1 c shortening
1 1/2 c sugar
3 eggs
3 c unsifted flour
1 tsp baking soda
1/2 tsp salt
1 1/3 c none such (borden) ready to use mincemeat or (1/2 of 27-oz jar)

Steps:

  • 1. PRE HEAT OVEN TO 375F. IN LARGE MIXER BOWL, BEAT SHORTENING AND SUGAR UNTIL FLUFFY. ADD EGGS, BEAT WELL. STIR TOGETHER DRY INGREDIENTS: GRADUALLY ADD TO SHORTENING MIXTURE. MIX WELL. STIR IN MINCEMEAT. DROP BY ROUNDED TEASPOONFULS, 2 INCHES APART, ONTO GREASED BAKING SHEETS. BAKE 8 TO 10 MINUTES OR UNTIL LIGHTLY BROWNED. *** NOTE DO NOT OVER COOK THEY WILL GET TO DRY.. THEY ARE TO BE MOIST.. THIS IS A CAKE LIKE COOKIE

Number Of Ingredients 9

1/2 cup butter, softened
1 cup sugar, divided
1 egg
1 teaspoon vanilla extract
1-3/4 cups all-purpose flour
1-1/2 teaspoons baking powder
1/4 teaspoon salt
1 package (9 ounces) condensed mincemeat, cut into small pieces
1 egg white, lightly beaten

Steps:

  • In a large bowl, cream butter and 3/4 cup sugar until light and fluffy. Beat in egg and vanilla. Combine the flour, baking powder and salt; gradually add to creamed mixture and mix well. Stir in mincemeat. Cover and refrigerate for 2 hours. , Roll dough into 1-in. balls; dip into egg white and remaining sugar. Place sugar side up 2 in. apart on greased baking sheets. Bake at 375° for 10-12 minutes or until set. Remove to wire racks.

1 1/2 cups sugar

3 cups unsifted flour
1 teaspoon baking soda
1/2 teaspoon salt
1 (9 ounce) package none such condensed mincemeat, Crumbled

Steps:

  • Preheat oven to 375 degrees.
  • In large bowl, beat shortening and sugar until fluffy.
  • Add eggs; beat well.
  • Stir together dry ingredients; gradually ad to shortening mixture.
  • Mix well.
  • Stir in mincemeat.
  • Drop by rounded teaspoonfuls, 2 inches apart, onto greased baking sheets.
  • Bake 8-10 minutes or until lightly browned. Cool.
  • Frost if desired.

120g butter, softened
75g light brown sugar
75g golden caster sugar
1 medium egg
1 tsp vanilla extract
180g plain flour
½ tsp bicarbonate of soda
150g dark chocolate, cut into chunks

Steps:

  • Heat oven to 180C/160C fan/gas 4 and line two baking sheets with parchment. Cream the butter and sugars together until very light and fluffy, then beat in the egg and vanilla. Once combined, stir in the flour, bicarb, chocolate and ¼ tsp salt.
  • Scoop 10 large tbsps of the mixture onto the trays, leaving enough space between each to allow for spreading. Bake for 10-12 mins or until firm at the edges but still soft in the middle - they will harden a little as they cool. Leave to cool on the tray for a few mins before eating warm, or transfer to a wire rack to cool completely. Will keep for three days in an airtight container.
