Tofu and Black Bean Tacos image

This simple mixture of tofu, spices, garlic and black beans makes a robust filling for tacos. Pack leftovers to assemble tacos for lunch.

1 (14.0-ounce) package extra-firm tofu, drained
1 1/2 teaspoon chili powder
1/2 teaspoon dried oregano
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1/2 teaspoon fine sea salt
1 tablespoon extra-virgin olive oil
3 cloves garlic, finely chopped
3 green onions, finely chopped
1 (15.0-ounce) can black beans, drained and rinsed
12 corn tortillas, warmed
3 cups shredded green leaf lettuce
2 medium tomatoes, chopped
1 1/2 cup shredded Cheddar or Monterey Jack cheese

Steps:

  • Put tofu, chili powder, oregano, cumin, coriander and salt into a bowl and mash together with a fork. Set aside.
  • Heat oil in a large skillet over medium heat.
  • Add garlic and about two-thirds of the green onions and cook until fragrant, about 2 minutes.
  • Add tofu mixture and cook, stirring occasionally, until most of the moisture has evaporated, 10 to 12 minutes.
  • Add beans and remaining green onions, stir well and cook until beans are heated through, about 2 minutes more.
  • Spoon tofu mixture into tortillas, top with lettuce, tomatoes and cheese and serve.

Tangy black bean and salsa verde tacos take only minutes to make and are flavorful and delicious! Great vegetarian dish! Great by itself, but also wonderful with tomatoes, avocado, cheese, etc. Add any of your favorite taco toppings! Could also be served as a side dish with another meal.

1 tablespoon olive oil
1 small onion, chopped
1 (15 ounce) can black beans, rinsed and drained
1 (7 ounce) can green salsa (salsa verde)
½ teaspoon garlic powder
½ teaspoon chili powder
½ teaspoon ground cumin
6 taco shells
2 ounces shredded Mexican cheese blend
1 tomato, diced
1 avocado, sliced
1 cup shredded lettuce

Steps:

  • Heat olive oil in a saucepan over medium-low heat; cook onion in hot oil until tender, about 5 minutes. Stir black beans, green salsa, garlic powder, chili powder, and cumin with the onion. Reduce heat to low and cook the mixture at a simmer until it thickens, 5 to 10 minutes.
  • Serve with taco shells, Mexican cheese blend, tomato, avocado, and shredded lettuce.

1/2 teaspoon cumin
1/2 teaspoon coriander

Steps:

  • mash tofu with spices with a fork until well combined.
  • heat oil over medium heat with garlic and 2/3 of the onions.
  • add tofu and cook until moisture is gone (10-12 minutes).
  • add beans and the rest of the onions and cook 2 min.

Top with a baking sheet and place something heavy such as several cookbooks on the baking sheet. Let drain 1 hour. Cut tofu into cubes.
  • Combine chili powder, cumin, coriander, oregano, chipotle powder, salt and black pepper in a small bowl. Season tofu cubes with half of the spice combination.
  • Heat half the canola oil in a nonstick skillet over medium-high heat. Add the tofu and sear well on all sides. Transfer to a plate or bowl.
  • Heat remaining oil over medium-high heat. Add the onion, reduce heat to medium and cook 8-10 minutes or until soft.

  • In the bottom of a large mixing bowl, whisk together 1 tablespoon olive oil, soy sauce, chili powder, chipotle chili powder, cumin, garlic powder, and onion powder. Crumble the tofu into small pieces in the bowl. With a fork, stir to combine. The tofu should be in small bits. Toss until the tofu is evenly coated with the spices. I find it fastest and easiest to use my hands.
  • Heat the remaining 1 tablespoon olive oil in a large, ovenproof skillet over medium high. Add the tofu crumbles. Cook, stirring occasionally, until the tofu is dry and the moisture has cooked off, about 6 minutes. Add the black beans, salsa, and nutritional yeast. Cook until warmed through and the salsa liquid has cooked off, about 1 to 2 minutes more.
  • Spread the tofu mixture into an even layer. Place under the broiler and cook until darkened on top, about 4 minutes. Remove from the oven, stir to expose new parts of the tofu to the top, then spread back into a single layer. Return to the oven and broil 4 additional minutes. Remove from the oven and repeat the stirring and broiling once more (3 times total). Pile the filling inside warm tortillas and top with all of your favorite fixings.
