Let's go Italian! This soup is Yummy. Clipped out of a magazine and been making it ever since. I also serve it with grated parmesan, just 'cause we like it that way.

1 head escarole (about 1 1/4 lbs.)
4 medium plum tomatoes
4 medium carrots
1 large onion
2 tablespoons olive oil or 2 tablespoons salad oil
2 (14 1/2 ounce) cans chicken broth
2 teaspoons instant beef bouillon
1/4 teaspoon ground black pepper
1 (9 ounce) package small tortellini

Steps:

  • About 50 minutes before serving: Cut escarole into 2" pieces, discarding any tough ribs.
  • Peel, seed, and dice tomatoes.
  • Thinly slice carrots, chop onions.
  • In 5 quart dutch oven over medium high heat, in hot oil, cook carrots and onion until they begin to soften, about 5 minutes.
  • Add escarole and tomatoes and cook, stirring until vegetables are tender.
  • Stir in chicken broth, beef-flavor bouillon, pepper and 5 cups water; over high heat, heat to boiling.
  • Add tortellini and cook 5 minutes longer or until tortellini are tender.
  • **NOTE: I also added 2 Tbsp soy sauce which helped to enhance the flavor of the broth.

3 cans (14.5 ounces each) reduced-sodium chicken stock
1 bay leaf
1 small head escarole, cleaned, trimmed and cut into 1 1/2 inch pieces
1 pound cheese tortellini
Coarse salt and freshly ground pepper

Steps:

  • In a large stockpot, combine chicken stock, 2 cups water and bay leaf. Bring to a boil. Add escarole, and cook, stirring constantly, until wilted, about 15 seconds.
  • Add tortellini, and cook until they float to the top, 4 to 5 minutes. Discard bay leaf, and season soup with salt and pepper. Serve immediately.

2 tablespoons olive oil
1 medium onion, chopped
1 teaspoon minced garlic
4 carrots, peeled and sliced into 1/4-inch coins
8 cups chicken stock
1 cup frozen green peas
One 12-ounce container tricolor cheese tortellini
2 ears corn, kernels removed
2 cups fresh baby spinach, torn into smaller pieces
Grated Parmesan cheese, for garnish

Steps:

  • In a large stockpot over medium heat, heat the oil until it shimmers, about 2 minutes, then add the onion, garlic, and carrots, and saute for 5 minutes or until the vegetables are slightly soft. Pour in the chicken stock, increase the heat to high, and bring to a boil. Add the peas, tortellini, and corn and cook for 12 minutes, or according to the package directions for the tortellini.
  • Remove the stockpot from the heat and add the spinach, stirring until it wilts. To serve, spoon the soup into bowls and top with grated Parmesan cheese.

1 large egg, lightly beaten

2 carrots, diced
2 stalks celery, diced
1 quart low-sodium chicken broth
1 9-ounce package refrigerated cheese tortellini
4 cups loosely packed baby spinach (about 3 ounces)

Steps:

  • Combine the beef, parmesan, 2 tablespoons parsley, the egg, garlic, 1/2 teaspoon salt, and pepper to taste in a medium bowl; mix with your hands until just combined. Form into 1-inch meatballs; set aside.
  • Heat the olive oil in a pot or Dutch oven over medium-high heat. Add the meatballs and cook, turning, until golden, 3 to 4 minutes; remove to a plate. Add the carrots and celery to the pot; cook, stirring, until just softened, about 5 minutes. Add the broth and 3 cups water; bring to a boil. Return the meatballs to the pot along with the remaining 2 tablespoons parsley and 1/2 teaspoon salt. Simmer until the meatballs are just cooked through, about 2 minutes.

3/4 pound Italian turkey sausage links, casings removed
1 medium onion, chopped
6 garlic cloves, minced
2 cans (14-1/2 ounces each) reduced-sodium chicken broth
1-3/4 cups water
1 can (14-1/2 ounces) diced tomatoes, undrained
1 package (9 ounces) refrigerated cheese tortellini
1 package (6 ounces) fresh baby spinach, coarsely chopped
2-1/4 teaspoons minced fresh basil or 3/4 teaspoon dried basil
1/4 teaspoon pepper
Dash crushed red pepper flakes
Shredded Parmesan cheese, optional

Steps:

  • Crumble sausage into a Dutch oven; add onion. Cook and stir over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Stir in the broth, water and tomatoes. Bring to a boil., Add tortellini; return to a boil. Cook for 5-8 minutes or until almost tender, stirring occasionally. Reduce heat; add the spinach, basil, pepper and pepper flakes. Cook 2-3 minutes longer or until spinach is wilted and tortellini are tender. Serve with cheese if desired.Freeze option: Place individual portions of cooled soup in freezer containers and freeze. 1 egg white
1 garlic clove, minced
2 tablespoons parsley, chopped
1 tablespoon parmesan cheese, grated

4 1/2 cups chicken broth
1/2 cup orzo pasta
4 cups escarole, shredded
2 tablespoons lemon juice

Steps:

  • In a medium bowl, combine ground turkey, egg white, garlic, parsley, Parmesan cheese, salt and pepper.
  • Mix lightly to blend. Shape into 16 meatballs.
  • In a large soup pot, bring chicken broth to a boil. Add meatballs and orzo, reduce heat to medium-low, cover and simmer 15 minutes or until meatballs are cooked through.
  • Add escarole and lemon juice. Cover and simmer 5 minutes, or until escarole is tender.
  • Serve sprinkled with more Parmesan cheese.

1 tablespoon olive oil
2 tablespoons unsalted butter
1 small yellow onion, diced
4 cloves garlic, minced
¼ teaspoon red pepper flakes
½ teaspoon kosher salt
¼ teaspoon freshly ground black pepper
½ cup dry white wine
4 cups vegetable broth
1 can crushed tomato
1 McCormick® dried bay leaf
1 package cheese tortellini
1 container baby spinach
¼ cup heavy cream
½ cup freshly grated parmesan cheese, for garnish
¼ cup fresh basil leaves, for garnish

Steps:

  • Melt the olive oil and butter together in a Dutch oven over medium heat. Add the onion, garlic, red pepper flakes, salt, and pepper. Cook, stirring occasionally, until the onions are translucent and the garlic is fragrant, about 5 minutes.
  • Add the white wine and cook for another 2 minutes, scraping up any browned bits from the bottom of the pot with a wooden spoon, until the wine is reduced by at least half.
  • Add the vegetable broth, crushed tomatoes, and bay leaf. Bring to a boil, then reduce the heat to low and simmer for 10 minutes.
  • Add the tortellini and spinach and simmer for another 5-6 minutes, until the tortellini are cooked through and the spinach has wilted.
  • Remove the bay leaf, then stir in the heavy cream.
  • Ladle the soup into bowls and garnish with the Parmesan cheese and basil.
