TROPICAL BANANA SPLITS



Tropical Banana Splits image

Go bananas for this delicious treat with tropical sorbets.

1 cup heavy cream
4 ounces semisweet chocolate, chopped
1 teaspoon sugar
4 ripe bananas
1 cup mango sorbet
1 cup coconut sorbet
1 cup raspberry sorbet
1/4 cup coarsely chopped macadamia nuts, toasted if desired
4 maraschino cherries

Steps:

  • In a small saucepan, bring 1/2 cup cream just to a boil. Remove from heat and add chocolate. Let stand 2 to 3 minutes; stir to combine.
  • In a medium bowl, whip remaining 1/2 cup cream with sugar until soft peaks form. Set aside.
  • Peel bananas, and split lengthwise; divide among 4 sundae dishes. Top with a scoop (1/4 cup) each of mango, coconut, and raspberry sorbets. Drizzle each sundae with chocolate sauce; top with whipped cream, nuts, and a cherry. Serve immediately.

A celebration of the great Australian banana, combining creamy banana ice-cream with split bananas, macadamia nut toffee, toasted coconut and palm-sugar caramel.

8 bananas
100g palm sugar or soft brown sugar
40g butter
100ml cream
100g castor sugar
2 tbsp water
100g macadamia nuts
2 tbsp shredded coconut, toasted
4 sesame seed wafers

Steps:

  • To make the ice-cream, peel six bananas, chop into quarters, pop in a sealed bag and freeze overnight. Soften for 20 minutes, then whiz in a food processor until thick and creamy. Refreeze in a plastic container for four hours or until needed. To make caramel, heat palm sugar, butter and cream, stirring. Simmer for three minutes, stirring constantly, then set aside to cool. To make the toffee, heat castor sugar and water in a pan, stirring until dissolved. Add macadamia nuts and allow to bubble and reduce, stirring constantly until you have a golden caramel - beware of burning. Pour onto a baking tray lined with baking paper and leave to set. When cool, chop roughly. To serve, peel two bananas, cut in half lengthwise and again crosswise. Arrange in four glasses so the bananas poke over the top. Fill each glass with scoops of banana ice-cream, drizzle with caramel sauce and top with macadamia toffee and toasted coconut. Add a jaunty sesame seed wafer and serve. Sesame seed wafers are available from corner shops and supermarkets.

1 cup purchased chocolate sauce, warmed
Toasted sweetened coconut

Steps:

  • Place 1 scoop vanilla ice cream in each of 4 dessert bowls. Place bowls in freezer.
  • Melt butter in heavy large skillet over medium heat. Add bananas; sauté until just beginning to soften, about 3 minutes. Spoon bananas over ice cream. Top with chocolate sauce and coconut.

½ cup coconut oil, melted
2 eggs, beaten
1 teaspoon vanilla extract
1 ½ cups all-purpose flour
1 cup white sugar
½ teaspoon baking soda
½ teaspoon ground cinnamon
1 pinch salt
3 very ripe bananas, mashed
½ (8 ounce) can crushed pineapple, drained
½ cup flaked coconut

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan.
  • Combine coconut oil, eggs, and vanilla extract in a large bowl; whisk well to combine. Add flour, sugar, baking soda, cinnamon, and salt. Stir well until combined. Fold in bananas, pineapple, and coconut; stir until just blended. Pour batter evenly into the prepared pan.

⅓ cup brown sugar
¼ teaspoon ground cloves
1 ½ teaspoons orange juice
6 bananas, peeled and halved lengthwise
⅓ cup shredded coconut

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a 7x11 inch baking dish.
  • In a small bowl, cream together butter and sugar. Stir in cloves and orange juice until smooth. Place the bananas in the prepared dish and spread the butter mixture evenly over the bananas. Sprinkle with coconut.
  • Bake in preheated oven until bubbly and heated through, 10 minutes.

The twist to these sundaes is a simple ginger-flavored sauce sparked with lime. It can be made ahead and rewarmed before you assemble the sundaes.

Number Of Ingredients 10

1/2 cup sugar
1/2 cup firmly packed golden brown sugar
6 tablespoons water
1/4 cup strained fresh lime juice
3 tablespoons unsalted butter
2 pieces crystallized ginger
3 tablespoons minced crystallized ginger
Vanilla ice cream
3 cups diced peeled tropical fruit such as pineapple, papaya and/or mango
Toasted sweetened shredded coconut

Steps:

  • For sauce: Combine first 6 ingredients in heavy medium saucepan. Stir over medium heat until sugars dissolve. Boil gently until reduced to 1 cup, stirring frequently, about 15 minutes. Cool to lukewarm. Discard ginger pieces and add minced ginger. (Can be prepared 1 day ahead. Cover and store at room temperature. Reheat to lukewarm, whisking occasionally, before serving.)
  • For sundaes: Scoop ice cream into balloon glasses or sundae dishes. Spoon lukewarm sauce over. Top with fruit. Sprinkle with coconut and serve.

4 ounces cream cheese, softened
1/4 cup packed brown sugar
3 tablespoons creamy peanut butter
8 prepared brownies (2-in. squares)
4 cups vanilla ice cream
1/2 cup hot fudge ice cream topping, warmed
1/2 cup chopped salted peanuts

Steps:

  • Cut unpeeled bananas crosswise in half, then lengthwise in half. Place quartered bananas on an oiled grill rack, cut side down. Grill, covered, over medium-high heat on each side until lightly browned, 2-3 minutes. Cool slightly., In a small bowl, beat cream cheese, brown sugar and peanut butter until smooth., To serve, remove bananas from peel; place over brownies. Top with cream cheese mixture, ice cream, fudge topping and peanuts.
