APPLE SPICE CAKE
Very moist spicy sweet cake with chunks of tender apples and raisins.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Butter a 10 inch tube pan. Cover raisins with warm water, let soak for 10 minutes and then drain. Whisk together flour, spices, and salt. Set aside.
- Cream together butter or margarine and sugar. Mix in eggs and vanilla. Stir together soda and 1 tablespoon warm water, and mix into the sugar mixture. Stir in flour mixture, apples, and strained raisins until well blended. Pour batter into prepared pan.
- Bake for approximately 1 hour, or until a tester comes out clean. Cool in pan. Once cool, shake pan to loosen cake. Turn onto plate, and dust with confectioners' sugar.

- Preheat oven at 350 degrees F (180 degrees C). Grease and flour three 8x4 inch loaf pans.
- In a large bowl, stir together cake mix, instant pudding mix, nutmeg, and cinnamon. Add the applesauce, oil, eggs and water. Blend for 3 to 4 minutes using an electric mixer. Divide the batter evenly between the prepared pans.
- Bake for 50 to 55 minutes in the preheated oven, or until a toothpick inserted in the center comes out clean.

Steps:
- Peel apples and dice.
- In a pan, saute apples in butter until golden. Add Calvados and flambe.
- In a bowl, rapidly whisk egg yolks, sugar, oil and cream. When blended well, about five minutes, add yeast and flour slowly and continue to whisk until they are well mixed.
- In a separate bowl, beat egg whites until they peak.
- Add apples and egg whites to the first bowl. Fold gently.
- Preheat oven to 390 degrees. Butter a cake mold and pour in batter. Bake for one hour.

Steps:
- Put beaten eggs in a 1 cup measuring cup and fill with water.
- In a roomy bowl, combinee flour and salt. Cut in shortening.
- Add the egg yolk/water mix and stir until incorporated. Set aside.
- In a seperate bowl, combine sugar, cinnamon, and nutmeg. Set aside.
- Preheat oven to 450 degrees.
- Divide the dough in half.
- Roll half out to fit a 16 1/2 by 12 1/2 cookie sheet.
- Sprinkle with half of the vanilla wafer crumbs.
- Spread half of the appple slices on top of the crumbs.
- Sprinkle the rest of the vanilla wafer crumbs on top of the first layer of apple slices.
- Top with the rest of the apple slices.
- Sprinkle cinnamon/sugar/nutmeg on top of second layer of apple slices.
- Roll out second half of dough large enough to cover bottom layer of dough and apple filling.
- Lightly moisten perimeter of bottom layer of dough and water.
- Place second layer of dough on top of bottom layer of dough and apples.
- Seal the two layers of dough and crimp.
- Make a few small slits in the top crust to le t steam escape.
- Bake at 450 for 20 minutes. The apples will be slightly firm.
- Combine the powdered sugar and water to make a glaze. Pour the glaze over the cake while the cake is still warm, but NOT hot.

- Preheat oven to 350 Fahrenheit.
- Sift together the flour and baking soda and set aside.
- In a bowl, combine the egg, oil, sugar, cinnamon, salt, and vanilla. Beat with an electric mixer until smooth. Add tofu and mic until just blended. Fold in flour mixture and toss gently. Add walnuts, apple, and raisins.
- Pour cake mixture into a 9-inch cake pan and bake for 30 minutes, until a toothpick inserted in the center comes out clean. Cool completely on a rack, then turn onto a plate.
- Serve the cake warm or at room temperature.
