4 tablespoon ghee
2 tablespoon coriander powder
1/2 cup yoghurt (curd)
4 Numbers onion
2 teaspoon ginger paste
2 teaspoon garlic paste
2 teaspoon red chilli powder

5 Numbers green cardamom
8 Numbers peppercorns

Steps:

  • Here is an excellent mutton recipe that you can easily make at home. To prepare this easy recipe, firstly, clean and wash the mutton pieces. Next, put a large pan over medium flame and melt ghee in it. Once the ghee has melted, add cardamom, cloves, black peppercorns, cinnamon stick. Saute these for a minute and add the sliced onions along with salt in it. Saute till the onion turns light brown in colour. Next, add the ginger paste along with garlic paste and cook the mixture until the raw smell disappears.
  • Now, add turmeric powder, red chilli powder and coriander powder to the fried onion and mix it well. Add the mashed tomatoes and mix them well with the other ingredients. Make sure the tomatoes turn pulpy and cook this mix until oil separates from the masala in the pan.
  • Now, add mutton pieces to this masala and mix it well. Ensure that mutton pieces are evenly coated with the masala. Pour the yoghurt in the mutton masala and mix it well. Let it cook for 4-5 minutes and, then, add water to it. Stir it well and check the seasoning once. Then, add chopped coriander leaves along with garam masala powder. Give it a quick stir. Cook it for another 25 minutes to ensure that mutton is no longer raw and is perfectly juicy.

1 kilograms mutton
1 cup onion chopped
1 teaspoon garlic
2 teaspoon ginger
1 teaspoon cumin powder
3 teaspoon coriander powder
0 As required salt

1 teaspoon garam masala powder
1/4 cup mustard oil
1/4 cup ghee
1 inches cinnamon
2 Numbers bay leaf
4 Numbers clove
2 Numbers black cardamom
2 Numbers green cardamom
1 teaspoon ginger paste
1 teaspoon garlic paste
4 teaspoon yoghurt (curd)
1 teaspoon salt
2 teaspoon mustard oil
2 teaspoon turmeric
1/2 teaspoon turmeric

Steps:

  • Wash the mutton pieces (chopped into cubes) in running water. Keep aside to drain. When the water has almost dried, add the marinade ingredients. Mix well using your hands, rubbing the spices into the meat. Marinate for 1-2 hours.
  • Now take a heavy-bottomed pan and heat. One with a tight lid is preferred. Add oil and ghee. When smoke starts coming out of it, add the whole spices. Add a pinch of sugar. It gives an amazing colour to the mutton.
  • Add the chopped onions and cook on low flame for 10 minutes. At this point, you can add the salt. This increases the cooking process of onion. When the onions turn translucent, reduce the heat and wait for them to turn pink. Add turmeric and mix well. You can add turmeric at a later stage also, but adding it in the beginning of the recipe helps you get rid of that raw smell of the spice.
  • Now add the marinated mutton, ginger garlic paste and cook on high flame for 5-7 minutes, stirring continuously. It is advisable to use homemade ginger-garlic paste as the store bought one has high preservatives and it impacts the taste of mutton. At this point you can pressure cook the mutton. After 3 whistles you must open the lid to check if the mutton is done. If not, cook for 1-2 more whistles. Do not add water while pressure cooking. Alternately, you can slow cook as suggested below.
  • Cover the lid of the vessel, lower the flame and allow it to simmer. When the mutton is almost done, add coriander, cumin, black pepper and mix well.
  • Cook uncovered till oil starts separating from the meat. Add a cup of water, garam masala powder and cook uncovered till oil floats on top. Transfer the mutton curry into a bowl, adjust seasoning, garnish with ginger juliennes, coriander leaves and serve hot with steamed rice or chapatti.
  • To make the mutton pieces soft and tender, you can wash and soak the pieces in some lukewarm water, rinse properly and then marinate it with the spices and keep it aside for two hours. This makes the mutton pieces juicy and succulent as the spices are fully absorbed.

This lovely lamb curry recipe was given to me by my indian partner. I have always marvelled at her lamb curries and finally convinced her to share her secrets with me. I tried this on my own and was amazed by the simplicity of it and the amazing flavour of the curry. What's best is that no curry pastes etc are used just simple herbs and spices - and of course the lamb!!! Enjoy please.

2 kg leg of lamb, cut into 1 . 5 to 2 inch cube sized pieces
2 tablespoons vegetable oil
1 tablespoon ginger paste
1 tablespoon garlic paste
4 medium onions, Sliced
2 black cardamom pods
8 -10 green cardamoms
1 -2 inch cinnamon stick
20 whole black peppercorns
1 tablespoon cumin seed
8 -10 green bird's eye chilies, Broken into halves (seeds still inside)
5 -10 dried bay leaves (depending on size)
4 large tomatoes (cut roughly into small sized pieces)
1 -1 1/2 teaspoon chili powder
2 teaspoons turmeric
3 teaspoons coriander powder
1 tablespoon salt
4 tablespoons natural yoghurt
coriander leaves, chopped
1 lemon
1 cup water

Steps:

  • Wash the lamb well in cold water removing the loose slimey film from each piece. Don't worry about drying the lamb - keep it nice and wet (the lamb absorbs the water and allows the meat to become nice and tender).
  • In a large steel saucepan heat the oil and then add in the onions to fry over a high heat. When the onions have started to go translucent then add in the Black and Green Cardamoms, Cinnamon Stick, Black peppercorn, finger chillies, Bay leaves, Salt and finally the Cumin Seeds. Continue to fry over high heat until the onions have turned a reddish brown colour. Make sure you keep on stirring.
  • Add in the ginger paste, garlic paste and fry for a few minutes adding some water. Make sure you keep on stirring.
  • Add the turmeric, coriander and chilli powder and mix in well. Add in a further ½ cup of water. Make sure you keep on stirring.
  • Add the chopped tomatoes and then lower the heat and continue to slow fry until the tomatoes have disintegrated into the sauce and the oil starts to separate. This may take a little time! Make sure you keep on stirring.
  • Add in the lamb and stir well to coat everything and then finally add in the yoghurt. Cover and let simmer for 45 minutes to an hour stirring every 5 or 10 minutes to stop it all burning at the bottom of the pan.
  • The dish is ready when the lamb is soft and tender and the oil has once again separated from the sauce. Once cooked add in the juice of the lemon.
  • Garnish with chopped coriander leaves and serve with warm fresh Naan bread.

  • Now add the mutton/beef pieces and cover them with the spices.
  • Cook until the meat is tender and the gravy is thick. You can always add water if it's needed.
  • Serve with plain white rice and tomato salsa -- !
