Torta di Mele (Italian Apple Cake) image

This Italian apple cake recipe is from my mom and reminds me of my childhood. It tastes delicious, and I bake it for my family now.

2 tablespoons unseasoned bread crumbs, or as needed
½ cup unsalted butter, melted
½ cup white sugar
1 vanilla bean, split and scraped
2 eggs
1 ⅛ cups all-purpose flour
1 teaspoon baking powder
1 pinch salt
1 tablespoon milk, or as needed
2 pounds Granny Smith apples, peeled, cored and sliced thin
¼ cup unsalted butter, cubed
¼ cup white sugar

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease a pie plate and dust with bread crumbs
  • Combine melted butter, 1/2 cup sugar, and vanilla bean seeds in a bowl. Add eggs and stir to combine. Mix flour, baking powder, and salt in a bowl and add to butter mixture. Add milk if batter is too thick
  • Pour batter into the prepared pie plate. Distribute apple slices in a thick layer on top of the batter. Dot with cubed butter and sprinkle with 1/4 cup sugar.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 30 to 45 minutes. Cool on a wire rack for 5 minutes. Run a table knife around the edges to loosen. Invert carefully onto a serving plate or cooling rack. Let cool completely.

Torta di Mele, aka classic Italian apple cake, is a dessert all Italian nonnas make! It's soft and fluffy, and easy to make with just 8 ingredients!

3 large free-range eggs
140 g sugar (or fine demerara sugar)
120 ml lightly-flavoured extra-virgin olive oil
1 teaspoon vanilla extract ((or half vanilla pod, scraped))
200 g sifted all-purpose flour
1 tablespoon baking powder ((15 gr))
1/8 teaspoon sea salt
600 g Honeycrisp apples, peeled and cored ((about 3 medium apples))
1 tablespoon fresh lemon zest
1 tbsp confectioner sugar

Steps:

  • Preheat oven to 180C/360F and adjust a baking rack onto the middle shelf. Grease and dust with flour (or line with parchment paper) a 9-inch cake pan and set it aside.
  • In a large bowl, place the eggs and the sugar. Beat the mixture with an electric whisker until light and pale, then gently whisk in the olive oil, followed by the vanilla, and mix until all the ingredients are combined.
  • Slowly incorporate the flour into the batter, mixing until just combined. Sprinkle the baking powder and a pinch on salt over the batter and mix until just combined (do not overmix).
  • Fold into the batter 1-1/2 apples cut into tiny chunks, and lemon zest, and mix until just combined.
  • Pour the apple cake batter into the prepared baking pan. Top the batter with the remaining 1-1/2 apples cut into thin slices, and bake in the oven for approximately 30-40 minutes. To check if the cake is ready, insert a toothpick in the middle, if it comes out clean, the cake is ready.
  • Remove from the oven, allow to cool and gently remove the apple cake from the pan.
  • Dust the cake all over with confectioner sugar and serve at room temperature.

Unsalted butter (for buttering the baking pan)
6 small Granny Smith apples (peeled and sliced)
1/3 cup granulated sugar
1/2 teaspoon ground cinnamon
1 1/2 sticks ((12 tablespoons) unsalted butter, at room temperature)
1 cup granulated sugar
4 large eggs, (at room temperature)
2 cups all-purpose flour
1 cup almond flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon kosher salt
1 1/2 cups full-fat Greek yogurt
3 tablespoons powdered sugar

Steps:

  • Preheat the oven to 350 degrees F. Butter a 9-by-13-inch glass baking pan.
  • Mix together the apples, granulated sugar and cinnamon in a medium bowl. Set aside.
  • For the cake, combine the butter and granulated sugar in a large bowl. Using a hand-held mixer, beat on medium high until light and fluffy, about 3 minutes. Beat in the eggs one at a time until fully combined, then add the all-purpose flour, almond flour, baking powder, baking soda, cinnamon, salt and yogurt. Beat on low speed until a few streaks remain, then fold together with a rubber spatula until fully combined. (Do not overmix.)
  • Sprinkle the bottom of the pan with half of the apple mixture. Spread the batter over the top of the apples. Top the batter with the remaining apples, making decorative rows across the cake. Bake, rotating the pan halfway through, until a toothpick inserted in the middle of the cake comes out clean, about 1 hour. Allow the cake to cool slightly before dusting with powdered sugar and serving.

1 1/4 cups flour
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/4 cup sugar
1 teaspoon baking powder
2 teaspoons grated lemons
4 ounces butter
1 egg yolk
2 tablespoons cream
2 green apples, peeled,cored and cut into quarters and cut thinly
2 eggs
1/2 cup sugar
2 tablespoons flour
2 teaspoons grated fresh lemon rind
1/2 cup cream
8 ounces cream cheese
1 tablespoon mixed peel
1/4 cup raisins
1/4 teaspoon salt
1 package cream, extra
1 teaspoon cinnamon

Steps:

  • Sift together the dry pastry ingredients mix well.
  • Cut in the butter until mealy (use pastry cutter or two knives).
  • Beat the egg yolk and cream add to the flour mixture, mix well and form a round ball.
  • Roll out to about 11x7" rectangle.
  • line a pyrex dish with the pastry, bringing the edges up the sides, trim.

  • Arrange apples, overlapping on the cake base.
  • Beat the eggs and sugar until thick.
  • Gradually add the 2 tbsp flour, lemon rind, cream softened cream cheese, raisins, salt and peelBake in moderate oven (350F) 1 to 1 1/4 hours.
  • Serve room temp with cream (not whipped or serve warm with stiff whipped cream or serve without cream).
  • Sprinkle cinnamon on top.
