Grandma Mac's Cinnamon Toast image

This recipe is different from the other cinnamon toast recipes that I have seen on this site. You start off making a brown sugar/cinnamon and butter mixture and then the toast is briefly broiled. From the Best of the Best from Ohio Cookbook.

1/2 cup butter, softened
1 cup firmly packed light brown sugar
2 teaspoons milk
1/2 teaspoon cinnamon (to taste)
1 dash salt (optional)
6 slices bread, lightly toasted

Steps:

  • In a small mixing bowl, cream together butter and brown sugar until light and fluffy. Beat in milk, cinnamon and salt. Spread entire top of lightly toasted bread with butter mixture. Place on a cookie sheet and broil briefly until mixture bubbles. (Watch carefully as these will burn quickly.) Cool slightly on a rack; cut into triangles, and serve warm for breakfast toast. Cover and refrigerate remaining butter mixture for future use.

1 cup Cinnamon Toast Crunch™ Cereal
1 pouch (12.6 oz) Betty Crocker™ Cinnamon Toast Crunch™ Cookie Mix
1/2 cup butter, softened
1 egg
1/2 cup white vanilla baking chips
1 1/4 cups Betty Crocker™ Cinnamon Toast Crunch™ Frosting (from 16-oz container)

Steps:

  • Heat oven to 350°F. Place cereal in 1-quart resealable food-storage plastic bag. Using flat bottom of measuring cup, coarsely crush cereal. Set aside.
  • In medium bowl, stir cookie mix, softened butter and egg until soft dough forms. Stir in crushed cereal and white vanilla baking chips. Drop dough by rounded measuring tablespoonfuls 2 1/2 inches apart on ungreased cookie sheets.
  • Bake 9 to 11 minutes or until edges are set and golden brown (centers will be soft). Cool 2 minutes before removing from cookie sheet to cooling rack. Cool completely, about 30 minutes.
  • For each sandwich cookie, spread generous tablespoonful frosting on bottom of 1 cookie. Top with second cookie, bottom side down; gently press together. Store covered in airtight container with waxed paper between layers.

2 cups all-purpose flour
½ teaspoon kosher salt
1 teaspoon baker's ammonia
1 cup unsalted butter, high-quality, cubed, and softened
½ cup sugar
2 teaspoons vanilla extract
additional topping, chocolate chips, whole almonds, or raisins

Steps:

  • Preheat the oven to 275˚F (135˚C). Line 2 baking sheets with parchment paper.
  • In a medium bowl, sift together the flour, salt, and baker's ammonia.
  • In a separate medium bowl, cream together the butter and sugar with an electric hand mixer on low speed until light and fluffy, about 2 minutes.
  • Add the vanilla and continue beating until fully combined.
  • Add the dry ingredients to the wet ingredients and beat to incorporate.
  • Roll about 1 ounce of dough at a time in your hands to make walnut-sized balls. They will be small, about ½ inch (1 ¼ cm) wide. Place the balls of dough on the prepared baking sheets, leaving about 1 inch (2 ½ cm) of space between each cookie. Using a flat-bottomed measuring cup, gently press down on the cookies to flatten.
  • Top each cookie with 3 chocolate chips, a single almond, or raisins.
  • Bake the cookies for 30 minutes, or until the bottoms are light golden brown and the edges are crispy.

These "butterhorns" are a traditional Christmas favorite around the Womack homesteads, but can be made and served all year round. Delicious, flaky, buttery, crusted cookies rolled in the shape of miniature croissants, sprinkled with a nutty, cinnamon-sugar mix.

2 cups unsalted butter, softened
2 cups all-purpose flour
¾ cup sour cream
1 large egg yolk
¾ cup white sugar
¾ cup chopped walnuts
1 teaspoon ground cinnamon

Steps:

  • Cut butter into flour in a large mixing bowl with your fingertips. Add sour cream and egg yolk; mix thoroughly until a firm dough is formed. Shape dough into a large ball, cover with waxed paper or plastic wrap, and refrigerate until fully chilled, at least 2 hours.
  • Preheat the oven to 375 degrees F (190 degrees C). Line 2 baking sheets with parchment paper.
  • Combine sugar, walnuts, and cinnamon in a small bowl.
  • Remove dough from the refrigerator and cut into 3 equal pieces. Roll 1 piece of dough into a circle. Sprinkle with 1/3 of the sugar mixture and press it into the dough. Cut into 12 wedges (like a pie) and roll each piece from the wide side to the tip to make a croissant-shaped cookie; place on the prepared baking sheets. Curl the tips of each cookie towards you to form a curved horn shape. Repeat with remaining dough and sugar mixture to form remaining cookies.
  • Bake in batches in the preheated oven until golden brown, 20 to 25 minutes. Cool on the baking sheet for 1 minute before removing to a wire rack to cool completely.

This is my original recipe that took me a while to get right. This cookie is NOT a Snicker Doodle! It is a thin, crispy, buttery delight - just like that warm cinnamon toast my grandma used to make for me! Enjoy!

2 1/4 cup(s) all purpose flour
1 teaspoon(s) salt
1/2 cup(s) butter, softened
1/2 cup(s) butter flavored shortening (crisco®)
1 cup(s) granulated sugar
1 cup(s) brown sugar
1 teaspoon(s) vanilla extract
2 tablespoon(s) ground cinnamon
2 - eggs
CINNAMON/SUGAR MIXTURE
1/4 cup(s) granulated sugar
2 teaspoon(s) ground cinnamon

Steps:

  • PREHEAT oven to 375° F.
  • COMBINE flour and salt in small bowl. Beat butter, granulated sugar, brown sugar, vanilla extract, and 2 T. cinnamon in large mixer bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture. Form rounded tablespoon and roll in Cinnamon/Sugar mixture then move onto ungreased baking sheets. Flatten out slightly with the bottom of a buttered glass. *Mixture may need to be refrigerated for about 10 minutes in order to handle with Cinnamon/Sugar mixture.
  • BAKE for 9 to 11 minutes or until golden brown around the edges and slightly soft in the center (just like your grandma's cinnamon toast!). Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.
