TACO SEASONING MIX:
1 pound ground beef
1/4 cup onion, chopped
1 bag Tostitos Scoops
TOPPINGS:
Cheddar cheese, shredded
Lettuce, shredded
Salsa
Sour Cream

Steps:

Brown ground beef in large skillet; drain Fry onions in a bit of butter on low heat (at same time as beef but in small pan) Stir 1 cup of water and seasoning mix in with beef. Simmer for 7 to 8 minutes or until almost all liquid is absorbed, stirring often. Stir in onions after about 5 minutes. Place Tostitos Scoops on a baking sheet covered with foil. Spoon some beef mixture into each Scoop Top each with some cheese. Broil until cheese is melted. Serve with all the toppings as a self serve and enjoy!

Ingredients

3/4 pound ground beef
1 medium onion, finely chopped
1 medium sweet red pepper, finely chopped
1 envelope taco seasoning
1 can (14-1/2 ounces) diced tomatoes and green chilies, undrained
1 can (4 ounces) chopped green chiles
8 ounces pepper jack cheese, cubed
4 ounces process cheese (Velveeta), cubed
4 ounces cream cheese, softened, cubed
1 package (12 ounces) tortilla chip scoops
2 cups shredded Mexican cheese blend
Sour cream and pickled jalapeno slices

Steps:

In a large skillet, cook the beef, onion and red pepper over medium heat until meat is no longer pink; drain. Stir in the taco seasoning, diced tomatoes and chopped green chilies. Cook and stir until thickened, 5-7 minutes., Reduce heat to low. Stir in the pepper jack, process cheese and cream cheese until melted., Place 4 dozen scoops on an ungreased baking sheet. Add a rounded teaspoon of beef mixture to each. Sprinkle with Mexican cheese blend., Bake at 375° until heated through, about 5 minutes. Garnish each with sour cream and a jalapeno pepper slice. Repeat with remaining tortilla chip scoops.

1 (14 ounce) package tostitos scoops chips
1 lb sausage, browned and crumbled (Jimmy Dean is a good brand)
1 1/2 cups grated sharp cheddar cheese
1 1/2 cups shredded monterey jack cheese
1 cup prepared hidden valley ranch dressing
1 (2 1/4 ounce) can sliced black olives
1/2 finely diced red bell pepper
1 finely diced jalapeno pepper

Steps:

Heat oven to 350*.
Combine all ingredients (except chips) in a mixing bowl.
Fill Tostitos Scoops with filling and place on a cookie sheet. They may be placed closely together.
Bake for 6-7 minutes, till cheese melts. Good appetizer for football games in the fall.

11 ounces tostito scoops tortilla chips
1 lb chicken
1 cup water
1 1/2 ounces taco seasoning
1 tablespoon minced onion
ranch dressing
shredded Mexican blend cheese
1/2 diced red pepper (optional)

Steps:

cut up chicken and cook till done. add taco seasoning, minced onion and water. simmer 5-10 minutes. cool and shred up.
Place teaspoonful and fill each scoop with chicken, dollop a 1/4 teaspoons or so ranch (or can sub. sour cream.) dressing on each. sprinkle shredded cheese on next and red peppers if desired. bake to melt cheese at 350 degrees about 10 minutes.
You can use your imagination and use ground beef instead or maybe even try your favorite dip, chili or refried beans and salsa in the scoops! Enjoy.
