CINNAMON-SUGAR POPCORN
I first tried this when I was visiting my sister in West Virginia. After trying it, I loved it, however I neglected to ask her for the recipe. 10 years later, I have it, and I still love it! The kids can help make it if you use an air popper (which I did to reduce fat and calories...there's enough in the butter!) I used my deep dish lasagna pan to cook it in the oven. You can use a roasting pan or any other large, deep dish pan. It makes a lot, so either invite your friends or store it in an airtight container for later.

MRS. MUELLER'S HONEY POPCORN
One of my dearest friends shared her mother's recipe with me for this tasty, lightly honey flavored popcorn. It is very easy and makes for a nice snack, especially enjoyed by children. Please only use freshly popped unseasoned popcorn - this really doesn't work well with the preseasoned microwave popcorn. Prep time assumes you have started with already popped popcorn.

HIGH HONEY-SRIRACHA POPCORN
No cannabis? No problem-skip it and you'll still have a killer spicy-sweet popcorn. But for those that want to partake, make sure you use only 1/2 teaspoon baked herb in this recipe (you'll have about 1 1/2 teaspoons leftover for another use). And go slow! This stuff is delicious, but you want to start with a little over a cup and wait at least an hour before having more-it often takes that long to feel the effects.

Steps:
- To decarb herb, preheat oven to 225°F and line a small rimmed baking sheet with parchment paper. Sort cannabis bud and flower for stems and seeds (discard stems and seeds). Finely grind herb using a hand herb grinder or very finely chop with a chef's knife. Spread herb into an even layer in pan. Cover pan tightly with foil, crimping it around edges of pan, and bake until golden brown, 40-50 minutes. Let cool, covered, 20 minutes. Makes about 2 tsp. decarbed herb.
- Preheat oven to 250°F. Stir salt, baking soda, garlic powder, cinnamon, coriander, and cumin in a medium bowl. Stir in 1/2 tsp. decarbed herb (be careful to only use 1/2 tsp. here, reserving the remaining decarbed herb for another use.)
- Heat oil in a small saucepan over medium-high. Add honey, sugar, Sriracha, and cayenne, if using, and bring to a boil. Add 1 Tbsp. water and cook 1 minute. Remove from heat and stir in lime zest and spice mixture.
- Place popcorn in a large bowl and pour spicy honey syrup over. Using a rubber spatula, quickly stir to evenly coat popcorn. Transfer popcorn to a parchment-lined rimmed baking sheet and bake, tossing every 15 minutes, 45 minutes total. Let cool 5 minutes before devouring (it will get crunchy as it cools).

HEALTHY POPCORN TREAT
I wanted to make a sweet popcorn that was delicious but not loaded with sugar, so I came up with this recipe. It's one of my kids' favorites! Olive oil works if you don't have coconut oil. If you accidentally add to much salt, add a little more honey. If it's too sweet, add a little more salt. Start with a little cinnamon and gradually add more until it is the flavor you desire.

CINNAMON TOAST POPCORN
This snackable pile of lightly sweetened popcorn is reminiscent of buttery cinnamon toast and the perfect treat for two or four (or one!). You can easily make another batch to serve a crowd. Popcorn is coated in syrup and toasted in a pot to create a shell of caramelized sugar that's dusted with cinnamon. Five minutes out of the pot, the popcorn cools to a soft crispness, but if you bake it for just 10 minutes, the popped kernels dry all the way through and become crunchy to their core. This treat is delicious on its own or as part of a dessert board with gingerbread biscotti, iced oatmeal cookies or any other cookies of your choice.

Steps:
- Heat the oven to 350 degrees and have a large sheet pan lined with parchment paper nearby.
- In a large, heavy-bottomed pot, combine the sugar, butter, corn syrup, salt and 1 tablespoon water. Cook over medium-high heat, stirring with a large metal spoon or rubber spatula, until the butter melts and the mixture turns into thick bubbling syrup, about 1 minute. Cook until it begins to smell toasty, about 1 more minute, then add the popcorn, carefully tossing every 2 to 3 seconds, until it starts to brown lightly, another 1 to 2 minutes. Begin tossing constantly for another minute or two until the popcorn turns deep golden brown in most spots, being careful to never let it burn. Remove from the heat, sprinkle with the cinnamon and toss a final time to coat.
- Immediately pour the toasted popcorn onto the lined sheet pan and spread in an even layer. Bake until a shade darker, 8 to 10 minutes. Cool the popcorn on the pan on a rack for 5 to 10 minutes to harden. Toss a final time to break up any clumps and serve.

- Add a popcorn kernel to the oil. When the oil is hot enough, the kernel should be sizzling. When this happens, add all the other popcorn kernels and place the lid on top. Shake the pot to distribute the kernels evenly, and cover them with the oil.
- The popcorn will start popping. Shake occasionally to prevent burning, and allow it to pop until the pot is full or the pops happen 2-3 seconds apart. Take the pot off the heat but leave the lid on for a minute in case any other popcorn kernels are popping.

- Heat oil over medium-low heat with 3-4 kernels. When the oil and kernels begin to sizzle, add the remaining kernels and toss to coat. Once coated, sprinkle sugar on top and cover with a lid.
- Every few seconds shake the pot back and forth so that no kernels burn (give it a good shake!) Continue to do this through the popping.
- Once popping has slowed to hardly no sounds, remove from heat, sprinkle with sea salt, 1 tablespoon cinnamon, honey and extra sugar as desired. Give it a good shake to coat with cinnamon (but make sure you're doing this while it's still hot!)
