This easy, quick-to-fix recipe for kielbasa and cabbage has long been a staple at my house because it tastes so good.

1/2 cup chopped onion
1/2 cup chopped green pepper
1 to 2 teaspoons butter
1/2 pound smoked kielbasa or Polish sausage, cut into 1/2-inch slices
1/2 small head cabbage, coarsely chopped (about 3 cups)
1/4 cup chicken broth or water
Salt to taste, optional
Pepper to taste

Steps:

  • In a large skillet, saute onion and green pepper in butter until crisp-tender. Add sausage; cook and stir until browned. Add the cabbage, broth, salt if desired and pepper. Cover and cook 10-12 minutes or until cabbage is tender.

1/2 pound smoked kielbasa or smoked Polish sausage, cut into 1/2-inch slices
2 tablespoons butter, divided
1/2 large head cabbage (2 pounds), coarsely chopped
1 medium onion, chopped
2 cans (8 ounces each) tomato sauce
1/4 cup sugar
1 tablespoon paprika
2 large potatoes, peeled and cubed

Steps:

  • In a large enameled cast-iron or other ovenproof skillet, brown the sausage in 1 tablespoon butter; remove and set aside. In the same pan, saute cabbage and onions in remaining butter until onions are tender. , In a small bowl, combine the tomato sauce, sugar and paprika; pour over cabbage mixture. Bring to a boil. Reduce heat; cover and simmer for 20 minutes. Add the potatoes and reserved sausage. Cover and simmer for 30 minutes or until potatoes are tender.

  • Saute margarine and onions in a large skillet until the onions are soft.
  • Stir cabbage and potatoes into the skillet and saute until the cabbage becomes wilted. Place the kielbasa, wine vinegar, salt and pepper into the skillet. 6 slices bacon
¼ cup water
2 tablespoons white sugar
1 onion, chopped
2 teaspoons minced garlic

Steps:

  • Prepare the vinaigrette by adding the olive oil, vinegar, mustard, garlic powder, salt, and some freshly cracked pepper to a bowl or jar. Whisk or shake the jar until the ingredients are combined, then set the vinaigrette aside.
  • Slice the kielbasa into medallions or half-rounds and add them to a large skillet (12" or larger) or a large, wide-bottomed pot, along with the olive oil. Sauté the sausage over medium heat until the pieces are well browned.
  • While the sausage is browning, finely dice the onion. Once the sausage has fully browned, add the onions and continue to sauté until the onions are soft and transparent.

Cabbage and noodles is one of my all time favorite comfort foods. The addition of keilbasa (or smoked sausage) makes this a meal. Warning: once you start eating it ... it's hard to stop!!

1/2 lb bacon, cut into bite size pieces
1 13.5 ounce package smoked keilbasa, thinly sliced
1 medium onion, chopped
1 medium medium head cabbage, chopped
salt and pepper to taste
1/2 c chicken broth
1 12 ounce package broad egg noodles, cooked as directed
dried parsley flakes (for garnish)

Steps:

  • 1. In a 5-quart Dutch oven, over medium-high heat, cook the bacon and keilbasa, stirring often, until bacon is cooked and keilbasa is browned on the edges, about 10-15 minutes. Transfer to a plate and cover to keep warm. Set aside.
  • 2. To the same pot, with the bacon drippings, add the onion, cabbage, salt and pepper. Cook, stirring constantly, for 5 minutes, then add the chicken broth. Lower heat, cover and cook until cabbage starts to soften, stirring often to prevent burning, about 20 minutes.
  • 3. Meanwhile, cook the egg noodles as directed on package. Drain.
  • 4. When cabbage is ready, add the egg noodles, bacon and keilbasa to the Dutch oven. Mix well and serve.
  • 5. Garnish each serving with parsley flakes, if desired.

  • Using your largest skillet or pot, fry bacon until almost cooked, 5-7 minutes. Chop your bacon to create big enough pieces that can be easily pierced with a fork. Remove some of the bacon fat from the pan, leaving a few tablespoons behind, if desired.
  • If I am only using a half a pound of bacon I usually do not remove any excess grease. If I use a pound of bacon I do. I take a few pieces of paper towel, scrunch them up into a ball and soak up some of the grease and discard the paper towel.
  • Add chopped kielbasa. Stir until cooked. By cooking the bacon first, and then your kielbasa, you will have the tastiest cabbage on earth, I believe.
  • Remove some fat if necessary, leaving a few tablespoons to cook your cabbage. I remove the excess bacon grease with a few pieces of paper towel scrunched up in a ball. I used to just pour the excess grease into a jar I kept handy by the stove, just like my grandmother taught me to!

  • Place a deep large skillet or Dutch oven over medium high heat. Pour in half the oil and toss in the sausage. Saute for about 5-6 minutes to render fat and lightly brown the edges of kielbasa slices. Remove the sausage to a bowl, leaving the fat in the pan.
  • Dump the onion and garlic in the pan along with the whole grain mustard, salt and pepper. Saute for about 2 minutes.
  • Add the cabbage a bit at a time, mixing to coat as you do. Once it is all in the pan, reduce heat to medium and cover to cook cabbage. Cook for about 6-7 minutes, stirring a couple times to evenly cook.
