French Toast Muffins Recipe image

Looking for an easy breakfast recipe? Try this fun twist on french toast - French toast muffins! This french toast muffins recipe gives you all the flavors with out all the work.

Number Of Ingredients 6

1/2 loaf bread
4 eggs
1 1/2 cups milk
4 tbsp sugar ((divided in half))
1 tsp vanilla extract
1 tsp ground cinnamon

Steps:

  • Chop up the bread into bit size pieces. Set aside.
  • Spray 12 muffins tins with non stick spray.
  • In a large bow mix together half the sugar, milk, eggs, and extract.
  • Mix in the bread in the bowl. Use your hands and get dirty.
  • In a separate bowl add 2 tablespoons sugar and 1 teaspoon cinnamon. Mix well.
  • Spoon half of the wet bread into the 12 muffin cups
  • Top with 1/2 teaspoon cinnamon sugar mixture.
  • Spoon remaining wet bread into the 12 muffin cups and top with 1/2 teaspoon cinnamon sugar mixture.
  • Bake in a preheated oven at 350 degrees for about 15 - 20 minutes or until golden brown.
  • Serve with syrup, butter, powdered sugar, or any other of your favorite toppings.

These muffins are delicious! The cinnamon sugar topping flavors them perfectly. This is my 10 year old brother's favorite recipe (he even makes them on his own from time to time).

1 ½ cups all-purpose flour
½ cup white sugar
1 ½ teaspoons baking powder
¼ teaspoon ground nutmeg
⅛ teaspoon salt
1 egg, lightly beaten
½ cup milk
⅓ cup butter, melted
¼ cup white sugar
½ teaspoon ground cinnamon
⅓ cup butter, melted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease muffin cups or line with paper muffin liners.
  • In a medium mixing bowl, stir together flour, 1/2 cup sugar, baking powder, nutmeg and salt. Make a well in the center of the mixture. Stir together egg, milk and 1/3 cup melted butter. Add egg mixture to flour mixture; stir until just moistened (batter may be lumpy). Spoon batter into prepared muffin cups.
  • Bake in preheated oven for 20 to 25 minutes. Meanwhile, combine 1/4 cup sugar, cinnamon When muffins are finished baking, dip tops of muffins in the melted butter, and then in the cinnamon sugar mixture. Serve warm.

1/4 cup sugar
2 teaspoons baking powder
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
1/2 cup milk
1 egg
1/3 cup melted butter
1 teaspoon cinnamon
1/2 cup sugar
1/2 teaspoon vanilla
1/3 cup melted butter

Steps:

  • Muffins: Combine all muffin ingredients.
  • Mix thoroughly.
  • Fill lining 1/2 full.
  • Bake at 400°F for 20 minutes.
  • Topping: Combine cinnamon and topping sugar in one bowl.
  • Combine vanilla and topping butter in another bowl.
  • Remove muffins from pan.
  • Dip in butter and vanilla combination, then roll in sugar and cinnamon.

2 eggs (or 1 egg plus 2 egg whites)
1 cup milk
2 tablespoons sugar
1/4 teaspoon cinnamon
4 English muffins
butter (or nonstick cooking spray)
warm pure maple syrup

Steps:

  • Whisk eggs in small bowl until frothy. Add milk, sugar and cinnamon. Whisk well. Transfer to shallow dish. (Can be made ahead and refrigerated, covered airtight, for as long as 3 days.).
  • To cook, open English muffins; place in milk mixture, cut-side down, for about 4 minutes. Turn and soak 1 minute more.
  • Heat greased nonstick skillet over medium heat. When hot, cook muffins, cut-side down, until browned, about 3 minutes. Turn, brown other side, about 3 minutes more.
  • Can be kept warm in 200 degree oven while cooking remaining muffins. Serve hot with warm maple syrup passed separately.

1 pkg. (3.4 oz.) JELL-O Vanilla Flavor Instant Pudding
2 tsp. baking powder
1/4 tsp. salt
1-1/4 tsp. ground cinnamon, divided
2 eggs, divided
1-1/4 cups milk, divided
3/4 cup plus 2 Tbsp. packed brown sugar, divided
3 slices white bread, cut into 1/2-inch cubes
1/2 cup butter or margarine, melted
2 Tbsp. maple-flavored or pancake syrup

Steps:

  • Heat oven to 350ºF.
  • Combine flour, dry pudding mix, baking powder, salt and 1 tsp. cinnamon in large bowl.
  • Beat 1 egg, 1/4 cup milk, 2 Tbsp. sugar and remaining cinnamon in medium bowl with whisk until blended. Add bread; stir until evenly moistened.
  • Whisk remaining egg in separate medium bowl. Add butter, remaining milk and sugar; mix well. Add to dry ingredients; stir just until moistened. (Batter will be lumpy.)
  • Spoon batter into 12 muffin pan cups sprayed with cooking spray. Top with bread mixture; press lightly into batter with back of spoon.
  • Bake 28 min. or until toothpick inserted in centers comes out clean. Brush with syrup. Cool in pan 5 min. Remove to wire rack; cool slightly.

  • Grease a 12 cup muffin tin. Add about 1 cup of bread cubes to each muffin cup. Carefully pour egg and milk mixture evenly over each muffin tin. You may need to press down on the bread cubes after you pour a little mixture and then pour more. Pour slowly or you will have a mess. Or you can combine everything in a large bowl and then fill the muffin cups. Cover the muffins with plastic wrap and refrigerate for 2 hours or up to overnight.
  • When ready to bake, preheat the oven to 350 degrees F. To make the cinnamon streusel, in a small bowl, combine butter, brown sugar, flour, cinnamon, and salt. Mix together with your hands, until you have a crumbly mixture. Remove the muffins from the refrigerator and sprinkle the muffins evenly with the streusel topping.
  • Bake for 25 minutes or until tops are golden brown. Let muffins cool for 5 minutes. Remove from pan and serve with butter and maple syrup, if desired.
