Steps:
- Prepare the vinaigrette by adding the olive oil, vinegar, mustard, garlic powder, salt, and some freshly cracked pepper to a bowl or jar. Whisk or shake the jar until the ingredients are combined, then set the vinaigrette aside.
- Slice the kielbasa into medallions or half-rounds and add them to a large skillet (12" or larger) or a large, wide-bottomed pot, along with the olive oil. Sauté the sausage over medium heat until the pieces are well browned.
- While the sausage is browning, finely dice the onion. Once the sausage has fully browned, add the onions and continue to sauté until the onions are soft and transparent.
- While the onions are sautéing, chop the head of cabbage into 2-inch by 1/2-inch wide strips. Add the cabbage to the skillet or pot along with a pinch of salt and pepper. Continue to sauté until the cabbage is tender (check the thickest white pieces for tenderness). To help the cabbage soften, add a few tablespoons of water to create steam within the pot or skillet. Let the water evaporate as you sauté the cabbage.
- Once tender, drizzle the mustard vinaigrette over the skillet, starting with just half of the prepared amount. Stir to coat the kielbasa and cabbage in the vinaigrette, taste, and add more if needed. Serve warm.

Steps:
- 1. In a 5-quart Dutch oven, over medium-high heat, cook the bacon and keilbasa, stirring often, until bacon is cooked and keilbasa is browned on the edges, about 10-15 minutes. Transfer to a plate and cover to keep warm. Set aside.
- 2. To the same pot, with the bacon drippings, add the onion, cabbage, salt and pepper. Cook, stirring constantly, for 5 minutes, then add the chicken broth. Lower heat, cover and cook until cabbage starts to soften, stirring often to prevent burning, about 20 minutes.
- 3. Meanwhile, cook the egg noodles as directed on package. Drain.
- 4. When cabbage is ready, add the egg noodles, bacon and keilbasa to the Dutch oven. Mix well and serve.
- 5. Garnish each serving with parsley flakes, if desired.

- Heat oil in a large skillet on medium-high heat. Add the sausage and cook, stirring occasionally, until it's nicely browned (7-10 minutes). Turn the heat down to medium once it gets going. Remove the kielbasa from the pan and set aside once it's nice and crisp.
- Add the cabbage to the pan and cook uncovered for 10-15 minutes, stirring fairly often. The cabbage at the bottom of the pan will start to wilt after a few minutes and it will become easier to stir. The onions will also start to lightly brown and become more flavorful.
- Once the cabbage is tender-crisp and cooked to your liking, add the garlic and paprika. Stir until it's combined. Add in the sausage and cook for a couple more minutes until it's heated through. Season with salt & pepper to taste. Serve immediately.

- Wash the cabbage under running water. Even though the inside is usually clean (the outer leaves protect the inside), you might want to clean it anyway. Remove the tough outer leaves and discard them. Separate the inner leaves and wash them under running water.
- Peel an onion and dice it finely. Finely chop the garlic with a knife. Cut kiełbasa sausage into chunks (rounds or cubes). Chop the bacon into pieces.
- Add bacon and kiełbasa pieces to the deep frying pan (or a cooking pot with a thick bottom). Cook over a low heat for a few minutes. There should be enough fat rendering, so there is no need to add any more. If you feel that it’s too dry, add a little bit of lard or oil.

- Combine walnuts and 2 Tbsp. oil in a large skillet, preferably cast iron, and set over medium heat. Cook, stirring often, until nuts are golden brown, about 5 minutes. Using a slotted spoon, transfer to a large plate and season with salt.
- Wipe out skillet and add 1 Tbsp. oil, then sausage. Cook over medium-high heat, undisturbed, 3 minutes. Stir and continue to cook until sausage is mostly crisp and rust-colored, about 3 minutes longer. Using slotted spoon, transfer to plate with walnuts.
- Add half of cabbage to skillet and stir once to coat in oil. Cook (still over medium-high), undisturbed, until charred underneath, about 4 minutes. Add remaining cabbage, stir, and cook, stirring occasionally, until wilted, 6–8 minutes. Season with salt and lots of pepper. Return walnuts and sausage to pan; add sliced celery and reserved sauce. Cook, stirring, until coated, about 30 seconds. Remove from heat; season with more salt and pepper if needed.

- Using your largest skillet or pot, fry bacon until almost cooked, 5-7 minutes. Chop your bacon to create big enough pieces that can be easily pierced with a fork. Remove some of the bacon fat from the pan, leaving a few tablespoons behind, if desired.
- If I am only using a half a pound of bacon I usually do not remove any excess grease. If I use a pound of bacon I do. I take a few pieces of paper towel, scrunch them up into a ball and soak up some of the grease and discard the paper towel.
- Add chopped kielbasa. Stir until cooked. By cooking the bacon first, and then your kielbasa, you will have the tastiest cabbage on earth, I believe.
- Remove some fat if necessary, leaving a few tablespoons to cook your cabbage. I remove the excess bacon grease with a few pieces of paper towel scrunched up in a ball. I used to just pour the excess grease into a jar I kept handy by the stove, just like my grandmother taught me to!

- Peel and chop the potatoes, rinse the potatoes and place them in a medium-size glass bowl. Sprinkle the potatoes with ½ teaspoon salt and ¼ teaspoon black pepper, stir or toss with your hands. Microwave the potatoes for 4 minutes, stir and microwave an additional 2-4 minutes until fork tender.
- While the potatoes are cooking, warm a large skillet over medium-high heat. Add the oil and as soon as it's shimmering, add the onions. Saute for a few minutes, until the onion is barely tender and lightly browned. Add the garlic and the kielbasa. Cook while stirring frequently, for about 3 minutes. When the potatoes are tender, add them to the skillet. Toss to coat, adding a small additional drizzle of oil only if needed. Spread the potatoes across the pan and allow them to cook for 2-3 minutes, stir and continue cooking until lightly browned.
- Add the cabbage and sprinkle with 1/4 teaspoon salt and the remaining 1/4 teaspoon pepper. Toss to combine, add 2 tablespoons water to the skillet and reduce heat to medium-low. Cover with lid. Cook for about 2 minutes, until the cabbage is bright green and barely wilted. Taste and add additional salt, only if needed. Enjoy!

- Preheat a large cast iron skillet over medium high heat. Add the butter to the skillet, place the sausage in the skillet and saute for about 5 minutes until the sausage has browned. Add the sliced onion to the pan and saute for another 3 minutes until it has softened.
- Add the sliced cabbage, caraway seeds, and seasoned salt cook this mixture, stirring often for 2 minutes to wilt the cabbage. Add 1/4 cup of water and scrape the bottom of the pan to de glaze. Cook for another 6 to 10 minutes stiring every so often. You want to get some color to form on the edges of the cabbage. Once the cabbage is done to your liking you are finished. You can either transfer it to a serving platter or serve right out of the skillet. If you are not worried about the carbs I would recommend serving this with buttered rye bread.
