2 packages (3 ounces each) cranberry gelatin
3 cups boiling water
1 cup cranberry juice
6 ounces cream cheese, softened
1 carton (8 ounces) frozen whipped topping, thawed
1 cup chopped walnuts
1 cup chopped celery
1 cup chopped fresh or frozen cranberries

Steps:

  • In a large bowl, dissolve the gelatin in boiling water; stir in cranberry juice. Refrigerate until slightly thickened. In a small bowl, beat cream cheese until smooth. Add the whipped topping until blended. Fold into the gelatin mixture. Fold in walnuts, celery and cranberries., Pour into a 3-qt. ring mold coated with cooking spray. Refrigerate until set. Unmold onto a serving plate.

1 cup old-fashioned rolled oats
1 cup all-purpose flour
1/4 cup granulated sugar
3/4 cup light brown sugar
1 teaspoon ground cinnamon
dash of salt
2/3 cup unsalted butter (, melted)
4 1/2 cups frozen berries (**raspberries, blackberries and blueberries)
1/4 cup all-purpose flour
1/4 cup granulated sugar
1/4 teaspoon salt
1/2 teaspoon lemon juice
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F.
  • Make the topping first by combining the oats, flour, sugar, brown sugar, cinnamon and salt. Stir to combine.
  • Pour in the melted butter and stir to incorporate. Set aside.
  • In another bowl add the frozen berries, flour, sugar, salt, lemon juice and vanilla extract and toss gently to combine.
  • Pour mixture into an 8x8'' or similar size casserole dish or pie plate. Glob the topping ingredients evenly over the top (I say "glob" because the mixture will be softer than your normal dry crumble topping, because of the melted butter).
  • Bake for 40-45 minutes until the topping is golden brown and berries are bubbling around the edges.
  • Remove from the oven, place on a wire rack, and allow to cool for at least 7-10 minutes before serving. Serve with a scoop of vanilla ice cream, if desired.
  • Cover leftovers and store in the refrigerator for up to 5 days.

1 ½ cups fresh raspberries
1 ½ cups fresh blueberries
4 tablespoons white sugar
2 cups all-purpose flour
2 cups rolled oats
1 ½ cups packed brown sugar
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
1 ½ cups butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, gently toss together blackberries, raspberries, blueberries, and white sugar; set aside.
  • In a separate large bowl, combine flour, oats, brown sugar, cinnamon, and nutmeg. Cut in butter until crumbly. Press half of mixture in the bottom of a 9x13 inch pan. Cover with berries. Sprinkle remaining crumble mixture over the berries.

1-1/2 cups boiling water
1 pkg. (6-serving size) JELL-O Strawberry or Raspberry Flavor Gelatin
2 cups cold club soda or seltzer
3 cups mixed fresh berries (raspberries, blueberries and sliced strawberries), divided

Steps:

  • Stir boiling water into dry gelatin in large bowl at 2 minutes until completely dissolved. Stir in club soda. Refrigerate 1-1/2 hours or until thickened (spoon drawn through leaves definite impression).
  • Stir in 2 cups of the berries. Spoon into 5-cup mold sprayed with cooking spray; cover.
  • Refrigerate 4 hours or until firm. Unmold. Top with remaining berries. Store leftover gelatin mold in refrigerator.

3 tbsps. sugar, divided
1 2/3 cups vanilla wafer crumbs
1/3 cup quick rolled oats
3 tbsps. firmly packed brown sugar
5 tbsps. butter, melted
1/2 tsp. vanilla extract
1 (8 oz.) pkg. cream cheese, softened
3 tbsps. boiling water
1 envelope unflavored gelatine (2 teaspoons)
1 (12 oz.) jar Smucker's® Orchard's Finest® Northwest Triple Berry Preserves, divided
3/4 cup fresh mixed berries such as chopped strawberries, blueberries and/or raspberries

Steps:

  • COMBINE cookie crumbs, oats and brown sugar in medium bowl. Stir in melted butter with a fork until evenly moistened. Press into 8-inch springform pan.
  • BEAT 1 cup heavy cream until stiff peaks form. Beat in 2 tablespoons sugar and vanilla. Place cream cheese on microwave-safe plate. Microwave on HIGH 15 to 20 seconds or until very soft. Add to whipped cream, beating until smooth. Pour boiling water over gelatine in small bowl. Stir about 2 minutes or until gelatine is completely dissolved. Beat into cream cheese mixture until blended. Stir in 3/4 cup preserves. Spread over crumb crust. Chill 2 hours or overnight.
  • BEAT remaining 1/2 cup heavy cream until stiff peaks form. Beat in 1 tablespoon sugar. Place in resealable plastic bag. Cut small corner off bag. Remove outer rim of pan. Place dollops of whipped cream around outside edge of cheesecake. Stir remaining preserves with fresh mixed berries in small bowl. Spoon evenly in center of cheesecake.

This triple berry French toast is a Christmas brunch tradition at our house and perfect for a busy household on Christmas morning as it is prepared the night before. You can use blueberries, blackberries, raspberries, or a combination. Twist a lemon slice over the top for garnish.

12 slices Texas toast, crusts removed and bread cubed
2 (8 ounce) packages cream cheese, cubed
½ cup fresh blueberries
¼ cup fresh blackberries
¼ cup fresh raspberries
9 large eggs
2 cups milk
⅓ cup pure maple syrup
1 cup fresh blueberries
½ cup fresh blackberries
½ cup fresh raspberries
1 cup water
1 cup white sugar
2 tablespoons cornstarch
1 tablespoon unsalted butter

Steps:

  • Spray the bottom of a 9x13-inch glass baking dish with vegetable spray and place 1/2 of the bread cubes into the dish. Put cream cheese cubes on top. Distribute blueberries, blackberries, and raspberries over the cream cheese. Place remaining bread over the berries.
  • Beat eggs in a bowl and add milk and maple syrup. Pour mixture over bread. Place plastic wrap over the dish and refrigerate, 8 hours to overnight.
  • Preheat the oven to 350 degrees F (175 degrees C). Remove plastic wrap from the dish and cover the dish with aluminum foil.
  • Bake in the middle of the preheated oven for 30 minutes. Remove the foil and continue to bake until puffed and golden, about 30 minutes more.
  • While toast is baking, combine 1/2 of the blueberries, 1/2 of the blackberries, 1/2 of the raspberries, water, sugar, and cornstarch in a saucepan over medium-low heat. Cook until syrup thickens, 5 to 7 minutes. Stir in remaining berries and butter.
  • Let French toast sit for about 10 minutes before slicing. Pour berry syrup over individual pieces.

From a children's cookbook called Monkey Pudding, this is simple to make and very tasty. I cut the sugar -- it originally called for 1/2 cup, and it was plenty sweet. The original recipe said to chill for 30 minutes, but 24 hours is needed if you want the cookies to be nice and soft (so cooking time is actually chilling time). I use Voortman Vanilla Wafer Cookies -- about 3/4 of the package.

  • In a large mixing bowl, add berries, lemon juice, and sugar; fold ingredients together, being careful not to smash the berries.
