Categories     Dessert

Time 55m

Number Of Ingredients 10

5 peaches (, peeled, cored and sliced (about 4 cups))
3/4 cup granulated sugar
1/4 teaspoon salt
6 Tablespoons butter
1 cup all-purpose flour
1 cup granulated sugar
2 teaspoons baking powder
1/4 teaspoon salt
3/4 cup milk
ground cinnamon

Steps:

  • Add the sliced peaches, sugar and salt to a saucepan and stir to combine. *(If using canned peaches, skip steps 1 & 2 and follow the directions starting at step 3)
  • Cook on medium heat for just a few minutes, until the sugar is dissolved and helps to bring out juices from the peaches. Remove from heat and set aside.
  • Preheat oven to 350 degrees F. Slice butter into pieces and add to a 9x13 inch baking dish. Place the pan in the oven while it preheats, to allow the butter to melt. Once melted, remove the pan from the oven.
  • In a large bowl mix together the flour, sugar, baking powder, and salt. Stir in the milk, just until combined. Pour the mixture into the pan, over the melted butter and smooth it into an even layer.
  • Spoon the peaches and juice (or canned peaches, if using) over the batter. Sprinkle cinnamon generously over the top.
  • Bake at 350 degrees for about 38-40 minutes. Serve warm, with a scoop of ice cream, if desired.

Time 1h15m

Yield 6 servings, plus extra biscuits

Number Of Ingredients 16

5 ripe peaches
1/2 cup brown sugar
2 tablespoons lemon juice
1 tablespoon cornstarch
1/2 teaspoon ground cinnamon
4 tablespoons unsalted butter
2 tablespoons bourbon
2 cups all-purpose flour, plus more for rolling out dough
2 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
8 tablespoons (1 stick) unsalted butter, cut into pieces, chilled
3/4 cup cold buttermilk
1/4 cup heavy cream, for brushing
Raw sugar, for sprinkling
Whipped cream or vanilla ice cream, for serving

Steps:

  • For the peaches: Remove the skins from the peaches and cut into wedges. Place in a bowl and toss with the sugar, lemon juice, cornstarch and cinnamon.
  • Melt the butter in a large skillet over medium heat. Add the peaches and bourbon and simmer until the liquid is mostly cooked off and the peaches are just tender but not too soft. Divide the peaches among 6 small cast iron pans or 6- to 8-ounce ovenproof ramekins.
  • Preheat the oven to 375 degrees F.
  • For the biscuit topping: Stir together the flour, baking powder, baking soda and salt in a large bowl. Using a pastry cutter, blend the butter into the flour mixture until it looks like big crumbs but is not completely mixed in. Stir in the buttermilk and mix until just combined.
  • Transfer the biscuit dough to a lightly-floured work surface and gently roll out the dough until even and about 1/2-inch thick. Cut out 6 rounds with a 4-inch biscuit cutter. (You may have extra dough; the rest can be baked separately and served on the side with butter.)
  • Place a dough round on each dish of peach cobbler. Brush the top of each round with heavy cream and sprinkle with sugar.
  • Place the cobblers on a baking sheet. Bake until the fruit is bubbly and the biscuits are golden brown, about 20 to 30 minutes.
  • Serve with whipped cream or vanilla ice cream.

The Easiest Southern Peach Cobbler image

Southern Peach Cobbler - Get excited because this is the best and easiest cobbler ever! The buttery crisp topping will melt in your mouth. The texture is very similar to pie crust cobbler. It's a delicious summer dessert that can be made with fresh or canned peaches.

Provided by April Boller Wright

Categories     Dessert

Time 1h25m

Number Of Ingredients 13

2 29 oz canned peaches in heavy syrup (Only use the peach juice from one can, not both.)
1/4 cup granulated sugar (Add more or less depending on your taste)
5 tbsp melted unsalted butter
2 1/2 tsp lemon juice
2 tsp vanilla extract
1/8 tsp salt
2 cups flour
2 tsp baking powder
1 1/2 cup granulated sugar
1 pinch nutmeg (small pinch )
1 tsp cinnamon
1/2 tsp salt
1 cup melted unsalted butter

Steps:

  • Preheat oven to 400 degrees F. Pour the first can of peaches and it's juices into a 9x13 pan. Next, drain the juice from the second can and pour only the peaches into the baking dish. Do not use the juice from the second can.
  • Add the melted butter, a pinch of salt, the lemon juice, sugar and vanilla extract to the peaches and syrup in the pan.Mix well to combine. **SEE NOTES**
  • In a large bowl, add the flour, sugar, baking powder, cinnamon a small pinch of nutmeg and salt. Mix very well. Pour the flour over the top of the peach cobbler. Make sure you cover the majority of the top of the cobbler with flour.
  • Using your clean hand or the back of a large spoon, smooth out the flour mixture covering the edges as best as you can but it's fine if you miss some of the edges. See post for steps and pictures about this step. When you're done smoothing the flour, the top should be smooth and not big and lumpy. *SEE NOTES*
  • Starting from the top of the pan working your way down, drizzle melted butter over the top of the of the flour. Bake for 15 minutes then reduce the oven temperature to 375 degrees F and continue to bake for an hour or until the top has is crisp and golden brown. Serve warm with scoop or two of ice cream. Enjoy! To make this using fresh ripe peaches see notes.
