WHOA, MOMMA, FRIED GREEN TOMATOES
I've blended many reviewer suggestions for fried green tomatoes with an ingredient my elderly ex mother-in-law suggested. The result is a sweet, hot combination that delights fried green tomato lovers. Serve with ranch or blue cheese dressing as dip.

Steps:
- Put hot sauce in small dish for dipping. Mix flour, brown sugar, grill seasoning, salt, and pepper in a separate small dish. Beat eggs into milk in a third dish. Pour panko in a fourth shallow dish. Arrange dishes in a line, respectively.
- Dip one side of each tomato slice in hot sauce. Press each side of tomato into flour mixture to coat; dip into milk mixture. Gently press tomato slices into panko to coat. Arrange coated tomatoes on a baking sheet. Refrigerate until chilled, about 30 minutes.
- Heat oil in a deep-fryer or a cast-iron skillet to 375 degrees F (190 degrees C).
- Fry tomato slices in hot oil until golden brown, 2 to 3 minutes per side.

- Preheat oven to 400 degrees. Melt the butter in a baking pan. Stir in the salt and pepper. Coat the sliced tomatoes with flour and place them in the pan. Bake on the lower rack of the oven for 8 minutes. Then turn the oven up to broil in order to brown the tomato slices.
FRIED GREEN TOMATOES WITH REMOULADE
The green tomato is an anchor of Southern cooking. I like to fry them until they're brilliantly crispy and golden brown. It's so simple and straightforward, just like Southern food should be.

- For the remoulade: In a small mixing bowl, combine the mayo, shallots, scallions, mustard, cayenne, hot sauce, lemon juice, Worcestershire, a pinch of salt, and lemon zest. Adjust the seasoning with more salt and hot sauce if needed and reserve. Makes 1½ cups.
- Fry the tomatoes: Bring cast-iron skillet to medium-high heat. Season the green tomato slices with salt. Set aside on a rack fitted over a rimmed baking sheet, which will later become the cooling rack after frying. Find 3 similarly shaped shallow baking dishes. In the first, add flour. In the second, pour the eggs. In the third, add cornmeal. We are creating an assembling line of dredging. One by one, flour a tomato slice on both sides, dunk in the egg mixture, and then dredge in the cornmeal. As you finish each tomato, stack them on a cutting board.When the skillet has preheated, add the oil and heat to shimmering. Fry the green tomatoes until golden, about 2 to 3 minutes per side.
- Assemble the dish: When the tomatoes are crispy, golden brown, and heated through, place them on the cooling rack. Dollop a tablespoon of remoulade on a serving plate and arrange the fried green tomatoes over the sauce. Garnish with some arugula, more remoulade and serve immediately. Nobody wants soggy tomatoes!
MOM'S FRIED GREEN TOMATOES
This recipe is my mom's recipe. I'm not a big fried green tomato person but when I get my once a year craving I reach for this recipe. My 4 yrs old nephew & 6 yrs old nice really liked these tomatoes.

- Slice the green tomatoes in thin slices.
- Dip the tomatoes in the flour.
- Heat the oil until hot.
- Fry until golden brown on each side making sure to season each side with salt & pepper.
- Remove from the oil when browned and season again with salt & pepper.

I grew up on this dish!! Mom fried them in lard in her huge cast iron skillet. They are delicious hot off the stove, used as a side dish with pinto beans 'n' ham, and cornbread. Yummm.... This recipe serves 4

Steps:
- Slice stem-end of tomato, removing stem and making a smooth flat surface.
- Continue slicing, about 1/4" in diameter, or a bit less (you want these thick enough to taste the flavor of the tomato!).
- Mix together salt, pepper, cornmeal and flour till well blended.
- Salt tomatoes (from the salt shaker--isn't in the ingredients list, just salt to taste) and allow to set till the salt dissolves.
- Dip each slice in flour/cornmeal mixture, on both sides, and set aside on dry paper towel till coating begins to look a bit damp.
- Heat shortening over medium high heat, till hot but not smoking.
- Dip again in the mixture, and place in hot shortening, quickly browning on one side, then turning to brown on other--about 1-2 minutes per side.
- Remove from skillet to paper towel covered platter. Serve Hot.
- Allow one tomato per person.
- For Vegetarian/Vegan do not use Lard because it is an animal product. Use a Vegetarian shortening.
