CRUNCHY TOFFEE BUCKEYES

Steps:
- Combine the peanut butter, vanilla and salt in a large bowl. Beat with an electric mixer, adding about 1/2 cup confectioners' sugar at a time, until all the sugar is incorporated and the mixture is stiff and dry to the touch. Mix the toffee by hand.
- Roll the mixture into 1-inch balls (about 32) and place on plates. Insert a toothpick into the center of each ball and freeze until firm, 1 hour.
- Once the balls are frozen, put the chopped chocolate in a small, heat-safe bowl. Set the bowl over a saucepan filled with 1/2 inch of barely simmering water (make sure the bottom of the bowl does not touch the water) and heat, stirring, until melted. Remove the balls from the freezer and, one at a time, dip them in the chocolate, leaving a small round of peanut butter still visible. Let the excess chocolate drip off before returning the balls to the plate. Refrigerate until ready to serve. Remove the toothpick before serving.

- Place the oats, chocolate chips, coconut flakes, flaxseed, peanut butter, honey, chia seeds and vanilla in a food processor and pulse until thoroughly combined.
- Scoop the dough with a small ice cream scoop then use your hands to roll the mixture into 1-inch balls. Roll each ball in the sprinkles. Serve or refrigerate in an airtight container.
SALTINE TOFFEE COOKIES
This is an easy to make but wonderfully delicious treat. We pack them in tins and give as gifts during the holidays. Use your favorite nuts to top the cookies.

- Preheat oven to 400 degrees F (205 degrees C).
- Line cookie sheet with saltine crackers in single layer.
- In a saucepan combine the sugar and the butter. Bring to a boil and boil for 3 minutes. Immediately pour over saltines and spread t cover crackers completely.
- Bake at 400 degrees F (205 degrees C) for 5 to 6 minutes. Remove from oven and sprinkle chocolate chips over the top. Let sit for 5 minutes. Spread melted chocolate and top with chopped nuts. Cool completely and break into pieces.

ENGLISH TOFFEE BALLS
I found this recipe in THe Pilsbury Family Christmas Cookbook. This has quickly become a family favorite. It doesn't have eggs in the dough like most cookie recipes, so if you or a loved one likes to eat the dough, it's safe. We always put these on our Christmas cookie baking list. They're easy to make and sinfully delicious.

- Heat oven to 325 degrees.
- In a large bowl, beat powdered sugar, margarine and pudding mix until light and fluffy.
- Lightly spoon flour into measuring cup; level off.
- Add flour, milk, vanilla, and crushed toffee bars, mix well.
- Shape dough into 1-inch balls.
- Place onto ungreased cookie sheets.
- Bake at 325 for 13-18 minutes or until edges are a light golden brown.
- Remove from cookie sheets; cool completely.
- Dip top of each cookie into powdered sugar.
MARSHMALLOW TOFFEE BALLS
Soft marshmallow filling surrounded with a toffee and krispy coating. We like to make these for our Christmas trays. I don't know if you can get MacIntosh toffee in the USA. We find them with the chocolate bars.

- Over low heat, melt the toffee bars, condensed milk and margarine.
- Dip the marshmallows into the toffee mixture.
- Roll in the rice krispies.
- These can be kept covered at room temp for a couple of day, freezes well.

- *"Toffee"/Dulce De Leche can be purchase already prepared - or can be made at home through a process of heating Sweetened Condensed Milk - Recipes/instructions can be found online.
- Crush Digestive Biscuits in a large plastic bag.
- Pour into a large bowl and add Banana and about half the can of Dulce De Leche.
- Use a fork to mash and incorporate the banana and toffee into the biscuit crumbs. Add additional Toffee as needed - just enough to coat all the biscuit crumbs without it becoming too sticky.
- Form the mixture into 1 inch (2 ½ cm) balls and freeze for 15 minutes until firm.
- Microwave chocolate for 60 Seconds - stopping after 30 seconds to check and stir.
- Remove balls from freezer and dip into the melted chocolate.
- Set on wax paper and sprinkle with additional biscuit crumbs (optional).
- Allow chocolate coating to harden (chill in fridge to speed up this process).
- Drizzle with additional toffee just before serving.
