UNCLE BILL'S HOT FUDGE SAUCE
Steps:
- In the top of a double boiler over gently simmering water, melt the chocolate, stirring occasionally. Remove from the heat. In a bowl, stir together the sugar and the water until all granules of sugar have dissolved. Stir in the dissolved sugar mixture and the corn syrup thoroughly into the chocolate until all are absorbed. Return the pan to low heat and stir in the margarine and the vanilla. Serve at once or cool, cover, and refrigerate in 1 cup containers. Reheat to the desired temperature before serving.
CHUCK'S BOLOGNESE
Chuck's hearty Bolognese sauce with spaghetti - a perfect dinner any day of the week!

Steps:
- Heat oil in a large pan and saute the onions and carrots until translucent, about 5 minutes. Add the garlic, thyme and chile flakes. Saute for 2 more minutes. Add 1/2 cup veal stock into the vegetable mixture. Add the ground beef, veal and pork, stirring and adding more veal stock when necessary to keep the meat moist. Sprinkle with salt and pepper. Cook for about 10 minutes.
- Add the milk and stir. Continue cooking until half of the liquid has evaporated, about 2 minutes. Add the tomato paste, the remaining veal stock and continue cooking until desired thickness. Adjust the seasoning.
- Cook the pasta in salted boiling water, about 8 minutes. Drain and mix with the butter, and then add the sauce, chives and basil. Mix well. Serve with grated Pecorino cheese.

An excellent finger-lickin' sweet and sour sauce for dippin' your chicken! This sauce is also very good to use for baking spare ribs.

- Meanwhile, in a cup mix together water and cornstarch until fully dissolved. While sauce is boiling, add cornstarch mixture slowly, stirring continuously until the mixture thickens slightly. Do not add mixture all at once as the sauce could get too thick. Use only enough cornstarch to thicken to your desired consistency. When desired consistency is reached, voila! The sauce is ready!n

UNCLE BILL'S PASTA WITH A VEGETARIAN TOMATO SAUCE
My DW will not eat pasta that has any meat in the sauce. It took me several tries until I came up with a sauce that she thoroughly enjoys. This is a very simple and easy recipe to make and is very tasty.

Steps:
- In a large saucepan or frying pan, heat 2 tablespoons of olive oil on medium-high heat.
- Add onion and saute for 4 minutes, stirring often, do not burn.
- Add red and green pepper and saute for another 4 minutes, stirring often.
- Add tomatoes, tomato paste, garlic, basil, dried oregano, Italian herb seasoning, red hot pepper flakes, salt and pepper; stir to mix.
- Reduce heat to medium-low, cover and simmer for 30 minutes, stirring occasionally.
- Remove cover and continue to simmer for another 20 minutes or until sauce begins to thicken slightly. When slightly thickened, remove from heat and set aside.
- Meanwhile, in a large cooking pot or a pasta pot, fill 3/4 full with hot water and bring to boil.
- Add 2 tablespoons of olive oil and 1 tablespoon of salt.
- Add rigatoni and cook for 15 minutes, stirring once during cooking.
- Add bow-tie pasta and continue to cook for another 15 minutes or until both pastas are el dente.
- When pasta is cooked, reserve 1 cup of pasta liquid and set aside.
- Drain the pasta and return to the cooking pot.
- Add 2 tablespoons of butter and the remaining 2 tablespoons of olive oil, 1/4 cup of grated Padano cheese and toss to coat well.
- If pasta appears to be too dry, add a few tablespoons of reserved pasta water.
- You may now add the tomato mixture to the pasta pot and mix well to coat, or ladle the pasta into individual serving plates and then add the tomato mixture over the top.
- Sprinkle with additional grated Padano cheese if desired.

UNCLE BILL'S BOLOGNESE SAUCE
I developed this recipe several years ago and have made it for many Italian functions. It is quite lengthy, but like every good recipe, it takes time to make to have it taste good.

Steps:
- In a large frying pan, heat oil and butter on medium-high heat.
- Add garlic and onions and saute until onions are translucent, about 5 minutes.
- Add shredded carrots and celery and continue to saute for another 5 minutes, stirring occasionally.
- Transfer the mixture to a large size cooking pot and heat on low until the the meat is ready.
- Using the same frying pan, add 1 tablespoon of olive oil and meat cubes and lightly fry until all sides are browned, about 5 minutes.
- Drain any fat and discard.
- Transfer fried meat cubes to the cooking pot.
- To the cooking pot, add ground veal, ground pork and pancetta and fry for about 10 minutes or until no pink is showing on the veal and pork.
- To the cooking pod add crushed tomatoes including liquid, mushrooms including liquid, tomato paste, red and green peppers; mix well.
- Turn up the heat and bring to boil.
- Reduce heat to a light simmer.
- Add dried oregano, chopped fresh basil, Italian seasoning, bay leaves, sugar, salt, black pepper and dry red wine; sir well.
- Continue to simmer partially covered for at least 2 1/2 to 3 hours, stirring occasionally.
- DO NOT let the bottom of the sauce burn.
- When done, remove bay leaves and discard.
- Serve the sauce over pasta of your choice and sprinkle with freshly grated Parmesan cheese.
- NOTE: You may use lean ground round instead of the roast.
