COPYCAT MARY MAC'S TOMATO PIE



Copycat Mary Mac's Tomato Pie image

Mary Mac's added this dish to their menu in 2009 and since then it's in their top five side dishes ordered and their most requested recipe. It's a great side dish for all of your holiday dinners coming up. It's comfort food and a favorite of mine now!

Number Of Ingredients 9

2 Tbsp olive oil
1 medium sweeet onion, THINLY sliced
salt and pepper
1/2 box Ritz Crackers (2.5 sleeves)
2 - 14.5 oz cans diced fire-roasted tomatoes, undrained
1 cup mayonnaise
1 cup grated cheddar cheese
1/2 cup grated Parmesan cheese
1 Tbsp basil

Steps:

  • Preheat oven to 350 - spray a 1.5-2 qt casserole dish (8×8 square or 5×7 rectangle) with non-stick spray
  • Heat olive oil in a large skillet over medium heat
  • Add onions and cook, stirring occasionally until softened and carmelized, about 4-5 minutes.
  • Add salt and pepper and remove from heat.
  • Crush 1 sleeve of Ritz crackers in the bottom of the casserole dish (I prefer to crush by hand - I like the varied sizes of the pieces vs. pulverizing them with a food processor)
  • Pour 1 can of tomatoes (undrained) over the crackers
  • Spread 1/2 of the sautéed onions over the tomatoes
  • Repeat the tomato/onion layers
  • Crust 1 sleeve of Ritz crackers on top of the tomato/onion layer
  • In a bowl, mix together mayo, cheddar, Parmesan and basil
  • Spread this mixture on top of the cracker crumbs. You have to put it on in spoonfuls and then spread lightly with a knife otherwise it just sticks to your cracker crumbs. I laid the mayo mixture on a spot and then lightly spread it and repeated until I covered the crackers.
  • Crush 1/2 sleeve of Ritz over top of the mayo mixture
  • Bake for 30 minutes
  • Serve

2 tablespoons olive oil
2 medium sweet onions (thinly sliced)
salt and freshly ground black pepper
1 box of Ritz crackers
2 28 ounce cans diced tomatoes (undrained)
2 cups mayonnaise
1 1/2 cups grated extra sharp Cheddar cheese
1 cup grated Parmesan cheese
3 tablespoons chopped fresh basil
Butter for greasing

Steps:

  • Preheat the oven to 350˚F. Grease a 13 by 9-inch baking dish with olive oil or butter. Heat the 2 tablespoons olive oil in a large skillet over medium heat; add the onions and cook, stirring occasionally, until soft and translucent, 4 to 5 minutes. Add the salt and pepper to taste, remove from the heat, and set aside. Crush 2 sleeves of Ritz crackers by hand or in a food processor. Reserve 1/2 cup of the cracker crumbs for the topping. Place half of the remaining cracker crumbs in the bottom of the baking dish and pour 1 can of the diced tomatoes, with juice, over the cracker crumbs. Layer half of the the sautéed onions on top of the tomatoes, and repeat the layering process using the rest of the tomatoes and onions. Sprinkle the remaining half of the cracker crumbs over the tomato mixture. In a bowl, combine the mayonnaise, Cheddar cheese, Parmesan cheese, and basil. Spread the mixture over the layers and sprinkle the reserved 1/2 cup cracker crumbs on top. Bake for 30 to 40 minutes, until the top is golden brown.

The recipe was not in their cookbook and I asked to have the cook come to my table. She wrote the recipe in the book for me. Needless to say she did not give me all the details. 2 Tbsp olive oil
2 sweet onions, sliced paper thin
salt and pepper
3 1/2 c ritz cracker crumbs
2 can(s) (28 oz) each diced tomatoes, undrained
2 1/2 c mayonnaise
1 1/2 c grated extra sharp cheese
1 1/2 c shaved parmesan cheese
2 Tbsp basil, dried

Steps:

  • 1. Preheat oven to 375F.
  • 2. Grease a 9 x 13 inch baking dish with olive oil or butter.
  • 3. Heat 2 tablespoons olive oil in a large skillet over medium heat and add onions. Cook stirring occasionally until soft and translucent, 4 to 5 minutes.
  • 4. Add salt and freshly ground pepper to taste.
  • 5. Remove from heat and set aside.
  • 6. Crush Ritz crackers in the sleeve or in a food processor. Reserve 1/2 cup crumbs for the topping.
  • 7. Place half of the remaining crumbs in the bottom of the baking dish.
  • 8. Pour 1 can diced tomatoes with juice over the Ritz cracker crumbs.
  • 9. Layer half of the sauteed onions on top of the tomatoes.
  • 10. Add remaining tomatoes and onions.
  • 11. Sprinkle remainging half of the cracker crumbs over the tomato-onion mixture.
  • 12. In a bowl combine the mayonnaise, cheddar cheese, parmesan cheese and basil.
  • 13. Spread the mayonnaise mixture over the top and sprinkle on the reserved 1/2 cup cracker crumbs.
  • 14. Bake for about 50 minutes or until mixture begins to brown and is slightly bubbling around the edge.
