TRADITIONAL JERSEY BEAN CROCK: THE ORIGINAL BAKED BEANS
Jersey is the largest of the Channel Islands.The island is usually the hottest place in the British Isles during the summer months, with the temperature averaging a few degrees higher than the mainland. As the island is neither part of the EU or the UK, it is a popular 'duty-free' destination. Jersey has a rich and varied history, with several wars and invasion attempts over many centuries.The island was part of the Duchy of Normandy in the 10th century and became part of the Anglo-Norman realm in 1066. The island's history is reflected in the French road names and typical Jersey surnames, as well as in the many historical French artefacts and monuments that can be found around the island. This is a traditional recipe, and no self-respecting Jersey woman would be without her earthenware bean crock, or casserole, in which to cook one of the most filling and tasty of all the island's recipes. So popular was this bean dish that every farmhouse had its bundles of drying French beans hanging from the rafters waiting to be shelled in the long winter evenings. Town folk used to hang their beans in the garage. For some Islanders this was a traditional supper dish; others had it for Sunday breakfast. Mr. Heinz is supposed to have taken the idea for his famous baked beans from the bean crock of Jersey emigrants in Canada. Prep time includes the overnight soaking for the beans. - Soak beans overnight in sufficient water to cover. Then drain and put them in to the beancrock (any earthenware casserole dish or a Le Creuset dish will be fine), seasoning with pepper.
- Add the belly pork, shin of beef, carrot, onion and herbs. Pour boiling water over the contents until covered. Place, without lid, in hot oven, Gas mark 6, 200°C (400°F). Cook uncovered until contents bubble. Then put on lid, turning oven to low, Gas mark 2, 150°C (300°F). Leave cooking all day - about 4 to 6 hours, topping up with boiling water when necessary.
- One hour before serving, remove meat, vegetables and herbs, strip meat from bones. Discard the bones, gristle and excess fat. Mix meat into the beans, adding salt and pepper to taste.
- Serve hot with crusty bread or with grilled ham and eggs.

- In a large saucepan or Dutch oven, bring beans, salt and 2 qt. water to a boil; boil for 2 minutes. Remove from the heat; let stand for 1 hour. Drain beans and discard liquid. Return beans to pan. Cover with remaining water; bring to a boil. Reduce heat; cover and simmer for 1-1/2 to 2 hours or until beans are tender. Drain, reserving liquid. In a greased 2-1/2 qt. baking dish, combine beans, 1 cup liquid, onion, molasses, bacon, brown sugar, mustard and pepper. Cover and bake at 325° for 3 to 3-1/2 hours or until beans are as thick as desired thickness, stirring occasionally. Add more of the reserved cooking liquid if needed.

OLD FASHIONED FRENCH CANADIAN BAKED BEANS
This was a staple for me growing up in Quebec and brings back many happy memories. A perfect winter comfort food!!! I have tweaked an original recipe and wanted to share it with you. Great at breakfast with fried egg and sausage. A hearty meal with crusty bread and salad. It takes some time but well worth the wait -- I hope you enjoy them. Special note: some people prefer using salt pork when preparing baked beans - I use sliced bacon instead.

Steps:
- Cover beans with water and soak overnight.
- Rinse beans then bring to a boil in approximately 1 quart of water, bay leaf and garlic - simmer for 30 minutes.
- Turn off heat and let beans stand for approximately 1 1/2 hours until soft. Drain and reserve the bean liquid. Discard bay leaf and garlic.
- Mix together remaining ingredients (excluding beans and bacon).
- Add beans to bean pot (or any covered dish).
- Stir in molasses mixture to beans. Top off with some of the reserved bean liquid.
- Arrange bacon on top.
- Cover and bake at 300 degrees for 7 hours. For the final hour of cooking, remove cover to let bean brown up nicely.
- Note: check occasionally and keep beans covered with reserved bean liquid during cooking.

- Bring 10 cups water and navy beans to a boil in a large pot; cook at a boil for 2 minutes. Stir bacon, onion, brown sugar, molasses, and salt into the water.
- Carefully pour the mixture into a slow cooker.
- Cook on High, stirring occasionally, for 4 hours.
- Stir 3 cups water into the mixture. Continue cooking until beans are tender, about 2 hours 15 minutes more.

- Place the navy beans into a large container and cover with several inches of cool water; let stand 8 hours to overnight. Drain and transfer beans to a pot; add enough water to cover beans.
- Bring water to a boil, reduce heat, cover pot, and simmer until beans are slightly tender, about 1 hour.
- Mix 4 cups water, molasses, brown sugar, salt, mustard, and pepper together in a bowl until smooth.
- Mix beans, salt pork, and onion together in a slow cooker. Add molasses mixture and more water to cover beans if needed; stir well.

- Soak the Beans:Soaking the beans is optimal for a shortened cooking time. Starting with un-soaked beans adds an additional 4-6 hours to the slow cook time. This increases the cooking time from 5 - 6 hours to about 10 - 12 hours. [See Note 1]Overnight soak - Place beans in a large bowl and cover with water. The water should reach at least 2 inches over the top of the beans. Allow to soak overnight or at least 8 hours. Retain the soaking liquid for cooking.Quick Soak - For a quick soak, pour the dry beans into a pot and cover the beans with cold water. Place the pan on the stove over medium-high heat and bring to a boil. Once the water boils, turn off the stove, and allow the beans to soak in the hot water for 1.5 hours. - Prepare the Beans in either a crock, Dutch oven, or Slow Cooker insert:Score the salt pork 1/4 inch deep 1 inch apart, and slice into two even pieces. Transfer to the bottom of the cooking vessel.Combine molasses, mustard, brown sugar, salt, pepper, onions and 5 cups soaking liquid. Add the pre-soaked beans. Pour the molasses mixture over beans, stir, and cover. The liquid should cover the beans by 1/2 inch. Add more water if necessary.
- By Dutch oven or Clay Beanpot: Preheat oven to 300 degrees F.Transfer beans into the Dutch oven or Clay Bean pot and bake covered until the beans are tender and the liquid has thickened - about 6 hours. Check the beans every 45 minutes, adding more hot water if necessary to keep beans in broth at all times. For the last 50 to 60 minutes of cooking, uncover the beans to thicken the sauce. At this stage, if you are having hot dogs or sausages with your beans, you can add them into the pot to heat inside with the beans, optional. Once the beans are to your desired tenderness, remove from oven, adjust the seasoning with salt, pepper, and molasses, if necessary. Since Navy beans are relatively high in starch, the sauce will thicken slightly as it cools. If the beans do not thicken enough, See Recipe Note 9 for thickening the beans.
