TOURNAMENT BBQ SAUCE
I don't enter competitions or such, but if I did, I would use a recipe similar to this one for an amazing BBQ. I call it tournament because it is similar to presidents choice tournament sauce

- combine all stuff together in saucepan.
- put on med-high until sauce consistency.

DATE "BOURBON" BBQ SAUCE
Steps:
- Put the dates, cumin, bourbon if using, garlic, sugar, rice wine vinegar, chile flakes, salt, guajillo peppers and 2 cups water in a medium pot, place over medium-high heat and bring to a boil. Reduce the heat to simmer and cook until the dates are soft, another 3 minutes. Remove from the heat and let cool to room temperature, about 10 minutes.
- Scrape the cooled mixture into a blender and blend on low speed until smooth, about 1 minute. Use immediately, or let the mixture cool completely and refrigerate. The mixture should be good for 1 to 2 weeks.
FESTIVAL BBQ SAUCE
When I was growing up on the east coast, each local church or volunteer fire company had their own version of this sauce. The advertising for their events was in the fact that you could smell it grilling for a 5-mile radius. It's especially good on chicken, pork roast, or skirt-steak for fajitas; it tenderizes as well as flavors the meat. Plan for extra guests...they will come as the aroma wafts through your neighborhood.

Steps:
- Beat the egg, add oil and beat again. Add remaining ingredients and stir. Reserve 3/4 cup for basting during grilling.
- Use the remaining sauce to marinade meat for at least an hour--better yet if marinated overnight. Grill as you normally would for whatever meat that you use, basting every five minutes or so.
CANADIAN BARN BBQ SAUCE
This flavorful barbeque sauce for ribs is just like the kind they serve at a famous restaurant in Montreal, Quebec that has people lining up on the street any given night of the week. Try this -- you'll luv it! Don't' skip the lemon juice or cinnamon. Simmer the left over sauce until sugar is completely dissolved and serve as extra sauce for those who like their ribs dripping with flavor.

- In a medium bowl, mix applesauce, ketchup, packed brown sugar, lemon juice, salt, black pepper, paprika, garlic salt and ground cinnamon. Use the mixture to marinate ribs in the refrigerator for at least 30 minutes before preparing as desired. Also use for basting the ribs while cooking.

Easy, fast, and the best. Diane Gray won first place in the Richmond World Invitational Rib Championship in Virginia. Reported by Merle Ellis, "The Butcher", of the Charlotte Observer in 1987. I always double the ingredients because it goes fast. Good on pork and chicken.

Got this off the web somewhere and modified it. It's the best barbecue sauce we've ever had, hands down! Adjust the cayenne to taste, we like it HOT!

- Combine all dry ingredients in a nonreactive saucepan. Blend in the vinegar, honey, Worcestershire sauce, and the soy sauce. Bring the mixture to a boil.
- Stir in the ketchup, being careful that the mixture doesn't pop and splatter. Reduce the heat and simmer for 30 minutes, stirring occasionally.
- If canning, pour sauce into warm sterilized jars and process in a water-bath canner for 5 minutes. Otherwise, put into containers with tight-fitting lids and store in refrigerator.

THE WORLDS BEST BARBECUE SAUCE
This sauce is great for chicken or ribs, and can even be used in place of ketchup on your fries and burgers. It's really good for making chicken wings. I'm sure this sauce could be used in a lot of other dishes and recipes; just use your imagination. It is sweet with a bit of zip. It keeps well in the refrigerator.
