STEEL-CUT OATMEAL WITH FRUIT
Steel-cut oatmeal is my new favorite hot breakfast. It has more texture than rolled or flaked oats and really sticks to your ribs. But this tasty cereal takes about 25 to 30 minutes to cook - not what you need when you're trying to get out the door. So I make a batch that will last a few days; it keeps well in the refrigerator, and you can reheat small portions gently atop the stove or in the microwave. You can also freeze this oatmeal in ice cube trays, an idea I got from oncology nutritionist Maria C. Romano. She contributed the recipe from which this one is adapted to the "Eat Healthy, Shop Smart" community farmers' market program at Montefiore Medical Center in the Bronx.

- Combine the water, milk and salt in a large, heavy saucepan, and bring to a boil. Slowly add the oats, stirring constantly. Reduce the heat to low, cover and simmer 15 minutes, stirring occasionally with a wooden spoon. Stir in the butter, dried fruit and sweetener. Cover, and continue to simmer for another 10 to 15 minutes, stirring often to prevent the cereal from sticking to the bottom of the pan, until the oats are soft and the mixture is creamy. Serve, with added fruit stirred in if desired, or refrigerate and reheat as desired. Or freeze as follows:
- Line ice cube trays with plastic wrap. Fill each cube with oatmeal, cover with plastic wrap and freeze. Once frozen solid, remove the cubes from the ice tray and freeze in a plastic bag. For each portion, thaw three or four cubes in a microwave on the defrost setting. Add additional warm milk if desired.

- Mix honey and lime juice in a bowl.
- Toss with the mango, kiwi, pineapple, and 1 banana.
- Chill while cooking oatmeal.
- Combine oatmeal, almond milk, and cinnamon; cook until thickened, stirring.
- Stir in 1 banana for the last 5 minutes of cooking.
- Divide into 4 bowls and top with fruit salsa.

CUBAN FRENCH TOAST WITH TROPICAL FRUIT SALSA
Steps:
- In a large bowl, beat the eggs with the sugar and milk. Add the cloves, cardamom, and canela and place mixture in shallow pan.
- In another bowl, combine kiwi, mango, papaya, mint, and orange juice and set aside.
- Have a nonstick pan getting warm. Soaking each piece of bread in egg mixture until bread has absorbed some of liquid, about 30 seconds.
- Add 1 teaspoon of butter to the pan and cook bread on each side for 4 minutes until golden brown. Repeat process for the remaining bread.
- Serve on plate with tropical salsa on top and sprinkle powdered sugar on each.
TROPICAL BURGER WITH TROPICAL FRUIT SALSA
Four 1/4 pound all beef patties with Sweet Tropical BBQ Sauce, Tropical Fruit Salsa, and Pineapple Slices. Is easily doubled.

- Directions: Start the BBQ sauce and Salsa. Mix together egg, ground beef, and soy sauce. Start your Grill. Cut the burgers into 4 quarters. Pat the burgers to make a smooth surface. Sprinkle with pepper and Cook until bottom is nicely browned. Flip the burger and cook until it is brown. Place a pineapple slice each on the bottom half of four buns. Coat the burgers with the BBQ sauce, place them on the buns, and place some fruit salsa on top of them. Try serving with diced pineapple, mango, and/or papaya.
- Directions For BBQ Sauce: Place sweet onions in butter in a small saucepan and sauté until soft and translucent. Add brown sugar, dry mustard, cider vinegar, pineapple, ketchup, lime juice, pomegranate juice, soy sauce, and Worcestershire sauce. Stir until combined and cook over medium heat until reduced and thickened, 20 to 30 minutes.
- Directions For Fruit Salsa: In a medium bowl, combine all ingredients and mix well. Refrigerate it for at least 15 minutes.

Steps:
- Brush fillets with canola oil and sprinkle evenly both sides, with jerk rub seasoning.
- *Use 1 teaspoons seasoning per side per each fillet. More or less to taste.
- Rub into fish evenly to coat.
- Place fillets on hot grill and grill 3-5 minutes per side or til done and flakes easily with a fork.
- Warm tortillas on grill.
- Cut fillets into chunks, or coarsely shred with a fork.
- Divide fish evenly onto 8 warmed tortillas.
- Top each with fruit salsa, a slice of avocado, shredded cabbage, jicama, and top with lime sour cream.
- Lime sour cream:.
- Mix sour cream, lime juice and zest in small bowl.
- Garnish with additional cilantro if desired.
- *Note: If scotch bonnet or habanero peppers are too hot for your tastebuds, a red jalapeno can be substituted! They are actually quite mild.
- Enjoy!
