MOM'S HEARTY SPAGHETTI



Mom's Hearty Spaghetti image

Flavored with Italian sausage and dotted with tender meatballs, the savory from-scratch sauce made this dish one of my mom's most-requested. We five kids were always thrilled to hear it was on the menu. -Grace Yaskovic, Branchville, New Jersey

1 egg
1/4 cup milk
1 cup soft bread crumbs
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon minced fresh parsley
1 pound ground beef
SAUCE:
1 pound Italian sausage links, cut into 2-inch pieces
1 large onion, chopped
1 medium green pepper, chopped
2 cans (28 ounces each) diced tomatoes, drained
2 cans (8 ounces each) tomato sauce
1 can (14-1/2 ounces) beef broth
1 can (6 ounces) tomato paste
2 garlic cloves, minced
2 teaspoons each dried basil, oregano and parsley flakes
2 teaspoons sugar
Salt and pepper to taste
Hot cooked spaghetti
Grated Parmesan cheese

Steps:

  • In a bowl, combine the first six ingredients. add beef and mix well. Shape into eight meatballs. Brown in a Dutch oven over medium heat; drain and set meatballs aside. , In the same pan, cook sausage, onion and green pepper until vegetables are tender; drain. Add the tomatoes, tomato sauce, broth, tomato paste, garlic and seasonings. Add meatballs; stir gently. Bring to a boil. Reduce heat; cover and simmer for 2-3 hours. Serve over spaghetti; sprinkle with Parmesan cheese.

5 pounds ground beef
5 medium onions, chopped
1 bunch celery, chopped
8 cans (14-1/2 ounces each) diced tomatoes, drained
2 cans (6 ounces each) tomato paste
1 cup Worcestershire sauce
1/2 cup sugar
4 tablespoons salt
4 pounds uncooked spaghetti

Steps:

  • In two large Dutch ovens or soup kettles, cook the beef, onions and celery over medium heat until meat is no longer pink; drain. Stir in the tomatoes, tomato paste, Worcestershire sauce, sugar and salt. Bring to a boil. Reduce heat; cover and simmer for 1 hour, stirring occasionally. , Cook spaghetti according to package directions; drain. Serve with meat sauce.

1 lb Italian sausage
1 large onion, chopped
1 green pepper, chopped
2 garlic cloves, minced
1 cup dry wine
3 (14 1/2 ounce) cans Italian-style tomatoes, crushed
1 (6 ounce) can tomato paste
2 teaspoons dried oregano
1 teaspoon brown sugar, packed
1/2 teaspoon dried basil
1/2 teaspoon dried thyme
2 bay leaves
1 (12 ounce) bag spaghetti, cooked

Steps:

  • In a large skillet cook meat, onion, gr pepper and garlic until meat is browned.
  • Drain and return to skillet.
  • Add wine and bring to a boil until it is absorbed, stirring occasionally.
  • Stir in tomatoes with juice, tomato paste, oregano, brown sugar, basil, thyme, and bay leaves.
  • Bring to a boil then reduce heat and simmer uncovered for 1 hour.
  • Remove bay leaves and serve over hot spaghetti.

Tired of the same-old, same-old spaghetti? This is really good! The seasonings and herbs are not set in stone...you can adjust to your own taste if desired! But DELICIOUS!!

3 slices bacon
3/4 lb ground pork
3/4 lb bulk pork sausage
1 large onion, coarsely chopped
1 green pepper, seeded and chopped
2 garlic cloves, minced
1 cup dry red wine
3 (14 1/2 ounce) cans Italian-style tomatoes, crushed
1 (6 ounce) can tomato paste
2 teaspoons dried oregano
1 teaspoon brown sugar
1/2 teaspoon dried basil
1/2 teaspoon dried thyme
2 bay leaves
12 ounces spaghetti, cooked and drained

Steps:

  • In large frying pan, cook bacon til crisp, remove to paper towels to drain. Crumble, set aside.
  • In bacon grease, cook pork, sausage, onion, green pepper and garlic over med-high heat til meat is browned and veggies are tender, stirring ocaisionally.
  • Drain well.
  • Add wine, bring to boiling. Boil 10 minutes or til liquid is absorbed stirring ocaisionally.
  • Stir in bacon, UNDRAINED tomatoes, tomato paste, oregano, brown sugar, basil, thyme and bay leaves.
  • Bring to boiling.
  • Reduce heat and simmer, uncovered, for 1 hour or til desired consistency.
  • Remove bay leaves.
  • (*Or leave them in and whoever gets them has to do the dishes!).
  • Serve over hot, cooked spaghetti noodles!
  • *Sliced mushrooms and black olives are also nice additions!

My grandmother fixed this for us growing up and I love it. It is a thick and hearty sauce for spaghetti or your favorite noodle! Of course the bread of choice would have to be Texas garlic bread!

½ pound ground beef
2 (16 ounce) jars spaghetti sauce
1 diced yellow pepper
1 diced red bell pepper
1 (14.5 ounce) can peeled and diced tomatoes, drained
6 fresh mushrooms, coarsely chopped

Steps:

  • In a skillet over medium heat, brown the ground beef until no pink shows; drain.
  • In a large pot combine browned beef and spaghetti sauce over medium heat for 5 or 10 minutes. Add yellow peppers, red peppers, canned tomatoes and mushrooms. Lower heat and simmer covered for 30 minutes, stirring every once in a while.
