1 teaspoon olive oil
1/4 teaspoon salt
1/4 teaspoon white pepper
1/8 teaspoon garlic powder
Dash ground nutmeg
1/4 pound bulk Italian sausage
1/2 cup chopped onion
1/4 cup chopped green pepper
1/4 cup chopped fresh mushrooms
2 tablespoons all-purpose flour
1-1/4 cups milk
1-1/4 cups grated Parmesan cheese
1/8 teaspoon Worcestershire sauce

Steps:

  • In a large saucepan, bring 2 qts. water to a boil. Add the tortellini, oil, salt, pepper, garlic powder and nutmeg. Cook according to package directions until pasta is tender., Meanwhile, in a large skillet, cook the sausage, onion, green pepper and mushrooms over medium heat until meat is no longer pink; drain. , Stir in flour until blended. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. , Drain tortellini; add to the sausage mixture. Stir in Parmesan cheese and Worcestershire sauce.

4 tablespoons (1/2 stick) unsalted butter
2 pinches freshly grated nutmeg
1 1/2 cups grated Parmesan
Kosher salt
18 ounces frozen cheese tortellini
2 boneless, skinless chicken breasts, cut into 1-inch pieces (about 1 1/4 pounds)
1/4 cup chopped fresh flat-leaf parsley

Steps:

  • Preheat the oven to 425 degrees F.
  • Heat the heavy cream, butter, nutmeg, 1 cup of the Parmesan and 1 teaspoon salt in a large ovenproof skillet over medium-high heat, whisking occasionally, until the cheese and butter are melted, 3 to 4 minutes. Add the tortellini and simmer until cooked through, 4 to 5 minutes. Add the chicken and sprinkle with the remaining 1/2 cup Parmesan.
  • Bake until the chicken is just cooked through, the sauce has thickened and the top starts to turn golden brown, 10 to 12 minutes. Let stand for 10 minutes before serving. Sprinkle with the parsley.

1 (8 ounce) package baby portobello mushrooms, sliced
1 cup dry white wine (such as Pinot Grigio), divided
3 cloves garlic, minced, divided
10 ounces mild Italian sausage, casings removed
1 (16 ounce) package three-cheese tortellini
14 ½ ounces Alfredo basil sauce
1 (5 ounce) package baby spinach leaves

Steps:

  • Heat butter in a large, deep skillet over medium heat. Cook and stir mushrooms, 1/2 cup white wine, and 1 clove minced garlic until liquid has reduced and mushrooms have softened, about 5 minutes. Remove from heat and place in a bowl.
  • Heat the same skillet over medium-high heat. Cook and stir Italian sausage in the hot skillet until browned and crumbly, 5 to 7 minutes, dividing it into bite-sized portions while stirring. Remove excess grease by placing paper towels onto a plate and dumping browned sausage onto it to drain. Return sausage to the skillet.

A wonderful combination of rich alfredo sauce and three cheese tortellini -with veggies and Italian sausage to make matters worse (or better!). This is not for the faint of heart for calories, but that's why they invented the "just a garden salad for me" lunch! :) This recipe looks fancy enough for company but uses pre-made sauces and pasta for convenience. I have used Buitoni refrigerated pasta and sauce as well as those listed in the recipe. Using homemade versions could only make it tastier!

4 ounces portabella mushrooms, sliced

Steps:

  • Prepare tortellini according to package directions. Drain and hold warm.
  • In a large nonstick skillet, break up Italian sausage and cook on medium heat for 5 minutes.
  • Add garlic, mushrooms, onions and peppers. Continue to cook, stirring occasionally until sausage is no longer pink.
  • Add alfredo sauce and pepper. Reduce heat to low. Simmer until flavors are well blended, or until you can't wait any longer. (try to hold out at least 10 minutes).
  • Add drained pasta to skillet and stir well to combine. Serve immediately with freshly grated parmesan cheese.

1 teaspoon olive oil
1/4 teaspoon salt

1 small yellow squash, cut into 1-inch pieces
2 (14.5 ounce) cans Italian-style diced tomatoes
1 (8 ounce) package Neufchatel cheese
2 tablespoons Italian seasoning

1 ½ cups prepared marinara sauce
½ cup shredded Parmesan cheese

Steps:
