set on a buttered baking sheet or waxed paper.
  • Do not keep for more than 1 day.
