Perfect for the Thanksgiving holiday, yams and apples are baked with a sweet glaze.

Steps:
- Place yams in a large saucepan with enough water to cover. Bring to a boil, and cook 30 minutes, or until tender but firm. Drain, peel, and cut into 1/3 inch thick slices.
- Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9x13 inch baking dish.
- In a small saucepan over medium heat, melt the butter with the cornstarch and brown sugar. Mix in the apple juice, lemon juice, cinnamon, and allspice.
- Alternate layers of yams and apples in the prepared baking dish. Pour the apple juice mixture over the layers.
- Cover, and bake 1 hour in the preheated oven. Remove cover, and continue baking 30 minutes. Baste frequently with the juices from the pan to prevent drying.

SHORTCUT PATISSERIE APPLE TART
Ridiculously easy to make, this recipe is a shortcut version inspired by the classic, delicate glazed patisserie French apple tart that my step-grandmother taught me to make when I was a teenager. This recipe encapsulates the elegance and taste but uses store-bought pastry which makes it much, much simpler. And there are only 4 ingredients!

Steps:
- Preheat the oven to 375 degrees F.
- Roll out the pie dough on a parchment paper-lined baking sheet to approximately 9 by 13 inches, making sure to keep the parchment underneath, as this makes it easier to transfer to a serving platter once baked (see Cook's Note).
- Peel the apples and cut them into quarters. Trim away the core, then thinly slice lengthwise.
- Shingle the apple slices on top of the pie dough so they overlap slightly (they will shrink slightly during baking). You can go right up to the edge of the pastry.
- Using a pastry brush, brush the apples with the oil and bake until the crust is golden brown and crisp, 30 to 40 minutes.
- Meanwhile, warm the apricot preserves in a small pan over medium-low heat. Generously brush over the apples to glaze them as soon as you remove the tart from the oven.
- Gently transfer the tart to a serving platter, making sure to remove the parchment. Enjoy warm or at room temperature with a scoop of vegan ice cream.
SHORTCUT PUFF PASTRY
To get an incredibly flakey, multi-layered puff pastry that's better than the store-bought stuff, but not as labor- or time-intensive as the real deal, try our cheater's version.

- Whisk sugar, salt, and 2 1/2 cups flour in a large bowl to combine. Grate 1/2 cup butter on the large holes of a box grater directly into bowl (work quickly so the butter doesn't soften too much in your hands). Thinly slice remaining 3/4 cup butter and add to bowl. Toss to coat butter, then quickly smash slices with your fingers into smaller, flatter pieces. Gradually drizzle in 7 Tbsp. ice water, tossing constantly with a fork to distribute. Using your hands, knead dough a couple of times in bowl to bring together in large clumps. Transfer clumps to a piece of plastic wrap, leaving dry bits behind. Toss dry bits in bowl, drizzling in more ice water by the teaspoonful as needed, until they hold together when squeezed in your hand (it will be very dry, which is normal). Add to dough on plastic and wrap tightly, forming into a 6" square. Flatten, pushing dough into corners and pressing out any air pockets. Chill 2 hours.
- Let dough sit at room temperature about 4 minutes to soften. Roll out on a lightly floured surface into a long rectangle about 1/4" thick. Fold into thirds like a letter and rotate 90°F. Repeat rolling and folding process, dusting with more flour as needed. Rewrap tightly and chill at least 30 minutes before using.
- Dough can be made 2 days ahead. Keep chilled.
EXCELLENT YAM AND APPLE CASSEROLE
My mom made this casserole for Easter dinner. The dish received rave reviews from everyone including my 2 year old!

- Boil yams for 30 minutes or until tender yet firm. For a quicker method, poke holes in the yams and microwave on high for 10 minutes.
- In a saucepan over medium heat, melt the butter with the cornstarch and brown sugar. Whisk in the apple juice, lemon juice, cinnamon, and allspice. Bring to a boil stirring occasionally. Boil 2-3 minutes. Set aside.
- Preheat over to 375°F and lightly grease a 9x13-inch baking pan.
- Peel cooked yams and cut into 1/3-inch slices.
- Place a single layer of yams down into greased baking pan. Second layer will be your sliced apples. Repeat with another layer of yams.
- Dump sauce over top of yams.
- Cover pan with tinfoil and bake for one hour. Remove foil and continue baking for another half hour. Baste every half hour to prevent the yams and apples from drying out.
- ENJOY!

- Cut apples in the pie filling into bite-sized pieces.
- In a medium bowl, mix the pie filling, cinnamon, and brown sugar until well blended.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 2 quart casserole dish.
- In the casserole dish, alternately layer the sweet potatoes and apples.
- In a medium saucepan over medium heat, mix together brown sugar, 1/3 cup water, cinnamon, raisins, butter and salt. Cook 5 minutes.

- Place beans in large saucepan. Add enough cold water to cover by 3 inches. Bring to boil. Remove from heat. Cover and soak beans 1 hour. Drain.
- Return beans to pan. Add enough cold water to cover beans by 3 inches. Bring to boil. Cover and simmer over medium-low heat until beans are almost tender, about 30 minutes. Drain.
- Meanwhile, preheat oven to 300°F. Cook bacon in heavy large ovenproof pot over medium heat until crisp, about 8 minutes. Using slotted spoon, transfer bacon to large bowl. Discard all but 2 tablespoons drippings from pot. Increase heat to medium-high. Working in batches, cook pork shoulder and kielbasa in pot until brown, about 8 minutes per batch. Using slotted spoon, transfer pork and kielbasa to bowl with bacon.
- Add onions, celery and carrots to pot. Sauté until vegetables are tender, about 5 minutes. Add garlic and thyme; sauté 1 minute. Mix in broth, tomatoes with juices and tomato paste; bring to boil. Stir in meats from bowl, then drained beans. Return to boil. Cover pot. Transfer to oven; bake until pork is tender, about 1 hour. Maintain oven temperature.
- Using slotted spoon, transfer 1 cup beans and vegetables from pot to processor and purée. Return purée to pot. Stir in wine. Season with salt and pepper. (Can be made 1 day ahead. Refrigerate uncovered until cool, then cover and refrigerate. Bring cassoulet to simmer before continuing.)
- Smooth top of cassoulet. Mix breadcrumbs, Parmesan and oil in bowl. Sprinkle half of crumb mixture over cassoulet. Arrange bell pepper atop crumb mixture. Sprinkle with remaining crumb mixture. Bake cassoulet uncovered until pork and beans are very tender and topping is golden and crisp, about 45 minutes.
- Garnish cassoulet with parsley.

In place of the canned apples you can use six Granny Smith apples, peeled, diced and stewed in ½ cup water for 15 minutes. I had 4 ounces cream cheese left over from a cheesecake so I substituted in this for ½ cup of the Cheddar cheese. Yum!
