Steps:
- Heat the oil in a heavy skillet over medium heat. Place a few plantain slices in the oil, and cook until lightly golden in color, about three minutes. Drain on paper towels. Repeat with the remaining slices.
- While the plantain slices are still warm, place them one at a time between two sheets of wax paper, and flatten by hand to 1/4 inch thick. Return flattened slices to the skillet, and continue frying until golden brown. Drain on paper towels, and season with salt and garlic powder.

JIBARITO SANDWICH RECIPE BY TASTY
In this recipe, thin cuts of flap steak are marinated in orange and lime juice and sandwiched between 2 flattened, crispy fried plantains, or tostones. We finish things off with a tangy, garlicky mayoketchup sauce, cheddar cheese, and fresh toppings like lettuce, tomato, red onion, and avocado. It's crunchy, salty, creamy, citrusy and delicious!

Steps:
- Marinate the steak: In a large bowl, whisk together the orange juice, lime juice, olive oil, adobo seasoning, garlic powder, garlic, and pepper. Add the steak and turn to coat. Cover and refrigerate for 1-2 hours.
- Make the mayoketchup: In a medium bowl, mix together the mayonnaise, ketchup, garlic, garlic powder, pepper, and salt. Cover and refrigerate until ready to use.
- Sear the steak: Heat the vegetable oil in a large high-walled skillet over medium-high heat until shimmering.
- Remove the steak from the marinade and pat dry with a paper towel. Add the steak to the pan and sear for 2-4 minutes on each side until the internal temperature reaches 135°F (55°C). Remove from the pan and set on a cutting board to rest, then slice against the grain into ¼-inch-wide pieces.
- Make the tostones: Heat the canola oil in a large high-walled skillet over medium heat until it reaches 350°F (180°C).
- Peel the plantains and cut in half lengthwise. Add the plantains to the hot oil and fry until light golden brown on all sides, 3-4 minutes. Transfer to a paper towel-lined plate to drain.
- Working 1 at a time, place a plantain half on a cutting board. Place another cutting board on top of the plantain and press down to flatten until the plantain doubles in width and is about ¼-½ inch thick.
- Return the oil temperature to 350°F (180°C). Fry the plantains again, 2 at a time, until golden brown and crispy on both sides, 1-2 minutes total. Transfer to a paper towel-lined plate to drain and immediately sprinkle with salt on both sides.
- Assemble the sandwiches: Spread 1-2 tablespoons of the mayoketchup across a plantain. Top with 2 half-slices of cheddar, and half of the sliced steak, onion, cilantro, lettuce, tomato, and avocado. Spread another 1-2 tablespoons of mayo ketchup on another plantain and top with 2 more half-slices of cheddar. Top the sandwich with the second plantain. Repeat with remaining ingredients to make another sandwich.

These wonderful sandwiches are very satisfying. I like to serve them with raw veggies and fresh fruit. Onion plus the red and green pepper give the sandwich zip.

- Butter rolls and place buttered side up on a baking sheet. Bake at 375° for 3-4 minutes or until lightly toasted., Meanwhile, in a skillet, combine the green pepper, red pepper and onion. Sprinkle with salt and pepper. Saute in oil until vegetables are crisp-tender. Remove and keep warm., To the skillet, add the steak. Cook and stir until steak reaches desired doneness. Return peppers to pan; heat through. Spoon beef mixture onto rolls. Sprinkle with cheese. Replace roll tops.

- Fill a large, deep skillet halfway with vegetable oil. Heat the oil over medium-high heat until a deep-fry thermometer registers 350 degrees F. Place a cooling rack over a baking sheet. Fry the tostones in 2 batches for about 2 minutes per side, or according to package directions. Drain on the cooling rack.
- Dice the sirloin (do this when it's cold right out of the refrigerator so it's easier to cut into small pieces). Place the steak in a medium bowl. Add the onion and mojo sauce and toss. Season generously with salt and pepper.
- Mash the avocado, lime juice and a pinch of salt together in a large bowl. Set aside.
- Heat a medium cast-iron skillet over medium-high heat. Add the olive oil. Use a slotted spoon to transfer the steak and onions to the skillet, leaving the liquid in the bowl. Sear the steak until the exterior is seared, 2 to 3 minutes. Add the reserved mojo to the pan and cook until steak and onions are browned and caramelized, 3 to 4 minutes more. Turn off the heat, then season with salt and pepper.
- The tostones will vary in size, so match up sets of two that are approximately the same. Spread a thin layer of avocado on one side of the tostones.
- Build sliders by layering one tostone with steak, pico de gallo, a pinch of potato sticks and cilantro and top with a second tostone that is about the size of the first. Repeat with remaining tostones.
