3 tablespoons butter
3 tablespoons all-purpose flour
1 cup cider
1 cup chicken broth
1 tablespoon brown mustard
1 teaspoon fresh thyme leaves

Steps:

  • Melt the butter in a saute pan over medium heat. Whisk the flour into the butter until the flour has dissolved, making a roux. Let cook 2 to 3 minutes, and then reduce the heat to medium-low.
  • In a liquid measuring cup, combine the cider and broth together. Slowly pour in over the roux and whisk constantly until all liquid has been incorporated into the mixture. Stir in the mustard. (If there are any pan drippings from the roasted turkey you can add them at this point). Add fresh thyme and let simmer until the gravy is thickened, 4 to 5 minutes.

1 loaf farmhouse-style bread, cut into 1-inch cubes (4 to 5 cups)
1 teaspoon poultry seasoning
5 tablespoons butter
4 mcintosh apples, coarsely chopped
2 onions, chopped
6 celery ribs, chopped
1 bay leaf
salt and pepper
2 lbs rotisserie chicken, shredded (or turkey)
1/2 cup flat leaf parsley, chopped
4 cups chicken broth, divided
2 tablespoons flour

Steps:

  • Preheat oven the 325°F.
  • Scatter bread on a baking sheet and season with poultry seasoning. Toast in the oven until golden, 10 to 12 minutes. Set aside.
  • In a large skillet, melt 3 tablespoons butter over medium heat. Add apples, onions, celery, bay leaf, salt, and pepper, and cook until tender, 7 to 8 minutes. Stir in the chicken, parsley, and 2 cups chicken broth, and cook until heated through, 3 to 4 minutes. Stir in bread cubes.
  • In a small saucepan, melt the remaining 2 tablespoons butter over medium heat. Whisk in the flour for 1 minute. Whisk in the remaining 2 cups chicken broth. Season the gravy with salt and pepper.
  • Discard the bay leaf. Serve the stuffing in bowls topped with the gravy.

Here is a good basic stuffing &/or dressing recipe. It has mushrooms and nuts and all the other good things that one thinks of when you visualize a turkey roasting away.

3/4 cup unsalted butter, melted or
3/4 cup unsalted margarine, melted*
3/4 lb chopped button mushroom
2 medium onions, chopped
3 stalks celery, chopped
4 -6 garlic cloves, minced
2 large eggs
1/2 cup almonds or 1/2 cup pecans
2 teaspoons salt
1 teaspoon fresh coarse ground black pepper
1 teaspoon thyme
1 teaspoon rosemary
1 teaspoon sage
1/2 teaspoon savory
1 tablespoon chopped parsley
1 tablespoon poultry seasoning
9 cups stale bread, broken into 1-inch pieces (use any kind of bread, whole wheat would be fine, as well)
5 cups low sodium chicken broth (Vegetarian & Kosher cooking**) or 5 cups vegetable broth (Vegetarian & Kosher cooking**)

Steps:

  • Preheat oven to 350°F.
  • Butter a pretty casserole dish 15"x10" baking dish or a souffle dish would be perfect.
  • Melt butter in large skillet and add mushrooms, onions, & celery.
  • Saute for 3-5 minutes until translucent.
  • Add garlic and cook for another 2-3 minutes.
  • Now add salt, thyme, rosemary, sage, black pepper, savory, parsley & poultry seasoning & mix well.
  • Add nuts and mix well again.
  • Beat the eggs.
  • Place bread into a large bowl along with vegetable mixture, beaten eggs and 1 cup warm chicken broth or vegetable broth.
  • Continue mixing and pouring in broth until stuffing looks moist, use at least 4 cups of stock or broth. It should not be too dry - remember you are going to bake it.
  • Transfer stuffing to prepared dish.
  • Cover with buttered foil and bake until heated through, about 45 minutes.
  • Uncover and bake until top is golden brown, about 15 minutes.
  • Variations:*To keep Kosher use the margarine and **For Kosher or Vegetarian - use the vegetable broth.

2 loaves whole wheat bread, cut into small cubes
1 teaspoon olive oil
1 pound mild Italian sausage
4 medium onions, diced
3 stalks celery, diced
½ cup butter, or more to taste
5 cloves garlic, minced
2 tablespoons rubbed dried sage leaves
1 ½ teaspoons dried parsley
1 teaspoon dried summer savory
¾ teaspoon salt
½ teaspoon ground black pepper
½ teaspoon Italian seasoning
½ teaspoon dried marjoram
¼ teaspoon dried thyme leaves
¼ teaspoon ground nutmeg
1 cup chicken broth, or more to taste

Steps:

  • Place bread cubes in a large bowl.
  • Heat oil in a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Add onions, celery, 1/2 cup butter, and garlic. Saute until onions appear translucent, about 5 minutes.
  • Add sage, parsley, savory, salt, pepper, Italian seasoning, marjoram, thyme, and nutmeg; mix well. Stir in 1 cup broth.
  • Slowly pour broth and sausage mixture over bread cubes, stirring continuously as you pour. Add additional broth and butter as desired.
  • Stuffing is ready to bake in the oven or stuff in the bird.
