We made this for a dinner we were having, our guests were vegetarian, they loved it. So now we don't buy ketchup anymore. Other guests who have had this recipe didn't know it had tofu in it..oops.

4 ounces soft silken tofu
2 cups tomato sauce
1 tablespoon finely chopped yellow onion
1 teaspoon extra virgin olive oil
1 teaspoon honey
1 teaspoon lemon juice

Steps:

  • Place all ingredients in a blender or food processor.
  • Process on medium speed until creamy.

I didn't have much in the fridge for dinner one night, aside from tofu, ketchup and curry powder, and so I decided to put it all together. It ended up tasting great, and my daughter loves it!

1/4 cup ketchup
1 tablespoon unsalted butter, melted
1 tablespoon maple syrup
1/2 teaspoon curry powder
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1 block extra-firm tofu, well-drained and cut into 1-inch cubes
Kosher salt and freshly ground black pepper
Serving suggestions: cooked brown rice, steamed broccoli and cubed mango

Steps:

  • Preheat the oven to 425 degrees F and line a baking sheet with parchment paper.
  • In a large bowl, mix together the ketchup, butter, maple syrup, curry powder, garlic powder and onion powder. Add the tofu and gently toss to combine, taking care not to break up the pieces, and season with salt and pepper.
  • Arrange the tofu on the prepared baking sheet. Bake until the tofu is nicely browned and crispy and the sauce has caramelized, about 30 minutes. Serve over brown rice with steamed broccoli and fresh cubed mango.

  • Pat dry the cubed tofu using kitchen paper. You may also want to gently press them down to squeeze more water out. Pan fry the tofu in a skillet over medium high heat until all sides are golden brown. (It will take 2-3 mins on each side.) Remove the tofu from the skillet and set it aside.
  • Pour in the spicy ketchup sauce in the skillet and stir it over medium low heat for about 5 to 10 seconds. Return the tofu to the skillet. Gently coat with the sauce. Sprinkle with sesame seeds and green onions.
